| [05/05/2008, 22:54] | To wine shops: add importer information |  | TO: wine shop managers and their webmasters FROM: Dr. Vino RE: adding importer information to e-shops I was surfing the sites of a few online wine retailers today looking for some specific imported wines when I should have been working. Some of the sites generated other imported wines suggestions that sounded good but I hadn’t heard of the producers. Since you already list tons of information about the wine including the producer, region, vintage, possibly grape variety, and a critic’s opinion, how hard would it be to add a field to list the importer as well? I, for one, would be more likely to throw a bottle in my virtual shopping cart if I knew it was from one of my favorite importers. If I am in a shop I can look at the back label, which provides that info, but not online… (image) |  |  |  |
| [04/25/2008, 11:28] | Oyster Surprise |  | I don't remember when I ate my first oyster; it was probably twenty years ago. I haven't kept score, but in the past year alone I've had a couple hundred raw oysters. Yet Sunday was the first time that I'd ever found a pearl in an oyster. Fortunately I didn't chip a tooth in the process.
According to one source, "only about one in 10,000 wild oysters will yield a pearl".
The pearl can be seen at right with a Shiner 99 bottle cap for comparison. Smaller than a BB, grey/brown in color yet slightly iridescent in the right light. Alas, it's too small for the old tooth test.
For those of you who saw this title and assumed the worst, I have yet to experience the uniquely soul-destroying food poisoning brought on by a bad oyster. I realize that my day will come at some point, yet the slight hint of danger somehow improves the flavor of each one. If hunger is the best sauce then dangerous/forbidden/rare characteristics must be the best garnish: the fully-raw beef, the mispriced bottle of wine, the wild mushrooms sold under the table... |  |  |  |

| [11/25/2006, 09:42] | Fine Wine Encounter |  | At the Decanter event last weekend, it was great to see so many people enjoying fine wine. Such a joy to have so many truly outstanding wines under the same roof laid out for the consumer. At this particular Encounter Bordeaux epecially had a strong presence and the exhibitors read like a roll-call of the great and the good - though by no means exhaustive it certainly gave a very good schooling in what the fuss is all about. It proves that the UK is not all about Blossom Hill sugar water despite all the depressing statistics. Not only were there members of the public that you would expect - I had some lovely older gentlemen coming up to me at the Jancis Robinson stand, just to tell me with a conspiratorial wink that they were already "purple pagers" - but lots and lots of young people. The majority in fact. I hope this means that the next generation of wine drinkers/collectors/enthusiasts are trading up as they experience these wines first hand and making relationships with producers that may last a lifetime. As well as the wines on offer there were also Masterclasses, the two most popular being the Margaux vertical and Jancis. Both of these will be available as podcasts - once the technology has been tamed- on the Decanter website and Jancis will put hers up on www.JancisRobinson.com As well as all that, authors - Andrew Jefford and John Radford to name just two - were there for book signings and a very nice team from Riedel explaining all the subtle nuances of the various glasses and exactly why you need at least 10 different sets (I wish). |  |  |  |

| [05/15/2008, 20:33] | Gabriella Joins the Circle of Wine Writers |  | | Last January, the UK based wine writer and Committee Member of the Circle of Wine Writers, Christine Austin, suggested that we apply to the organization housed in England. Having had several people offer a similar suggestion for over a year, it seemed ridiculous for us not to get off our hides and do something about it. So, we figured we’d experiment a bit, where I would apply and test the waters, followed by Ryan’s application soon thereafter. As taken directly from their website: The Circle of Wine Writers is an association of authors, broadcasters, journalists, photographers and lecturers who are professionally engaged in communicating about wines and spirits. It was founded in 1960 by the late Cyril Ray and now has more than 280 members and, although most of the membership is based in England, the Circle has members in countries around the world. The objectives of the Circle of Wine Writers are: * to improve the standard of communication about wines, spirits and beers * to contribute to the growing knowledge and interest in wine * to promote wines and spirits of quality and to comment adversely on faulty products and dubious practices * to establish and maintain good relations with the news media and the wine trade * to provide members with a strong voice with which to express their views * to provide a forum for the exchange of information * to provide a programme of workshops, meetings, talks and tastings A month has now passed, as seen by the lush green blanket of leaves hanging right outside my office window, and I have just received my very first packet of information including not only a description of the Circle’s turbulent and exciting past, but also their February and March newsletter chalk full of tasting notes, wine trips and commentaries. To be honest, it was a little strange to receive a newsletter consisting of approximately 27 pages of double-sided text stapled together. Repeat: a stapled newsletter. If I didn’t know better, I could have easily mistaken it for one of a dozen reports I handed in during my high school years, complete with a yellow cover printed with their grape and feather quill pen logo. Funny newsletter aside, I’m truly honored to be apart of this very prestigious organization. While looking down the list of their 280+ members from all over the world, I think I’m one of only a handful of bloggers, while the rest have enough print publications under their belt to fill my office library. It’s a bit daunting to see my name next to, or even near, those of Jancis Robinson, Hugh Jackson and John Radford, but then again, it gives me a goal to work towards I’m sure over years, they’ll teach me a thing or two, or twelve, about wine. My only other hope is that the Circle will incorporate more social networking tools into their website. | [01/01/1970, 02:00] | The Wine Trials |  | Published on May 1st and just delivered to my doorstep via Amazon.com, The Wine Trials by Robin Goldstein enlivened (inflamed?) the wine blogosphere before anybody cracked the cover. The striker to the matchbook? Eric Asimov, a seasoned journalist for the New York Times, wrote a post based on reading a Newsweek article about the book. You would not expect a journalist to comment on another piece of print media, especially without having read the book, but I guess this is the blogosphere and we are all guilty of seeking inspiration outside of traditional journalistic boundaries, but what ensued in the comments section of the post when nobody had read the book was truly sociologically interesting. After a 65 comment explosion, Asimov wrote a follow-up after receiving a pre-release galley copy of the book and that post incited 31 comments. Sequentially, the original post can be found here and the follow-up here. Interestingly, the book is only, initially, available on Amazon.com. And, yes, you guessed it. Amazon is currently backordered on the book. Somebody is interested … Piqued by all of this, I did what anybody would do with all of that content on Asimov’s blog—I cut and paste into a Word document with .5 margins and 10 pt Trebuchet font. 36 pages and 17,000 words later I am more confused than before I started. And, with no small amount of irony, the 17,000 words has to exceed the actual content in the book, which is 2/3’s wine listings. Here is the net-net version with this book: the author did a blind tasting of many wines with large number of tasters (some 500 +) and the result was that numerous inexpensive wines (under $15) bested wines that are more expensive ($50 +) based on the panel of judges. Pragmatically speaking, you do not have a book if people preferred more expensive wines to the less expensive wines so there is some room for question because the study, presumably, was set-up with an end conclusion in mind and not a hypothesis, but just the same it’s a fascinating book that makes for good arm chair reading over the course of a couple of hours. With 58 introductory pages and the balance of the book being wine listings of the 100 wines under $15 that bested the $50 - $150 wines, it’s a light read. The majority of the blog comments about Asimov’ posts on the book were centered on the division of small expensive wines and large grocery store wines. This is an old ideological argument and more analogies were employed to explain the difference in art versus culture. Variants cropped up about wine appreciation versus simpleton quaffers, etc. Ugh, wake me when this tired old song is over with. We get it. Get over it. Yes, there is a cultural difference between NASCAR fans and those that attend the symphony. By God, both of these groups of people enjoy wine, too. Nested within all of this debate is the essential truth by Asimov. He states: I am not saying wine is the equivalent of art. I do say that wine can be appreciated on many different levels, but that nobody should ever feel obliged to appreciate wine on any level. In the end, the book seems to divide wine consumers into the casual buyers who are pushed this way and that by forces they don’t understand, and the wealthy conspicuous status seekers who also are not quite aware of capitalism and marketing. Unacknowledged are the serious wine lovers who are knowledgeable, experimental and passionate, and who, yes, are in control of their own destinies. The book may speak to the first two groups, but not to the third. As a member of the third group, the “serious wine lover” I can say unequivocally that I occasionally drink inexpensive wine and, natch, this book is an interesting take and a welcome addition to the pantheon of wine studies and a nice guidebook to the maze of choices at your grocery store for a through the week glass. | [05/15/2008, 03:39] | Mouton Cadet (White) 2006 wine review by (PB) |  |  This lightly golden Bordeaux smells like a wonderful Riesling or Gewürztraminer on first sniff and then evolves quickly to a Sauvignon Blanc blend. Peaches and grassy notes are very nice on the swirl with flowery bouquet.
This wine is 40% S. Blanc 50% Semillion and 10% Muscadelle and it tastes precisely like what it is. This wine comes in at $7.50 and is food friendly, and okay as an aperitif. Raise a glass to be sure. |  |  |  |

Whether it conjures images of swarthy, ammo-strapped banditos sidled up to the bar in a captive Mexican border town or fantasies of idyllic hours in hammocks on tropical vacations, the word tequila is perhaps the most evocative in the drinker's lexicon. Tequila's siren song is mysterious and sexy, with a hypnotic off-key recklessness. She lures you in by seducing your mind, secure in the knowledge that your body - and taste buds - will have no choice but to follow. While this exotic spirit has tempted drinkers around the world for centuries, few of us who make margaritas a staple of summertime understand or appreciate the journey tequila has taken from Mexico's highlands to the local supermarket shelf. It's not all blender drinks and body shots. Tequila has a long and increasingly turbulent history - one that's almost as complex as the spirit itself. Once Upon A Time In Mexico... The tale of tequila is at least as long as the history of Europeans in North America. The spirit's precursor, mezcal wine, was produced shortly after the Spaniards arrived in the New World in 1521. Unaccustomed to drinking plain water (which, in their European homeland was rife with bacteria and bugs, and often a one-way ticket to the plague pit), the Conquistadors were eager to create a new alcoholic beverage. They found the makings at hand in pulque, a nutrient-packed brew derived from the fermented sap of agave plants, which had been a staple of the native diet millennia before the arrival of these thirsty men. The Conquistadors set to work distilling pulque into a drink considerably more potent, and in less than a century they were cultivating local agave and turning pulque into mezcal wine for exportation back to the Old World. Fortunately for generations of drinkers that followed, the Conquistadors never did know how to leave an indigenous people's traditions well enough alone; mezcal wine eventually evolved into the treat we now call tequila. Though the origin of the word itself remains a mystery, it's believed that tequila was named for the small town of Tequila in the Jalisco state of Mexico. The "Father of Tequila," Don Pedro Sanches de Tagle, Marquis of Altamira, saw the potential for this potent liquor and established the first tequila factory in his hacienda in 1600. Over the next hundred years, tequila was used for everything from generating taxes for public works to curing New World illnesses. It became so popular, in fact, that Spain's king began to worry about the competition tequila was causing, and in 1785 banned production of all spirits in Mexico in order to promote the importation of Spanish wines and spirits. Unwilling to give up their livelihood to a monarch an ocean away, makers of mezcal wines simply continued their trade in secret - at times literally baking agave underground - until the ban was lifted when King Ferdinand IV took the throne the following decade. The tequila manufacturer who remains perhaps the most famous today, Jose Antonio Cuervo, was the first licensed manufacturer in Mexico in 1758. His family's Casa Cuervo proved very profitable, by the mid-19th century boasting fields of over three million agave plants. Cuervo was the first distiller to put tequila in bottles instead of barrels, selling the first in 1906. Though other tequila distillers rose to compete with Cuervo and continue to join the market today (perhaps the most notable being Sauza), pioneer Cuervo remains the world's largest tequila manufacturer. Improvements in transportation during the 19th century helped take the fruits of Mexican distillers' tequila labor into North America and beyond. As its popularity increased beyond Mexico's borders, tequila also experienced a growing reputation within the country during the revolution of the early 1900s, when the drink became a symbol of national pride. Caught in a nationalistic fervor, Mexicans quickly cast aside imports in favor of home-grown products of all kinds. Before long, tequila became synonymous with hard-living, fearless gunslingers like Pancho Villa - heroes of the era. In America, the Mexican favorite experienced a surge in popularity during Prohibition, when thirsty drinkers were tempted by tequila smuggled across the border, and again during WWII, when hostilities made European imports scarce. Legend has it that the drink tequila made famous, the margarita, was first mixed in Mexico or a nearby state sometime between 1930 and 1955. The cocktail made its way into gringo hands, and no lime or Mexican flag on a toothpick has been safe since. Don't Call It Cactus Though often confused, mezcal and tequila are not one and the same. Both are distilled from the agave plant, a succulent from the same family as the lily and the amaryllis, but only liquors made from the blue agave are called tequila. Contrary to popular belief, agave is not a cactus. Though agave shares a common habitat with many prickly cacti neighbors, it has a different life cycle, and there are 136 Mexican species in its own unique agave family. The process of creating tequila begins when the blue agave plant ripens, usually eight to 12 years after planting. Because the plant must be ripe enough to have sufficient sugars for fermentation, a jimador first performs the crucial task of chopping leaves away from the plant's core to assess its ripeness. If the plant is deemed ready, the core - or piña - is cut away and taken to a distillery for roasting in furnaces called hornos. After roasting, the piñas are shredded, and the juices pressed out and placed in vats or fermenting tanks. Once in the vats, yeast is added to the juices to convert the sugars of the agave to alcohol. These agents are so vital to the process and to creating unique tastes in tequila that distillers keep very tight-lipped about their individual yeasts. The resulting juices then ferment 30 to 48 hours before undergoing distillation twice. The outcome is a rich, potent, colorless liquid between 70 and 110 proof. The color comes later, brought on by wooden barrel aging, or from the addition of caramel or wood essence. In the final step of processing, most tequila is filtered through cellulose filters or activated carbon before bottling. Protecting a National Treasure Mexicans are understandably proud and protective of their national alcoholic spirit, and between World Wars I and II, the Mexican government began efforts to closely monitor production and distribution of tequila. In 1944, the government decreed that any product called tequila had to be made by distilling agave in the state of Jalisco. Today, there are only five regions where tequila can be legally made; most are in the semi-arid plateaus and highlands of Jalisco and the adjoining states of Guanajuato, Michoacan and Nayarit, and the northeastern state of Tamaulipas. To help guarantee the quality of tequila, in 1978 the Normas Oficial Mexicana (NOM) was established, regulating all agricultural, industrial and commercial processes related to the spirit. Since then, the industry has continued to grow, with more than 50,000 hectares of agave under cultivation and more than 500 brands of tequila available today. To help control the burgeoning industry, the Tequila Regulatory Council (TRC) was founded in 1994 to oversee industry production, quality and standards. The fundamental standard set by these oversight agencies categorizes tequila based on the percentage of blue agave juice it contains. Tequila 100 percent Agave must be made with solely blue agave juices and bottled in Mexico. Tequila or "ordinary tequila" must be made with at least 51 percent blue agave juices and may be exported in bulk for bottling in other countries according to the NOM standard. Which tequilas are "best" is primarily a matter of individual taste. With increasing manufacturers pumping cash into spiffy packaging, sexy bottles and glossy ads, a more expensive tequila doesn't necessarily mean a better product. There are numerous quality tequilas available for $20-$50 USD. Most brands available for under $20 are usually mixto (not 100 percent agave) and are mass-produced for local markets. A good and tasty way to find a favorite is to sample a wide variety of brands in the different styles: Blanco for its young, rough edge and rich agave flavor; Reposado, which is sharp and peppery; and the woody, smooth Anejo. Trying to settle on a personal favorite is a good excuse to work one's way across the tequila shelf at the local bar, one bottle at a time. Tequila's Uncertain Future While tequila has a good-time reputation as the key ingredient of backyard fiestas and frat parties, there's a dark side to this South-of-the-Border libation. The popularity of Mexico's national treasure has, in some ways, caused tequila more harm than good. Growing demand has led to discontent among agave farmers who, in 1996, organized a protest against exploitation by some producers. Their blockade ultimately cost the industry millions, and the loss was passed on to consumers via price increases. Another blow struck the tequila industry in 1997, when producer Don Jesus Lopez Roman was killed in a gangland-style execution outside his factory. Roman, whose Tequila San Matias distillery was founded in 1884, had become unpopular after taking a vocal stance in support of bottling all tequilas in Mexico and banning bulk exports to ensure content and quality. His murder remains unsolved. If labor disputes and murder aren't enough, a recent plague of pests, diseases and impending shortage of agave has led to potential crisis. Faced with spiraling agave costs, several distillers have discontinued their low-end brands to concentrate on their premium, higher-priced tequilas. The buzz among bartenders is that as availability of blue agave declines, the price of tequila will rise and quality may not go along for the ride. But those who love tequila for its unique, sultry taste and colorful history won't be dissuaded by these natural and man-made dramas. Truth is, tequila worms and their supposed visionary properties are the stuff of Hollywood movies and high school urban legends. One will never see a worm in Mexican-bottled tequila, though some U.S. bottlers toss in a critter for novelty. If you're really hankering for a worm with your booze, it's possible to find some types of mezcal that include a gusano or "butterfly caterpillar" in the bottle. Even this isn't a Mexican tradition. Those in the know say the addition of worms was a marketing ploy developed in the 1940s - the drinkers' equivalent of the toy prize in cereal boxes. |

| [05/04/2008, 14:34] | Wine Bahs |  | New York ?The last time I saw a selection of wines this idiosyncratic was on a closeout list from a distributor,? somebody was heard to say, when talking about one of the many wine bars that have sprung up across the country.
Whether it is to find an outlet for those seldom seen wines, that do often languish in the corners of many a wholesaler?s warehouse, or if it is the result of a methodical search for a pure expression of wine, today?s wine lover need only to stumble into a wine bar. Or enoteca, as we say, on the wine trail.
Minutes before I was to do just that, I was in a clothing store that caters to young urbanites. On display were as many different T-shirt selections as I would soon be faced with when looking at the wine list. One shirt caught my attention. It read, ?Who the f*** is Mick Jagger??
An hour later, over a glass of Gruner, Mick would pass by our window, sans entourage.
30 minutes earlier I slipped into the wine bar, before my friends. Ordering up a glass of an Italian white, an Asprinio, it recalled a wine I had made a hundred years ago in California. Tangy fruit up front, a hint of volatility, not quite ready for oil and salad, but veering off in that direction. That?s OK with me in small doses. Italian whites, especially made in a rustic style, can be charming when that element is doled out judiciously. Civet in a perfume can be attractive, ask anyone who loves Chanel No.5.
Speaking of the rear end of a tomcat, I am sitting here struggling with terroir. My friend and I had an appointment with the owner of a wine bar, who walked in, and by, chatted up his staff, looked not in any direction at his clientele (one of which, wasn?t he supposed to rendevous with?), and headed back out the door.
Maybe it?s all those years I worked at being invisible when I photographed on the streets. Perhaps he is forgetful, though we met and spent time together, recently. I?m quite sure the success of his career has nothing to gain from knowing me.
All these thoughts, not just to excoriate the young lion for his comportment. More to my quest is this elusive search for recognizability in that thing we call terroir.
I use a different word which comforts me and because I understand it better than terroir. Territoriality. Probably a made up word, but one which offers focus to a blurry scatter of opinions about the spirit of a place, which means something to us for a reason. Maybe it is because grapes grow there and unforgettable wine results. Or hands making memorable music. Perhaps it is because a certain potato flourishes there, exclusively, and from those potatoes a gnocchi (that I?ll never ever forget) of which I had three bowls, at lunch, in the Marche. Back there, in the dungeon of my memories.
As the forgetful proprietor hurried off to his more important task, my friend arrived with a colleague. We sat down to drink that bottle of Gruner, Mick hurrying off in the same direction as Mr. Oblivious. Everyone to their own T-shirt. Wine boss, rock hoss, jazz joss. Not yet, Thelonious, that?s coming, uptime, uptown. Later.
While the revolutionary T-shirts are brought to the table with a sampler of appetizers, we ordered another bottle, this time a red. I proceeded to blunder, thinking the name was printed on the list with a redundancy. My younger, more mentally agile colleague gracefully corrected me. Just so everyone knows, Italian wines, even to those who make a life study of them, have many, many names. This one, known as Lacrima di Morro d?Alba, just to make things interesting, is also not from Alba. Or anywhere near Piedmont. Look it up. Oh, and the winemakers sometimes use the Tuscan governo process, but it?s not from Tuscany. Got it?
About this time one of the observant ones at our table casually mentioned that Tom Waits just shuffled by, in the direction of William Burroughs old place. One of them is late. This is one helluva people-watching wine bar.

Sake is a Japanese alcoholic beverage, made from a series of fermentations using steamed rice. The process removes the millet and the protein from the rice, leaving the starch-similar to how beer is made from grain. Over time, the starch is converted to sugar naturally and a little yeast, called koji, is added in later stages of the fermentation, which acts to create alcohol out of the sugar. At the end of the process, the liquid is filtered to remove any millet or other particles. The resulting product is clear and about 15 percent alcohol. Sake has been made in Japan for over 6800 years.
Types of Sake There are two kinds of sake: junmai (with no alcohol added) and honjozo (with alcohol added during the fermentation process). Over 80 percent of the sake made in Japan is honjozo sake. Within those broad classifications, there are different grades of sake: - Futsu - economy sake
- Ginjo - premium sake
- Daiginjo - ultra-premium sake
How to Drink Sake Futsu (ordinary) sake is warmed for drinking. (Ginjo and Daiginjo are served chilled.) Traditionally, sake is poured from a stoneware carafe, called a tokkuri (pictured above). Warm the sake in the tokkuri by placing it in a partially-filled pan of boiling water. (Don't overheat the sake; it should be warm-a little over body temperate, not hot.)
To serve the sake, pour it from the tokkuri into individual sake cups, called ochoko. It is proper sake etiquette to hold your cup while the sake is being poured. Inhale the sake's aroma gently before sipping. Sake is meant for sipping, not throwing back like a shot of whiskey.
Storing Sake Sake does not improve with age, like fine wines or Scotch whiskey. Instead, buy sake with a recent bottling date. Once open, a bottle of sake should be kept in a cool, dark place (such as the refrigerator), as the liquid is sensitive to heat and light. A bottle, stored properly should last around a year.
