I'd originally written this for Lenn, but we didn't use it and I'm dry on material... read it and weep

Cabernet Sauvignon is for wimps.

Yep, you read right. Wimps, I tell ya. You want a dash of crème de cassis? Mathilde makes a pretty one for kir royales. Bursts of blackberry? Pass the Polaner All-Fruit. Chocolate and coffee notes? Starbuck?s can whip you up a mean frappucino. But please, don?t put it in my wine.

I admit, I?m being cranky. And I know it?s partially because I have a pile of dishes in my sink crying out for help as I try to type. But it?s also because I?m trying to make a point: while Cabernet Sauvignon can indeed produce beautiful wines, it?s often made into over-ripe fruit bombs smothered in vanilla-toasted oak.

I know what you?re thinking. Clearly, this woman has never tasted Silver Oak. Or Chateau Mouton-Rothschild. Or etc. etc. etc. I admit, Cab Sauvs can be made into some pretty smoking wines, but can you afford those? Nah, neither can I. The gloriously rated Howell Mountain Cabs are about as far from my price range as possible. As are top growth Bordeaux. Where does that leave me?

Cabernet Franc.

Granted, the two grapes are very different. Cab Sauvignon is all about tannins, dark fruit and leathery aromas. Cab Francs, while also firmly tannic, are lighter, earthier, and display much more herbal aromas. But for me, it?s one of the most wonderfully versatile grapes under vine, producing a plethora of styles, most of which are both food-friendly and age-worthy.

Cabernet Franc, as you know, is one of the grapes used in the classic Bordeaux blend. Along with the more famous Cabernet Sauvignon and Merlot, Bordeaux can also include Cabernet Franc, Malbec, and Petit Verdot. Percentages of Cabernet Franc vary from chateau to chateau, but its typically used more on the right bank in St-Emilion and Pomerol to add tannic structure to Merlot?s juicy roundness.

But Bordeaux is certainly not where Cabernet Franc gained notoriety. That exhalted region is none other than the Loire Valley in France. The Loire is an interesting area that?s largely held on to traditional winemaking methods and indigenous grape varieties, including Muscadet, Pineau d?Aunis, and Cot (the local name for Malbec), among others. The AOCs (Appellation d?Origine Controlle) of Chinon, Bourgeuil, and St-Nicolas-de-Bourgeuil produce reds from Cabernet Franc. The wines tend to be leaner and more acidic than Bordeaux , ranging from the chalk-textured Bourgeuil to the richer Chinon to the juicy St-Nicolas-de-Bourgeuil. While lackluster winemaking can certainly produce bland wines, the true artists of the Loire have been known to craft earthy wines, loaded with mulberry, sage, and minerality that can age for 15 years or more.

Cabernet Franc, however, was largely overlooked in the United States until recently. Some experimental winemakers out in California have been producing Cab Francs that are big, bold, and brawny ? which is just fine, but not particularly true to the nature of the grape. Happily for us, Cab Franc seems to prefer the climate of New York State, and in particular, that of Long Island.

It turns out the maritime climate of Long Island is perfect for many of the Bordeaux grapes ? they dig the summer heat moderated by the surrounding water. Long Island is also cool enough in the winter to allow an appropriate dormant phase without great risk of extended freezes. The Finger Lakes have long struggled with red grapes for lack of sufficient sunlight to ripen, but Long Island has the best of all climactic combinations. And judging from a recent tasting, Long Island winemakers are producing Cab Francs in the all of its glory ? from light and juicy to tannic and mineral-laden.

Raphael and Jamesport both produce what are perhaps the most approachable Cab Francs. Lighter and juicier in style, these wines can both be served slightly chilled as delicious, thirst-quenching sippers. This is not to say that they?re not dinner-wines; indeed, serve them at room temperature paired with rosemary-roasted chicken and asparagus and they?ll certainly blossom.

Castello di Borghese has created a more new world Cabernet Franc that?s full on the palate with sweet cherry fruit and smooth tannins ? it?s a softer, rounder version of the grape that will appeal to dyed-in-the-wool Merlot fans. In a somewhat similar style, Vineyard 48 has certainly gone new world by oak-ageing the wines to impart toasty cinnamon nuances. It?s smooth, round, and creamy, loaded with blackberry and black cherry fruit. Pair either with a hearty beef stew for a midwinter treat.

Schneider produces the most classically-styled Cabernet Francs. If I were to taste their ?Le Breton? blind, I think I?d pick it out as a ripe Bourgeuil. The chalky nose offers plum, sweet red peppers, thyme, and rosemary, with a linear palate of blackberry that expands beyond the stoniness to a smooth, round finish of plumy licorice. Schneider?s ?Roanoke Point? is a bit more elegant, with toasty sandlewood aromas interlaced with rosewater and pluots. The blackberry fruit on the palate is enhanced by notes of roses, herbs, prunes, and roasted peppers. These are both Cabernet Francs for Cab Franc lovers. And a pairing? Why, Long Island duckling, of course!

Ok, now, I?m not saying that after trying Cabernet Franc, you?ll completely abandon Cabernet Sauvignon. But let it swish around your mouth for a while. Taste the lovely herbal notes and the layers of stone and fruit and try to convince me that it?s not an underappreciated grape.

And, if you really feel the need, send me a thank you note. It?s only polite.

san antonio umbria winesI have always loved the packaging on Xanadu wines. That ambiguous golden dragon that looks like a knarly old vine really appeals to me. This is a blend of 73% Margaret River and 27% Frankland River shiraz. Dragon is a recent addition to the Xanadu range. It sits above the Secession and below the Estate in the portfolio.

Aromas of crushed boysenberry, cherry jam, spice, meat, pepper and toasty vanilla oak. On the palate medium bodied with fresh fruits of the forest, pepper, spice and meaty toasty oak. Dry quite assertive tannins and very fresh acidity. Good flavours but suffers from some hardness.

[05/14/2008, 02:54] Chateau Guiraud-Cheval Blanc 2005 wine review by (PB)
This Bordeaux Cotes De Bourg wine is another 05 value. It has a black cherry hue with tight fruit of black cherry and some raspberry notes with minerals and steel.

In the mouth this wine is sweet with some tannic structure, bready notes but needs to open. With breathing it is a tad hot but nice flavors and body with good structure and a good food wine. Buy this wine and two more to lay down for another year and reap the rewards. All this for only $14 so raise a glass to a great vintage!

*What an unusual mix in terms of the international producers you represent?why Argentina, New Zealand and Japan?

- Not really if you consider that Argentina and Japan (Ginjo sake), and to some extent New Zealand, share the same common elements?there are great wines and sake being produced by highly talented winemakers and tojis (master brewers), and they are not getting recognized yet. The quality is already in the bottle?so why should these sell less or get less respect than wine from more obvious regions? We always say that we are really a ?national education company? since we usually explain more than we sell. Our job is to get people to taste these wines and premium sake, and the stuff inside the bottles takes care of the rest. At the heart of this idea is also the notion that in the end, it?s the people you work with who make the difference between mediocre and ?wow!?. We have been lucky, fortunate, and smart (maybe a little of each) to meet and represent some of the top talent in these regions:

*As someone who deals so closely with Argentine producers, what types of obstacles, limitations and concerns have any of them expressed to you in terms of being able to export and promote their products abroad?

- Well, I want to stay out of trouble here since I travel to Argentina a lot, but let me just say that the Argentine government has historically been more of a hindrance than a help for wine exports. As an example, and hard to believe, they actually tax EXPORTS! Perhaps the bigger obstacle for Argentine wineries is that the economic and political situation is relatively unstable, and when you are in an industry that measures commitment and success over a decade or longer due to capital investment requirements, it is hard to deal with a system that usually looks out only 2-3 years at a time.

*In your eyes, what sets apart these Argentine producers you represent? What do their wines bring to the table of American wine consumers that large-yield, often conglomerate-backed wines simply cannot?

- I alluded to this a bit above when talking about who we represent and why. I think there are three main things that set our producers apart:

1) Our wineries are owned by and have Argentine winemakers who have lived in this unique climate and region for their entire lives. For us, that means that the wines that they make TASTE like Argentine wines, not like some random wine from somewhere in the world. And as talented as some of the flying/foreign winemakers are who are working in Mendoza, I have yet to taste a wine from them that thrills me the way our producers? wines do at the dinner table. And I taste everything from down there.

2) As good as they already are, they are still always trying to learn how to improve their wines, and in today?s wine world, that?s the only way you stay on top. It shows.

3) Obsessive attention to detail seems like an abused phrase, but in winemaking it is crucial and not as common as you would think. Our winemakers are also our close friends and in Argentina that is taken pretty seriously. They make sure that every step is done with the utmost care because they would never want to look their friends in the eye and say, ?uhh..I?m sorry but this wine is just ok because we weren?t really paying close attention when we made it.? Large wineries may be able to solve #1 above, but #2 and #3 are far harder to come by, and that?s probably as true in the US as it is in Argentina.

*Looking ahead?are there any regions Vine Connections is looking to expand its portfolio toward, and why?

- We made a strategic decision a few years ago that we would remain specialists in Argentine wine and Japanese sake. Some importers have gone in the opposite direction and are happy to sell one of everything from anywhere, but we?re just not built that way as people. We started as leaders in both of these categories and we feel the only way to stay out in front is to specialize. That?s why we spend almost a month per year in Mendoza and visit Japan for at least 2 weeks every year. It?s our own ?attention to detail? mantra, and we try to stick to it so that we can look our customers in they eye and say every time, ?This is really great Argentine wine and Ginjo sake?. Every time.

- Fortunately, we won?t be bored since there still plenty of regions and microclimates still left to discover in Argentina.

*Given the nature of the market here in the United States, what advice would you give to consumers who would like be aware of, as well as actually see, a dramatic increase in availability of premium Argentine wines such as those crafted by your producers?

- American consumers have helped their own cause a lot already by being very open to trying wines like Malbec, Bonarda, and Torrontes. I think they will help themselves even further by continuing to experiment with wines at many different prices, not just the ?great values? under $15. Nick and I firmly believe that well-made Argentine wines offer incredible value and over-deliver at all price points. A $12 wine is worth more like $16, and a $30 wine is worth more like $40 when compared to other wine regions of the world. And, of course, you can support quality-focused companies like Vine Connections by paying attention to the importer name or logo (like our compass) that appear on every bottle. As with other wine regions, a good wine importer can be your best friend when you haven?t tried a particular wine yet and would like some assurance that you are going to enjoy it?especially when spending more than $15 or so.

Imagine a corner of Italy where rice is as commonplace as pasta. Where you can visit a university of gastronomy and a university for truffle-hunting dogs all in the same day. Windsurf a secluded lake, mountain bike old Roman trails, hot-air balloon above vineyards, or test the powder on an Olympic-quality ski run. And through it all, taste some of the flat-out finest food and wine anywhere.

Welcome to Piemonte. Meaning ?foot of the mountain,? and tucked in between the Italian Riviera and the Alps of France and Switzerland, Piemonte (pyeh-MOHN-teh) has aptly been called Italy?s ?green treasure chest.? Home of Barolo and Barbaresco wine, wild boar and venison, butter and cheese, and the ?Holy Grail of cuisine? ? the white truffle ? this prosperous province offers something for everyone, every month of the year.

The Truffle Shuffle
They may look like mutant potatoes, but white truffles rank among the priciest and most sought-after foods on the planet. Finding them ? in the woods, underground, in the dead of night ? involves a keen-nosed mongrel dog and arcane lore (including moon phases) passed down from father to son. Every trifolau (truffle hunter, in Piemontese dialect) guards his best spots like secret fishing holes. No wonder ? the prize fungi fetch stratospheric prices (a 1.2-kilo giant recently brought more than $120K at auction, and even ordinary ones can cost hundreds).

Every fall, the world celebrates Tuber magnatum pico at the Truffle Market in the historic town of Alba. You enter below a larger-than-life poster of Sophia Loren holding a monster truffle, then thread your way past booth after booth of cheeses, sausages and other local specialties. Sample the truffled wild boar salami, the testun cheese with its crust of grape pressings, the breadstick dipped in chestnut honey, the dense hazelnut cake, and follow the heady aromas to the café bar in back.

For 25 euros you can taste what the fuss is all about. While you watch, one stately gentleman shaves tissue-thin truffle slices over a pair of sunny-side-up eggs; another pours you a big glass of Barolo from magnum. (This is Breakfast of Champions Piemonte style!)

Around the bend, past fragrant heaps of porcini mushrooms, the trifolai themselves display their finds. If you buy a truffle to bring home, keep it dry and cool (some suggest packing it in dry rice) and use it as soon as you can. (Oh, and it will perfume everything in your suitcase.) Or avoid the hassles by getting bottles of truffle oil instead ? it?s available year-round, it keeps for months, and a few drops go a long way. (Tartufi Morra, in Alba, is a great source for all things truffle.)

Drinks
Move over Chianti, make way for the world-class reds, whites and sparklers of Piemonte. They?re varied, versatile, and supremely food-friendly, with a history that traces back to Etruscan times (~800 B.C.). From the castle-studded Langhe and Roero regions to the Alpine foothills, here are a few of the best.

Arneis: A dry, fragrant, food-friendly white with great acidity and clean flavors from stainless-steel aging. Great with freshwater perch from the lake district or trout from the mountain streams.

(Cortese di) Gavi: Dry and crisp; an ancient varietal with DOCG (Italy?s highest) status. Try it with a fritto misto (?mixed fry?) of freshwater fish.

Chardonnay: Piemonte?s cool hillsides make for a balanced, fruit-driven chard, usually with little or no oak. A natural with buttered tajerin (fresh, thin-sliced egg noodles) and local game birds such as quail and pheasant.

Moscato (muscat): Made dry, sweet or sparkling, the highly fragrant moscato shows ripe, honeyed fruit-and-floral aromas. Great with hard-to-pair foods, and as a lower-alcohol afternoon sipper. Moscato passito, a hyper-sweet version, is made by raisining the grapes, either on the vine or in the winery. And love it or loathe it, the muscat-based Asti Spumante is hard to beat with Piemontese hazelnut cake, or with cheese and cogna? fruit chutney.

Alta Langa, a fairly new DOC (regional appellation), produces metodo classico (Champagne-styled) dry sparklers, primarily from chardonnay and pinot noir grapes.

Dolcetto: Medium-bodied and dry despite its name. Soft tannins, forward fruit and reasonable price make it an easy-drinking intro to Piemontese reds. A good partner for a sampler plate of local cheeses.

Barbera: Piemonte?s most popular everday red; quality has vastly improved in recent years. Bring it on a vineyard picnic or team it with Piemonte?s garlicky staple, bagna caoda (see recipe).

Nebbiolo: When produced without much barrel aging, this varietal is fresh and lively, with medium body and berry-spice flavors. It?s easy-going enough for a rustic lunch of bread, aged sheep cheese and wild boar sausage; heady enough to take on braised veal or wild hare at dinner.

Barolo and Barbaresco: Big and burly, both made from the nebbiolo grape, they?re aged for up to three years in oak and can develop in bottle for decades. Locals call them the ?king and queen? of Piemontese reds and serve them with the region?s heartiest fare including venison, risotto with porcini, and anything with white truffles. Barolo Chinato, seasoned with botanicals such as quinine bark, juniper and rosemary, makes a potent after-dinner digestivo.

Piemonte Producers
Many wineries are open to the public for tours and tasting; others require an appointment. In addition, most restaurants and bottle shops feature a wide range of wines from the entire region. Here?s a sampling:

Eats
Fonduta ? Piemonte?s alpine fondue, made with fontina cheese and often stirred into risotto. For a high-ticket version, shave white truffles on top.

Agnolotti del plin ? Ravioli stuffed with veal, pork, spinach and nutmeg; often topped with sage butter.

Riso (rice) ? Many varieties (look for short-grain ?Vialone Nano? or black ?Venere?). Piemontese risotto recipes vary from the salami-studded Panissa of the northeast to the wine-country mainstay, Risotto al Barolo.

Polenta ? The best is stone-ground, from heirloom varieties of corn. Served hot and creamy with butter and/or melted cheese, or poured out, cut into squares, and baked or sautéed.

Carne Cruda ? Piemonte-style steak tartare; made with beef or veal and dressed with olive oil and lemon.

Bollito misto ? ?Mixed Boil? tastes much better than it sounds. Assorted long-simmered meats (some recipes include a pig?s foot and calf head along with the veal breast, capon and cotechino sausage) and seasonal vegetables.

Manzo Stufato ? Braised beef, with varied seasonings such as bay leaf and nutmeg.

Tartufo Bianco: The white truffle, ?Jewel of Piemonte,? tastes best as a last-second topping for simple hot foods such as eggs, buttered pasta and risotto. Shave it as thin as possible (a special tool is available locally) to release its musky, earthy aromas. Cheeses
Piemonte produces a huge variety of cheeses. The intense, blue-marbled Castelmagno is often stirred into fresh pasta or gnocchi. Caprino, made from goat?s milk, is tangy and creamy when young; denser and punchier as it ages. Murazzano, a sheep cheese from the Langhe region, has its own festival in August. Bettelmat, from the lake district, gets its distinctive flavor from an aromatic local grass that the cows feed on. Melt some Fontina for a classic après-ski fonduta; slice some firm Toma, creamy Taleggio, or nutty, rich Robiola over hot polenta. Families who make their own cheeses often dry-age them to various stages of hardness and pungency, and also cure them in olive oil with wild or garden herbs.

Sweets
Bonet: Caramel-cocoa custard, usually served cold.

Giandujotti: Mini foil-wrapped chocolate-hazelnut confections, reportedly invented by Napoleon when chocolate supplies were low.

Torta di Nocciole (Hazelnut cake): Made with or without cocoa powder, cinnamon and orange peel, it stars Piemonte?s famous and flavorful tonda gentile (round and friendly) variety of hazelnut.

Frutta: Piemonte?s fruit ranks among Europe?s finest. Try fresh summer strawberries or peaches soaked in Moscato, with some crunchy brutti ma buoni (ugly but good) mini-biscotti. Ciliege al Barolo (wine-marinated cherries), on menus in season, are also available in jars. Madernassa pears (an ancient local variety, recently saved from extinction) are wonderful as is, stewed with spices, or distilled into grappa. (The agricultural cooperative at Cascina del Cornale sells these and more.)

Bicerin: Torino?s hot coffee, chocolate and cream pick-me-up; it originated in an 18th century café? that still features it.

Caffe? Corretto: Cuppa joe, wine-country style, served even at breakfast: splash in some red wine to ?correct? the coffee?s bitter edge.

Where to Eat
Ristorante Elvezia, in the town of Stresa on Lago Maggiore. Try the lake fish ?in cartoccio? (cooked in parchment)

Gianni Gagliardo in La Morra. Restaurant features truffle menus in season; adjoining winery. Vintner Gagliardo founded and hosts the annual Barolo Auction.

Piola on the town square in Alba. Cozy trattoria owned by the winemaking Ceretto family, featuring their wines. Great house-made ravioli.

Belvedere, on the hilltop in La Morra, for agnolotti, wild game and a spectacular view of the Langhe wine country.

La Contea, in Neive. Traditional Piemontese specialties, with home-cured meats, fresh-made egg pasta, game birds, and truffles in season. A ?Buon Ricordo? restaurant: you get a hand-painted souvenir plate when you order the specialty of the house.

Combal.Zero for cutting-edge food and presentation, next to the ancient Rivoli castle near Torino. Innovative chef-owner Davide Scabin puts ?ingredients together in an unusual way: semi-solid soups, semi-liquid pizzas, cyber-eggs.? (These last come with white helium balloons attached, which make for unique after-dinner conversation?) He numbers each version of a dish ?like a new edition of software? ? Albese 2.4, for example, for his Alba-style veal recipe.

Golosi di Salute in Alba. Gorgeous pastries and confections with a health-conscious twist. Just ask, and they?ll steer you toward dairy-free, yeast-free, or sugar-free options. Must-try: the butter-free croissants, enriched with extra-virgin olive oil.

Caffe? Florio, an elegant Torino landmark, since 1780. It?s said that Garibaldi planned the future of Italy here. Renowned for gelato, especially the hazelnut-chocolate gianduiotto.

Where to Stay
Lake district: Hotel San Rocco in Orta San Giulio ? A former convent, with ancient stonework, beamed ceilings, updated rooms. Lakefront indoor-outdoor dining (chef Paolo Viviani won top prize in the ?06 ?Rice Olympics? chef competition), great lake and mountain views. Hit the nearby shops for picnic supplies or foodie souvenirs: varietal rice, dried porcini mushrooms, multicolored pasta ribbons.

Torino: Hotel Santo Stefano ? Sleek and contemporary. Its modern brick façade, with recessed color-changing LEDs, makes a neat old-meets-new contrast with the nearby Roman arches.

Wine Country: Foresteria Conti Roero in Monticello d?Alba ? Up a steep, winding mountain road, this remote, country-elegant retreat started life as a hunting lodge for Piemontese nobility. Great wine list geared to regional specialties at its restaurant, Conte Roero.

Albergo dell?Agenzia in Pollenzo, a four-star hotel on a Savoy country estate. Each guest room is named for a local wine, and the fitness center features a Turkish bath. The Agenzia also houses the University of Gastronomic Sciences (the first of its kind in the world) and the Wine Bank (a ?bottle library? from producers throughout Italy). You can take the Wine Bank guided tour and taste several bottlings from the cellar. Or book the two-day crash course in Piemontese food and wine, which includes wine-themed dinners and tastings at nearby wineries.

Torino ? Museums, Shopping and More

Torino, Italy?s capital of contemporary art, offers over 40 museums and outdoor exhibits. Its Egyptian Museum is ranked second in the world, after Cairo, and the Automobile Museum houses a large collection of rare and vintage cars. (If you?re staying for 48 or 72 hours, consider the Torino Card for free public transport, and free or deep-discount tickets to concerts, museums and more. Some hotels even include the Card with a two-night booking.)

For movie buffs, the five-story Cinema Museum, in the Mole Antonelliana (?Italy?s Eiffel Tower?), traces Italian film history from its beginnings in Torino. Charlie Chaplin?s bowler hat is here, along with a shark head from Jaws and an archive of some 200,000 films. An interactive tour leads you through the stages of filmmaking, and spotlights typical movie themes in ten different ?chapels.? (In the ?love? chapel, reportedly, you lie on red, heart-shaped cushions to watch flicks; in the ?humor? chapel, you sit on a toilet.)

Just outside town, the Castello di Rivoli, built for the Savoy royal dynasty, now houses a knockout modern collection in the Museo di Arte Contemporaneo. Along with an extensive permanent collection of Italian and international modern masters, the museum hosts special exhibits (the current show features Claes Oldenburg) of both established and up-and-coming artists.

Throughout Torino?s city center, covered walkways and glassed-in arcades make it easy to shop, snack and people-watch in any weather. The sprawling Porta Palazzo, with over 700 stalls, claims the title of Europe?s largest open-air market, and the former Fiat factory in Lingotto has morphed into a multi-story shopping galleria. (Don?t miss the test track on the roof, overlooking the ?06 Olympic Village.)

For nightlife, head to the wine bars, clubs and dusk-to-dawn discos of the Murazzi del Po, Quadrilatero Romano (Roman Quarter), or Docks Dora in the old warehouse district. Craving a martini? Salute ? vermouth was invented here!

Bagna Caoda

Piemontese for ?hot bath,? it?s a fondue-style regional specialty featuring assorted raw and cooked vegetables and a rich garlic-anchovy dipping sauce. Add some baguette slices to round out the meal, and to mop up any extra sauce.

Bagna Caoda Sauce

1 cup small whole garlic cloves, peeled
1 cup olive oil
1 cup butter
1 can (2 oz.) anchovies, drained and coarsely chopped
1/4 cup fresh parsley leaves, coarsely chopped

Vegetables
Arrange your choice of seasonal vegetables on a serving platter ? raw, cooked or some of each. Examples: carrot and zucchini sticks, string beans, cherry tomatoes, broccoli and cauliflower florets, green onions, cabbage wedges, radishes, tiny potatoes.

How To
Simmer garlic in olive oil and butter over very low heat (an electric fondue pot is ideal) until garlic becomes very soft and golden, about 1 1/2 to 2 hours. Stir in anchovies and parsley and keep warm while everyone ?bathes? their veggies.

I can remember a time when the word "Alsace" only brought to mind dim memories of my 5th grade class discussion on some valley that people were fighting about in one of those big wars. In those days I definitely couldn't spell Gewurztraminer, and I had only tried one or two of them.

Perhaps you'd call me a late bloomer when it came to Alsatian wine, but bloom I eventually did, and now I'm a quiet, but fierce devotee of what I believe to be some of the most individualistic wines on the planet. Alsace has always been an odd duck of a winegrowing region. It is the only region in France that not only allows, but mandates that the name of the grape variety appear on the label (though there are exceptions). It happens to grow grapes more associated with Germany and Northern Italy than with the rest of France (Riesling, Gewurztraminer, and Pinot Gris), and perhaps by virtue of its occasionally Germanic past, produces more beer than any other winegrowing region in the country.

Characterized by steep hillside vineyards whose sun exposure, coupled with the region's cooler climate make for long slow grape maturation, Alsace has been worked by small village winemakers for centuries (major regional wars notwithstanding). There are thousands of producers in the region, though according to the Oxford Companion to Wine, about 175 of those producers make up nearly 80 percent of the regions production. Many of those 175 are still relatively small by French standards, but some, due to their tenure as well as success have grown to be significant producers that make enough wine for export all over the globe.

Trimbach (or more properly, Maison Trimbach) is perhaps one of the best known of these larger producers, and for good reason. The Trimbach family has been making wine under their name since progenitor Jean Trimbach founded the house label in 1636. Twelve generations later, the estate is still run by the family, and is synonymous with the region, producing what some consider to be the finest wines around.

For the first two hundred or so years, Trimbach wines were made, like many in the region, in relative obscurity. Produced and consumed all within a 25 mile radius, the wines were part of the fabric of village life. Around the turn of the 20th Century, however, the then proprietor Frederic Emile Trimbach submitted the family's wines to be shown at the 1897 Brussels Exposition, where they were apparently greeted with significant acclaim.

Now, nearly 120 years after that initial success, Trimbach is known for producing two of the region's finest wines -- both Rieslings. One is bottled under the name Clos St. Hune, and comes from the Grand Cru Rosacker vineyard, and is widely regarded as the region's best Riesling. The other is this wine, named after the enterprising Frederic Emile, whose marketing skills launched more than a century of prominence for his family winery. In addition to these top wines, Trimbach makes 13 other wines, in quantities ranging from a couple thousand cases to the tens of thousands.

Cuvee Frederic Emile is made mostly from grapes grown on a south-southeast facing hillside vineyard named Osterberg above the winery. The limestone rich soil of this Grand Cru vineyard drains quickly and deep, and the grapevines are, on average, 30 years old. The grapes are picked with painstaking deliberation into small shoulder baskets over a series of days, with the goal of selecting only fully ripe clusters of grapes. These clusters are destemmed and assiduously sorted, again to ensure only the choicest grapes are crushed and fermented, ever so slowly, with native yeasts.

I'm not sure about the total production of this wine. The Clos St. Hune is less than 600 cases, but I suspect Cuvee Frederic Emile is made in slightly larger quantities. Were it more plentiful, however, it might be more common to find beautiful aged bottles like this one that some good friends shared with me last month. Trimbach's wines, especially their top cuvees, seem to age forever, and as they do, their personalities begin to truly shine.

Every time I enjoy Rieslings from the Old World like this one, I realize that I don't drink enough Riesling. Every time I enjoy such a beautiful Alsatian wine, I am reminded that I definitely don't drink enough of Alsace.


Tasting Notes:
Pale gold in the glass, this wine has a shockingly bright nose of quince and honey that begs to be inhaled slowly, as if that were physically possible. On the tongue it is halogen bright, with gorgeous acidity that brings to life a swath of flavors ranging from fresh lemon juice and honey to paraffin and nut skin. The wine lasts forever in the mouth, lingering through its drawn out finish on vapors of pomelo and orange zest. A fantastic, distinctive wine.

Food Pairing:
Whatever you eat with this wine, make sure it's damn good. I drank this on my birthday last month and enjoyed it with many things, but especially with a light cooked shellfish salad of crab, squid, octopus, and clams in an "ocean vinaigrette" with seasoned sesame.

Overall Score: between 9.5 and 10

Just in case you were wondering; Matt Kramer (winespectator.com) writes:

You've probably been in this situation yourself. You're the one choosing the wines for a dinner with friends. You look at the menu and perform the usual mental matchups about what goes with what. But then, much more subtly?even furtively?you also do a mental matchup about which wines go with, ahem, the guests.
 
If you're a lover of Italian wines, especially traditional-style versions, you might find yourself in this situation more often than most.
 
This subject is not much discussed because it makes you feel like, sound like, or realize that you actually are, a snob. Nevertheless, most people who know their way around wine pay as much attention to the "who's drinking" as to the "which dish."
 
This lesson is often first (painfully) learned at the family Thanksgiving table. You trot out some of the treasures you've been hoarding for that special moment. Big mistake. Emergency wards are filled with wine lovers traumatized by watching guests guzzle their prized bottles like elephants at a watering hole.
 
I thought about this when deciding recently which wines to bring to a high-end Italian restaurant. A good host, by definition, wants his or her guests to feel comfortable. Our guests were, thankfully, wine lovers. However, that's not the same as wine savvy. No crime there, of course. But when the time came to reach for Barolo or even Barbera, my hand hovered over those bottles and then, Ouija board-like, moved to red Burgundy and California Pinot Noir.
 
Now, maybe it was timidity on my part. Perhaps I've lost my belief in the redemptive, even transformative, power of fine wine?never mind the grape variety or region. Surely a traditional Barolo can move not merely the uninitiated but even the unreceptive, especially when served with the right food.
 
I used to think so. Ask any of my long-suffering friends who have been subjected to my evangelical enthusiasm for, say, Gattinara. Or Recioto della Valpolicella. Or more bizarrely yet, the caramel-colored, sediment-rich delights of Italy's new-wave/old-way whites, fermented with skin contact, from Radikon, Massa Vecchia, Castello di Lispida or Josko Gravner, among others.
 
But now I find myself hesitating. I've come to the conclusion that really characterful wines?none more so than traditionally made Italian wines?often require a certain receptivity, maybe even a little study. That you can't just spring upon an unsuspecting, not-especially-interested-in-Italian-wines guest the magnificently traditional likes of, say, Giuseppe Rinaldi Barolo or even the easier to understand but still true-to-its-old-school Brunello di Montalcino from Tenuta Il Poggione.
 
This flies in the face of today's wine democratization?a belief that anybody should be able to understand, without any fuss, any wine put in front of them. And if they don't, well then, it's the wine's fault, not theirs.
 
This, of course, is why so many Italian reds today are so modernistic, slathered with the creamy vanilla toastiness of new French oak, miscegenated with Merlot, Cabernet Sauvignon and Syrah and practically hot-waxed to a tannin-free smoothness. Do they sell? They sure do. They're easy to understand, familiar-tasting, and?here it comes?you can serve them to anybody.
 
Do these wines represent the best of Italy? For me, they do not. But they are ambassadors of Italian wines, and for that reason alone they're worthwhile. Italian wines at their best?the reds especially?are different from all others. And this difference, which lies at the very root of Italian wine greatness, is not an instantly seductive one.
 
The taste of France is rich and smooth in the mouth (think foie gras) while that of Italy?classically anyway?is about a slight, mouthwatering bitterness (think Campari). It's easy to see why France's seductive model has become universal, including in Italy. The rigors of traditional Barolo, Brunello, Barbera and Aglianico, among others, are formidable and not immediately come-hither.
 
So that's why I stayed my hand in choosing the traditional Italian reds I've come to love when deciding what to serve my guests. They're not instantly likable (the wines, not the guests). Of course, I could have chosen modern-style Italian reds, wines that I know are made for just this very easygoingness. You can use instant polenta these days, too.
 
Maybe I didn't give my guests enough credit. Or maybe?just maybe?it's fair to say that some people just aren't ready for some wines. Is that snobbish? Or is it a fair reality?

oMarking the first anniversary of the 24 hour drinking licence laws, a 'rescue remedy' called Dink has been released.

It is supposed to mitigate the ill-effects of binge-drinking with ingredients that mop up free radicals produced by the liver when it is processing alcohol. It is also cheap and readily available.

It is being marketed to "people who like to get merry". Presumably because they feel it is unwise to market it to people who like to get smashed out of their skulls every Friday night and throw up partially digested burgers on street corners. I think we know who it is actually aimed at.

I must admit that my first thought was "great idea", sounds so useful. But while I'm no Catholic I do think the pain of hang-overs is justly deserved and should reflect any excess. The sparkle generated by a few drinks with friends too easily degenerates into boorishness  and incapacity beyond a certain point. There are very few elegant drunks.

And aren't we supposed to be cutting down binge drinking, as a society? We need a cultural shift that comes collectively - social evolution if you like, of the kind we've seen with smoking, drink driving and wearing seat belts.

Most Friday-nighters, though by no means all, are young people with their whole lives ahead of them and of course there is a natural protective urge to want them to stay healthy. The price that many of them pay for their excesses can be heart-breaking. Blaming them as being responsible for their own actions is ridiculous if the message they absorb is that getting really drunk and doing stupid things is clever and/or funny.

And now we are giving them the tools to avoid hangovers. I like drinking and sometimes I drink more than I should, but I also know that my body hates it when I do. It's a natural defense mechanism to show us our limits and should not be overlooked as a preventative.

If we no longer have any medical consequences we will push our bodies over the limit as a matter of course. But often the real trauma of binge drinking is the wider physical and emotional damage caused by violence, bravado, promiscuity or recklessness . Can we  develop a pill for that too?

oJust in time for Christmas, Sainsburys and Secret Sommelier have teamed up to produce a case of 12 Bordeaux with an accompanying podcast by Christopher Burr MW and Ewan Lacey.

Bordeaux, I think, can be the region most in need of explanation to the uninitiated, as its charms occasionally need to be coaxed out. In this world of immediacy, these wines lag behind in the crowd-pleasing stakes, especially when you venture down from the top drawer. But given a lead from someone knowledgeable, I think - unlike some wines which initially please but become repetitive and dull - they can become friends for life.

It would make a great present for someone and is a useful tool for a group of friends who don't go to a wine club but want to have fun with it at home.

Good for Sainsburys to seize the initiative and find quite an innovative approach to wine tasting. But why is the podcast an audio recording not a dvd? I haven't heard it yet but I would have thought there was quite a lot of opportunity for visuals here.

To make it even more appealing, they have included a prize draw to win a trip for two to the Bordeaux Wine School. That would be quite a fun trip, I imagine.

At a recent tasting of South African Great Whites I was really excited by the wines I tried.

In the past I have sometimes been disappointed that in general the wines could seem out of balance, either too acidic or flabby, the fruit almost a cariacature of itself and even in the worst cases just dirty.

These wines however showed exuberant fruit, great balance of refreshing acidity with richness and depth and really distinctive character. I thought they showed very well and certainly will lead me to the South African shelves when I want good value white.

My favourites from each section as follows, full tasting notes seem to a bit of a dream at the moment but one day I hope to get them all up!

Jan Daneel Chenin Blanc 2005 Napier: Very simple but stylish label would have great shelf presence. Pretty, sunny apricot nose. The broad oak at the front palate is a touch too heavy but underneath is gorgeous fruit. Well-rounded, almost heavy, weight in the middle with enough crisp acidity to take you back for another sip. The fruit pushes right through to the end and lingers for ages. Lovely. 17  Stockist -Jeroboams £15

Tokara Sauvignon Blanc 2005 Stellenbosch: Fresh, flower petals delicacy on nose followed by vibrant, exciting fruit on the palate.
