kristy labonteI've just finished going through a clutch of Hollick reds. I always think of them as one of Coonawarra's better producers, though clearly in recent years they've invested more and more in the nearby Wrattonbully region. I tasted through the following wines:

  • Hollick Wrattonbully Shiraz 2004
  • Hollick Coonawarra Sparkling Merlot 2006
  • Hollick Wratonbully Hollaia Sangiovese Cabernet Sauvignon 2005
  • Hollick Wrattonbully Tempranillo 2006
  • Hollick Coonawarra Cabernet Sauvignon 2004 

... and I was expecting that the Hollick Coonawarra Cabernet Sauvignon 2004 would come out clearly on top. It didn't. Indeed it wasn't even a Coonawarra wine that I preferred the most.

Chilean wine producer Montes, in association with Professor Adrian North of Heriot Watt University in Scotland, has determined that the style of music we listen to whilst drinking wine affects how that wine actually tastes.
"For example, when powerful and heavy music such as rock is heard, wines such as Montes Alpha Cabernet Sauvignon were perceived as tasting 60 per cent more powerful and heavy than when no music is heard. Similarly, when bold and fresh styles of music such as pop were heard, Montes Alpha Chardonnay was perceived as tasting 40 per cent more bold and fresh than when no music is heard.


In conclusion, it can be said that the style of music we listen to whilst drinking wine has a direct correlation on the taste of that wine. In the psychology field this is known as sensory priming.

Some previous music/wine research had noticeable buying pattern changes in supermarkets but this is the first time I have heard of music effecting taste directly.

The research is an extension of Montes wine-making techniques. They apparently play continual Gregorian chants to their wine barrels, believing that the gentle vibrations of the chants aid the maturation and ageing of their wines.

I have some samples of both the wines and the music used in the research coming to me next week; could be interesting!

In 2006, while I was teaching Spanish bankers how to chat up a beautiful woman in English (hey, how else do you get students interested in learning a second language?), Ryan was slaving away at the computer, inventing new and creative ways to involve wine lovers from around the world in Spanish and Portuguese wine. After many creative attempts, he stumbled upon a zany idea he called, the 2+1 Iberian Wine Survey. Sent to a handful of bloggers and wine geeks, the survey asked them to answer 2 questions about Iberian wine, and in return, they could ask 1 of us.

However, at the time, we weren’t entirely confident the idea would work. Having only been in the wine blogging scene a year, we didn’t know if our readers would be interested in hearing about a wine blogger’s selection of Spanish wine in Canada, or whether a blogger based in the UK enjoyed the unique and diverse wines coming out of Portugal. It was a crap shoot, but indeed, it worked! Why we didn’t continue the idea? I don’t have a clue, but we are now!

We’re bringing back the 2+1 Iberian Wine Survey, and over the next few weeks, you’ll be hearing not only what other bloggers are experiencing with Iberian wine, but also some of the pressing questions they’ve had about Spanish and Portuguese wine mulling around in their heads. Let’s cross our fingers that we can make up a convincing answer kristy labonte

In addition, we’d like to include everyday folk who are simply interested in wine, like you! It is the time of year for lists. It seems everyone has posted their choices of top or bottom notable events for 2007. In my never ending struggle to be different, and characteristically putting myself on the line, I offer no look back. Instead, I proffer these prognostications.

I have shared my thoughts on future advancements. There is the near certain likelihood that we will see ever more control over everything having to do with growing and making wine. The future is about dialing in character. As well I have glimpsed a future where VineBots revolutionize the vineyard. These are things to come in the long run, but what about in the near future? Here then is my list of what 2008 may offer us.

1) The Internet

This is pretty obvious to someone reading these words on the Internet, but there is more to it than you may think. There has been an ongoing battle behind the scenes regarding who can buy wine from where and have it shipped. Some, backed in large part by the Wine Distributors, want to limit these options. They point to underaged drinking and other red herrings to support their platform of fear. They are losing ground.

More and more wine will be sold over the Internet, and 2008 will be a year of critical mass. I don't mean to imply that more wine will be bought on-line than not, rather I am foretelling a huge rush towards selling on-line. Those already well entrenched will see record sales, those late to the game will be rushing to catch up, and new players will take the center stage (I am even thinking of entering the arena).

Look for big changes at the local level. 2008 may well be the year it becomes common to order your wine on-line from your local store, who will then deliver it for free. As with all Internet businesses it is hard to compete on cost, so it is always better to compete on service.

2) Bye Bye Big Fruit Bombs

Watch for the 2008 harvest to be one where people start talking about terroir and character, and get away from the highly alcoholic wines that have dominated the market for the last few years. There has been a huge amount of press decrying the amount of alcohol in wines, and at least some winemakers are likely to react to the changing sentiment.

Europe is even more likely to market their wines to the US as being food friendly, highly individual wines that emphasize where they were produced.

For the record, I love huge alcoholic, intensely fruity... Zinfandels. I don't look for the same traits in my Cabernet Sauvignon.

3) Baby Steps

The wine vine's genome has been unlocked. While the lay press in particular has been writing about the amazing, and somewhat improbable potential of this, I think most of that potential is still a long way off. The human genome was mapped in 2003, and the world has not dramatically changed, yet.

What we will see this year are the first practical applications being announced. Even these will almost certainly still be at the research stage by the end of the year, but news will be made. Look for disease resistance to be a top priority.

4) The Year of the Container.. or at least the closure.

There is a quiet revolution about to hit our shores. Heavy, expensive, and fragile glass bottles will no longer be the only option for wine lovers. Already we have seen alternative packaging popping up for lesser quality wines, but just as with the screw top, a top producer will take the plunge and change the way we look at packaging.

Speaking of screw tops, they are no longer the only game in town. Nifty new players are starting to make inroads. My favorites of these are the glass enclosure. Sterile, easy to remove and even easier to recycle, there is a lot to be said for them.

And speaking of recycling...

5) Green, Greener, and Greenest

I am hardly going out on a limb to point out that environmental concerns are dramatically changing the market. Organic and Biodynamic are going to be big buzzwords this year.

Let me stick my neck out here and just say to watch out for these terms. Taking care of the land and paying attention to sustainability are important. Ignoring the technical advances of the last 100 years and burying cows heads at the full moon are not as important.

If you like the wine, then by all means support their efforts, but don't fall for hype, and certainly don't settle for less out of green guilt.

Carbon footprint is a term you will hear more in 2008, and one of my favorite ways for a winery to do this (besides geothermal cooling/heating , which only I seem to know about) is to start selling their wines in plastic bottles. Plastic is lighter, cost less to ship, uses less fossil fuels to ship, and it doesn't break as easily.

And there you have it. My list may be half as many items as most lists these days, but there is more than enough there for you to ruminate over for the year to come. As always I welcome comments, criticism, and above all, investors that want to back my harebrained schemes.

kristy labonteI don't heart gimmicks (and neither does the Chef), which is why we let the Il Cuore 2000 Rosso Classico (about $11) sit in our cellar for the last year without a second thought.

You see, there's a big heart on the label and a quote to go with it: "A heart can only be held by a heart the fairest setting of the loveliest jewel." Yeck.

The bottle was a present from a friend about the time of our wedding and it came with a disclaimer: "It was a cheapie; I got it for the heart." In other words, appreciate it for the sentiment, not the quality. And we intended to.

In fact, I'm not sure we ever planned to open it, but I'm glad we did. The blend of carignane, zinfandel, grenache, sangiovese and charbono from Mendocino County has an Old World sensibility, plum and cherry fruit, and a well-integrated (13.6 percent) alcohol.

It was a lovely discovery, and I heart surprises.

Tequila. Whether it conjures images of swarthy, ammo-strapped banditos sidled up to the bar in a captive Mexican border town or fantasies of idyllic hours in hammocks on tropical vacations, the word tequila is perhaps the most evocative in the drinker's lexicon.

Tequila's siren song is mysterious and sexy, with a hypnotic off-key recklessness. She lures you in by seducing your mind, secure in the knowledge that your body - and taste buds - will have no choice but to follow.

While this exotic spirit has tempted drinkers around the world for centuries, few of us who make margaritas a staple of summertime understand or appreciate the journey tequila has taken from Mexico's highlands to the local supermarket shelf. It's not all blender drinks and body shots. Tequila has a long and increasingly turbulent history - one that's almost as complex as the spirit itself.

Once Upon A Time In Mexico...

The tale of tequila is at least as long as the history of Europeans in North America. The spirit's precursor, mezcal wine, was produced shortly after the Spaniards arrived in the New World in 1521. Unaccustomed to drinking plain water (which, in their European homeland was rife with bacteria and bugs, and often a one-way ticket to the plague pit), the Conquistadors were eager to create a new alcoholic beverage. They found the makings at hand in pulque, a nutrient-packed brew derived from the fermented sap of agave plants, which had been a staple of the native diet millennia before the arrival of these thirsty men. The Conquistadors set to work distilling pulque into a drink considerably more potent, and in less than a century they were cultivating local agave and turning pulque into mezcal wine for exportation back to the Old World. Fortunately for generations of drinkers that followed, the Conquistadors never did know how to leave an indigenous people's traditions well enough alone; mezcal wine eventually evolved into the treat we now call tequila.

Though the origin of the word itself remains a mystery, it's believed that tequila was named for the small town of Tequila in the Jalisco state of Mexico. The "Father of Tequila," Don Pedro Sanches de Tagle, Marquis of Altamira, saw the potential for this potent liquor and established the first tequila factory in his hacienda in 1600. Over the next hundred years, tequila was used for everything from generating taxes for public works to curing New World illnesses. It became so popular, in fact, that Spain's king began to worry about the competition tequila was causing, and in 1785 banned production of all spirits in Mexico in order to promote the importation of Spanish wines and spirits. Unwilling to give up their livelihood to a monarch an ocean away, makers of mezcal wines simply continued their trade in secret - at times literally baking agave underground - until the ban was lifted when King Ferdinand IV took the throne the following decade.

The tequila manufacturer who remains perhaps the most famous today, Jose Antonio Cuervo, was the first licensed manufacturer in Mexico in 1758. His family's Casa Cuervo proved very profitable, by the mid-19th century boasting fields of over three million agave plants. Cuervo was the first distiller to put tequila in bottles instead of barrels, selling the first in 1906. Though other tequila distillers rose to compete with Cuervo and continue to join the market today (perhaps the most notable being Sauza), pioneer Cuervo remains the world's largest tequila manufacturer.

Improvements in transportation during the 19th century helped take the fruits of Mexican distillers' tequila labor into North America and beyond. As its popularity increased beyond Mexico's borders, tequila also experienced a growing reputation within the country during the revolution of the early 1900s, when the drink became a symbol of national pride. Caught in a nationalistic fervor, Mexicans quickly cast aside imports in favor of home-grown products of all kinds. Before long, tequila became synonymous with hard-living, fearless gunslingers like Pancho Villa - heroes of the era. In America, the Mexican favorite experienced a surge in popularity during Prohibition, when thirsty drinkers were tempted by tequila smuggled across the border, and again during WWII, when hostilities made European imports scarce.

Legend has it that the drink tequila made famous, the margarita, was first mixed in Mexico or a nearby state sometime between 1930 and 1955. The cocktail made its way into gringo hands, and no lime or Mexican flag on a toothpick has been safe since.

Don't Call It Cactus

Though often confused, mezcal and tequila are not one and the same. Both are distilled from the agave plant, a succulent from the same family as the lily and the amaryllis, but only liquors made from the blue agave are called tequila. Contrary to popular belief, agave is not a cactus. Though agave shares a common habitat with many prickly cacti neighbors, it has a different life cycle, and there are 136 Mexican species in its own unique agave family.

The process of creating tequila begins when the blue agave plant ripens, usually eight to 12 years after planting. Because the plant must be ripe enough to have sufficient sugars for fermentation, a jimador first performs the crucial task of chopping leaves away from the plant's core to assess its ripeness. If the plant is deemed ready, the core - or piña - is cut away and taken to a distillery for roasting in furnaces called hornos. After roasting, the piñas are shredded, and the juices pressed out and placed in vats or fermenting tanks. Once in the vats, yeast is added to the juices to convert the sugars of the agave to alcohol. These agents are so vital to the process and to creating unique tastes in tequila that distillers keep very tight-lipped about their individual yeasts. The resulting juices then ferment 30 to 48 hours before undergoing distillation twice. The outcome is a rich, potent, colorless liquid between 70 and 110 proof. The color comes later, brought on by wooden barrel aging, or from the addition of caramel or wood essence. In the final step of processing, most tequila is filtered through cellulose filters or activated carbon before bottling.

Protecting a National Treasure

Mexicans are understandably proud and protective of their national alcoholic spirit, and between World Wars I and II, the Mexican government began efforts to closely monitor production and distribution of tequila. In 1944, the government decreed that any product called tequila had to be made by distilling agave in the state of Jalisco. Today, there are only five regions where tequila can be legally made; most are in the semi-arid plateaus and highlands of Jalisco and the adjoining states of Guanajuato, Michoacan and Nayarit, and the northeastern state of Tamaulipas.

To help guarantee the quality of tequila, in 1978 the Normas Oficial Mexicana (NOM) was established, regulating all agricultural, industrial and commercial processes related to the spirit. Since then, the industry has continued to grow, with more than 50,000 hectares of agave under cultivation and more than 500 brands of tequila available today. To help control the burgeoning industry, the Tequila Regulatory Council (TRC) was founded in 1994 to oversee industry production, quality and standards.

The fundamental standard set by these oversight agencies categorizes tequila based on the percentage of blue agave juice it contains. Tequila 100 percent Agave must be made with solely blue agave juices and bottled in Mexico. Tequila or "ordinary tequila" must be made with at least 51 percent blue agave juices and may be exported in bulk for bottling in other countries according to the NOM standard.

Which tequilas are "best" is primarily a matter of individual taste. With increasing manufacturers pumping cash into spiffy packaging, sexy bottles and glossy ads, a more expensive tequila doesn't necessarily mean a better product. There are numerous quality tequilas available for $20-$50 USD. Most brands available for under $20 are usually mixto (not 100 percent agave) and are mass-produced for local markets. A good and tasty way to find a favorite is to sample a wide variety of brands in the different styles: Blanco for its young, rough edge and rich agave flavor; Reposado, which is sharp and peppery; and the woody, smooth Anejo. Trying to settle on a personal favorite is a good excuse to work one's way across the tequila shelf at the local bar, one bottle at a time.

Tequila's Uncertain Future

While tequila has a good-time reputation as the key ingredient of backyard fiestas and frat parties, there's a dark side to this South-of-the-Border libation. The popularity of Mexico's national treasure has, in some ways, caused tequila more harm than good. Growing demand has led to discontent among agave farmers who, in 1996, organized a protest against exploitation by some producers. Their blockade ultimately cost the industry millions, and the loss was passed on to consumers via price increases.

Another blow struck the tequila industry in 1997, when producer Don Jesus Lopez Roman was killed in a gangland-style execution outside his factory. Roman, whose Tequila San Matias distillery was founded in 1884, had become unpopular after taking a vocal stance in support of bottling all tequilas in Mexico and banning bulk exports to ensure content and quality. His murder remains unsolved.

If labor disputes and murder aren't enough, a recent plague of pests, diseases and impending shortage of agave has led to potential crisis. Faced with spiraling agave costs, several distillers have discontinued their low-end brands to concentrate on their premium, higher-priced tequilas. The buzz among bartenders is that as availability of blue agave declines, the price of tequila will rise and quality may not go along for the ride.

But those who love tequila for its unique, sultry taste and colorful history won't be dissuaded by these natural and man-made dramas. As the Conquistadors discovered, once you've been captivated by this ancient spirit, there's no turning back from tequila.


RECIPES

True aficionados say the only way to enjoy tequila is straight up, but these tasty recipes are definitely worth a shot.

Blue Agave Mist

Twist of lime
Crushed ice
1 1/2 to 2 oz. anejo tequila

Rim old-fashion glass with lime twist, and fill with crushed ice. Add tequila and lime twist.

Aztec Sky

3/4 oz. gold tequila
3/4 oz. Blue Curaçao

Serve as a shot.

Mexicali Rose

1 oz. blanco tequila
4 oz. cranberry juice cocktail
1/2 oz. lime juice

Shake and strain. Garnish with lime wheel.

Alice in Wonderland

1/2 oz. tequila
1/2 oz. Grand Marnier
1/2 oz. Tia Maria

Serve as a shot.

Beergarita

1 1/2 oz. tequila
1/2 oz. triple sec
1 oz. lemon juice
9 oz. cold beer
Splash of lime
Salt

Rub rim of beer mug with lime juice, and dip in salt. Shake all ingredients with ice, then strain into salt-rimmed mug. Fill with beer and serve.

Apollo

1 1/2 oz. tequila
1 oz. Galliano
1 oz. Blue Curaçao
Cream

Shake tequila, Galliano and Curaçao with ice, and strain into cocktail glass. Float cream on top.


How to Drink Tequila

  • Leave lime-and-salt shooters to the chain restaurant happy hour and sip tequila slowly. This is a rich, complex liquor that deserves full sensory attention.
  • Serve tequila at room temperature (though those who like it icy can keep a bottle in the freezer).
  • Enjoy Tequila Blanco and Reposado from a traditional "caballito" glass; sniff the aromatic Anejo from a snifter.
  • Serve up Blanco and Reposado with a "sangrita" made of tomato and orange juice with salt and chili.
  • When drinking tequila on the town, ask your server to bring the bottle and pour it in your presence to be sure you get the gusto you deserve (and the brand you actually ordered).
  • What About That Worm?

    Everyone's heard tales of folks who ate the worm in a bottle of tequila and were rendered temporarily able to glimpse into a parallel universe. Truth is, tequila worms and their supposed visionary properties are the stuff of Hollywood movies and high school urban legends. One will never see a worm in Mexican-bottled tequila, though some U.S. bottlers toss in a critter for novelty.

    If you're really hankering for a worm with your booze, it's possible to find some types of mezcal that include a gusano or "butterfly caterpillar" in the bottle.     Running with our retro theme, I?d like to share some highlights from our nine-plus years of publishing. Some names have been omitted due to legal issues; some kept due to stupidity issues. Strap yourself in, baby. Here we go...

    Best Endorsement: Coming in a close second to Ron Loutherback?s endorsement (see The Insider, page 40 in this issue) is an endorsement by Wine Spectator. We learned in 1999 that they (mainly their publisher) call us ?The Dark Side.? Not quite sure why. You?d think they?d figure out that the more young adults we turn on to wine now, the more subscribers they?ll have in about 10 years. But then again, it?s Wine Spectator.

    Best Brokest Moment: In 2000, Random House published our first edition of the Wine X-Rated Guide to Wine. They were flying me to LA for the Festival of Books at UCLA to have me speak on a panel with other wine/food authors. Sounded great. ?Cept I had absolutely no money. I mean NO money. Nothing. Zip. Zero. Nada. And I had no one to sponge off. Luckily I had gas in my car, so all I really needed was $6 to pay for airport parking (when I returned). So here was my plan: I had some foreign currency (from press trips abroad). I figured I?d fly down to LA, do the festival, then get dropped back at LAX early so I could go to the International terminal to cash in the currency. These best-laid plans were going great until I found the foreign-currency exchange booth. Closed. After running through the terminal in near panic, I found another that was open. I cashed in my currency and made it back home with a whopping $11.52 in my pocket.

    Best Catch-22: After a year of dogged persistence, former Wine X ad sales director Dan Eliason and I finally snagged a meeting with a brand manager for a big Italian wine company. For an hour we did the ol? dog and pony show, covering all the details on why the brand (which retailed for $11) would appeal to our readers. Their response? ?We don?t think your readers will spend $11 on a bottle of wine.? I could tell (from so many other meetings with middle-aged brand managers who think young adults don?t have any money) that arguing with them was futile. So I said we?d forward the results of our recent reader survey, which included the average price our readers were paying per bottle. Upon receiving this information, which indicated our readers were spending about $16.50 retail for a bottle, we received an email back saying that if our readers are spending that much on wine, they?d never buy an $11 bottle. D?Oh!

    Best Cover: To this day, despite all the great celebs we?ve had grace our cover, I think the best cover we?ve ever published is the first. Not because it shocked so many old farts in the industry (which it did). And not because the design of the cover alone cost me more than the design of the following 63 pages (which it did). I think it?s the best cover we?ve done because it did exactly what it was supposed to do: it alienated the ?old guard? (as intended); it attracted young adults to a magazine about wine (as intended); it paved the way for a new era of wine magazine appealing to the other 35 million U.S. wine consumers who weren?t reading Wine Spectator or Robert Parker. If you have a copy of our first issue, Vol. 2.1, hold on to it. Trust me. It?s worth more than the paper it?s printed on. Wanna see the intricate detail that our then-cover designer Glen Martinez achieved on that first cover? Look at the button on the jeans. (No, Wine X wasn?t making jeans at that time.) Or examine the tattoo. One by one Glen painstakingly placed each hair that seemingly comes through the tattoo ink. Yes, the tattoo was Photoshopped in. But the belly ring was real.

    We have the habit of dropping into our local discount grocery outlet and going through all of the many marked down wines they carry. We buy 6 plus various varietals and brands at a time and put them out at our weekly family gathering for all to try. We have all been very impressed with Santino 'old vine' Zin. I went back and bought all the bottles they had left! Happy to find your site.

    I'd originally written this for Lenn, but we didn't use it and I'm dry on material... read it and weep

    Cabernet Sauvignon is for wimps.

    Yep, you read right. Wimps, I tell ya. You want a dash of crème de cassis? Mathilde makes a pretty one for kir royales. Bursts of blackberry? Pass the Polaner All-Fruit. Chocolate and coffee notes? Starbuck?s can whip you up a mean frappucino. But please, don?t put it in my wine.

    I admit, I?m being cranky. And I know it?s partially because I have a pile of dishes in my sink crying out for help as I try to type. But it?s also because I?m trying to make a point: while Cabernet Sauvignon can indeed produce beautiful wines, it?s often made into over-ripe fruit bombs smothered in vanilla-toasted oak.

    I know what you?re thinking. Clearly, this woman has never tasted Silver Oak. Or Chateau Mouton-Rothschild. Or etc. etc. etc. I admit, Cab Sauvs can be made into some pretty smoking wines, but can you afford those? Nah, neither can I. The gloriously rated Howell Mountain Cabs are about as far from my price range as possible. As are top growth Bordeaux. Where does that leave me?

    Cabernet Franc.

    Granted, the two grapes are very different. Cab Sauvignon is all about tannins, dark fruit and leathery aromas. Cab Francs, while also firmly tannic, are lighter, earthier, and display much more herbal aromas. But for me, it?s one of the most wonderfully versatile grapes under vine, producing a plethora of styles, most of which are both food-friendly and age-worthy.

    Cabernet Franc, as you know, is one of the grapes used in the classic Bordeaux blend. Along with the more famous Cabernet Sauvignon and Merlot, Bordeaux can also include Cabernet Franc, Malbec, and Petit Verdot. Percentages of Cabernet Franc vary from chateau to chateau, but its typically used more on the right bank in St-Emilion and Pomerol to add tannic structure to Merlot?s juicy roundness.

    But Bordeaux is certainly not where Cabernet Franc gained notoriety. That exhalted region is none other than the Loire Valley in France. The Loire is an interesting area that?s largely held on to traditional winemaking methods and indigenous grape varieties, including Muscadet, Pineau d?Aunis, and Cot (the local name for Malbec), among others. The AOCs (Appellation d?Origine Controlle) of Chinon, Bourgeuil, and St-Nicolas-de-Bourgeuil produce reds from Cabernet Franc. The wines tend to be leaner and more acidic than Bordeaux , ranging from the chalk-textured Bourgeuil to the richer Chinon to the juicy St-Nicolas-de-Bourgeuil. While lackluster winemaking can certainly produce bland wines, the true artists of the Loire have been known to craft earthy wines, loaded with mulberry, sage, and minerality that can age for 15 years or more.

    Cabernet Franc, however, was largely overlooked in the United States until recently. Some experimental winemakers out in California have been producing Cab Francs that are big, bold, and brawny ? which is just fine, but not particularly true to the nature of the grape. Happily for us, Cab Franc seems to prefer the climate of New York State, and in particular, that of Long Island.

    It turns out the maritime climate of Long Island is perfect for many of the Bordeaux grapes ? they dig the summer heat moderated by the surrounding water. Long Island is also cool enough in the winter to allow an appropriate dormant phase without great risk of extended freezes. The Finger Lakes have long struggled with red grapes for lack of sufficient sunlight to ripen, but Long Island has the best of all climactic combinations. And judging from a recent tasting, Long Island winemakers are producing Cab Francs in the all of its glory ? from light and juicy to tannic and mineral-laden.

    Raphael and Jamesport both produce what are perhaps the most approachable Cab Francs. Lighter and juicier in style, these wines can both be served slightly chilled as delicious, thirst-quenching sippers. This is not to say that they?re not dinner-wines; indeed, serve them at room temperature paired with rosemary-roasted chicken and asparagus and they?ll certainly blossom.

    Castello di Borghese has created a more new world Cabernet Franc that?s full on the palate with sweet cherry fruit and smooth tannins ? it?s a softer, rounder version of the grape that will appeal to dyed-in-the-wool Merlot fans. In a somewhat similar style, Vineyard 48 has certainly gone new world by oak-ageing the wines to impart toasty cinnamon nuances. It?s smooth, round, and creamy, loaded with blackberry and black cherry fruit. Pair either with a hearty beef stew for a midwinter treat.

    Schneider produces the most classically-styled Cabernet Francs. If I were to taste their ?Le Breton? blind, I think I?d pick it out as a ripe Bourgeuil. The chalky nose offers plum, sweet red peppers, thyme, and rosemary, with a linear palate of blackberry that expands beyond the stoniness to a smooth, round finish of plumy licorice. Schneider?s ?Roanoke Point? is a bit more elegant, with toasty sandlewood aromas interlaced with rosewater and pluots. The blackberry fruit on the palate is enhanced by notes of roses, herbs, prunes, and roasted peppers. These are both Cabernet Francs for Cab Franc lovers. And a pairing? Why, Long Island duckling, of course!

    Ok, now, I?m not saying that after trying Cabernet Franc, you?ll completely abandon Cabernet Sauvignon. But let it swish around your mouth for a while. Taste the lovely herbal notes and the layers of stone and fruit and try to convince me that it?s not an underappreciated grape.
