| [04/23/2008, 17:57] | Dobermans, wine characteristics, and a new staff member |  | Recently Tom Wark posted a piece on Fermentation titled On Dogs, Wine & God that compares wine characteristics to the traits that are bred into dogs. Quoting one of his commenters, wine blogger Arthur Z Przebinda of Redwinebuzz, Tom says: "What makes a Doberman a classic example of the breed? The way it best displays the traits and characteristics that define the breed," then goes on to point out that over time dog breeders have bred out or in certain characteristics based on evolving breed standards, that the same thing has happened with wine, and that's perfectly OK.
The Doberman is a perfect example, since the Dobes of today are bred to be companions more than the protector that German tax collector Louis Dobermann created in the late 1800s. Today's Dobes are bred to retain all the qualities Herr Dobermann was after ? intelligence, power, speed, and ease of mainenance ? but with a more tractable temperament suitable for a family dog. Similarly, some wines that were previously unapproachable or challenging have been changed so that they can be enjoyed by a larger segment of the population. In each case, there are curmudgeonly traditionalists and those who embrace the new style, and their viewpoints are equally valid.
This seems like a good way to segue into an introduction to our newest staff member here at WineCanine, a 10-month-old Doberman named Hobbes. Hobbes came to us through Southwestern Ohio Doberman Rescue, which had him in a foster home in Louisville, Kentucky. Hobbes was named Sirius by SWODR and apparently had been called Buster at one time, judging by the name on the leash that he came with. We had originally gone down to meet a red Dobe named Calvin, who, with his long tail and natural ears, looked quite a bit like our Red, who passed on in late March. Calvin was nice, but this young, fawn-colored fella turned out to be a Weim lover. So, we went down to look at Calvin, but ended up with Hobbes.

It’s been one of those weeks that leaves you wondering why you even bother going to bed, since you’ll be up at back at work the minute you wake up again. Recently, my days have started to feel drawn out and full of ups and downs, and to be honest, I really didn’t want to participate in this month’s Wine Blog Wednesday even though the theme, Old World Reisling, is something I truly adore. I just don’t have the energy, but then I decided to change my attitude to become a little more relaxed and calm. The reason I love Old World Reisling is for one simple reason, or rather one particular man, Terry Theise. If you’re not familiar with his name, please stop reading and go to his page at Skurnik Wines. Download all of his wine catalogs and start reading veraciously. I can wait. In fact, if you don’t make it back here, I excuse you, because these catalogs are too good to be true. To be honest, I’m not much of a writer, nor am I much of a reader. And because I love them both, we call this a conundrum. I write here, and I read there, and I sometimes find myself feeling a little empty. Maybe it’s the content, the subjects or both. I’m not really sure, but when I went looking for information on one of my Reislings today, I found Terry. Mind you, if it weren’t for this man, I wouldn’t be appreciating these bottles of wine right now. It would be equivalent to using the 100 point system and not knowing who Robert Parker is. So, I quickly downloaded his catalog where I thought I might find reference to my German Reisling, but suddenly, I was lost. Lost in his words, wit and wisdom. Terry’s catalogs, whether you like wine or not, are a must read for his frankness, honesty, word play, and humor. If you don’t love German Reisling, well, you may change your mind when you read Terry’s words. To start his report, he always places his manifesto at the top, before you get to the meat of the report. Theise Mannifesto - Beauty is more important than impact.

prettiness. - Soul is more important than any thing, and soul is expressed as
a trinity of family, soil and artisanality. This is a manifesto that I can get behind! Drinking Iberian wine everyday, I often forget how much I love the world of wine and not anyone region. These words are timeless, and in my opinion, great advice for anyone just getting into wine. Live by these words and you can’t go wrong. But this post is not about Terry Theise, but rather Old World Reisling. Today, we have 2 wines in front of us, one from the heralded 2003 vintage in Germany, an Auslese from one of the premier wine makers in Terry’s collection. I bought this wine as a future at a tasting in Minneapolis back when I still sold wine. A guided tasting with one of the sharpest palates I’ve ever been with, Terry showed us that despite “Crazy-ass heat” one could still make a Reisling full of nuance and character. In truth, I can’t tell you why I bought this one versus the many others that were in my price range at the time. I was relatively new to German wines, and excited to explore a region that seems totally frightening when you look at the complicated labels. But on this particular night, I learned that I had to at least try and dig through the odd characters, strange accents, and unpronounceable names to get at the heart of these treats. And consequently, I fell in love.  Today I sit in a Reisling wasteland. I’ve tried Reisling from around Spain, and I believe that I’ve even had a Portuguese Reisling once. But I wouldn’t recommend them. Nonetheless, I’m here to taste, so you don’t have to. Therefore, to balance the pie a bit, I’m also about to open a 2007 dry Reisling from down the road, a Penedes treat that has never offended me, though that is not much of an endorsement either. From the moment I open the Sumarroca 2007 from the Penedes, I’m instantly happy and sad. Happy that it’s still fresh and lively. Sad, because there is not much to it. Reisling, I’m afraid, is not meant for Iberia. It loses its soul. The land of the Toro, and the feisty Spanish persona, is not a home for something with a delicate nature. Spain is land of bold wines with bright flavors and complex traits, and for me, I want something more subtle when I drink Reisling. The Sumarroca is easy to drink, simple and a great example of muscat, or a simple summer white blend. From their site (annoying flash, don’t bother visiting it): Entirely produced from grapes grown in the Sumarroca Estate, only the best 50% from the first juice (free-run) of these carefully selected Muscat varieties has been used for this wine. Fermentation took place during 3 weeks under strict temperature control at 15º C in stainless steel tanks. It has been gently filtered and stabilized at a low temperature before bottling. Reisling was never meant to be 100% dry, or at least not very often. Alsace is an exception, however, and the sugar makes a big difference. Now I know that some of you are saying, “I don’t like sweet wines”! To you, I say, “give me a break”! Put down your dry Coca-Cola and listen. Sweet is good. Sweet is nice. And just like in dry wines, if the wine is NOT balanced, than it will taste bad. Mogan David tastes horrid, because it’s like drinking syrup! Good Reisling doesn’t have this problem, due to its high acidity. I’ve served very sweet Reislings to friends who have quickly responded, “what a nice dry wine this is”. 50 grams of sugar dry! The acidity balanced the wine, whereby keeping your tongue from becoming a syrup slick. Ok rant done…Now on to what has made my afternoon pleasant. Joh.Jos. Christoffel, 2003 ÜRZIGER WÜRZGARTEN Auslese***, that’s a mouthfull! Let me preface the next few lines with this, I love Spanish and Portuguese wine, but I needed this. This is a pure stroke of bright light through my Tempranillo stained tongue. New flavors, aromas and textures, dance though my mind, and I feel handicapped describing the wine before me. Because I am so tied up in Iberia, I almost forgot why I loved wine, diversity. In my glass sits some of the most gorgeous honey flavors with minerals, petrol, fruits and flowers, exotic and rare. Here are Terry’s own notes from his report on this wine. 2003 Ürziger Würzgarten Reisling Auslese*** ++ “This is always from the same parcel, and it cannot produce more than forty hectoliters per hectare,” says Hans-Leo. “We’ve had at least Spätlese from this site in every vintage except 1991. I could make these wines heavier, but it goes against my philosophies. The day I can’t make wines like these any more is the day I’ll pack it in.” It’s down below, to the right of the sundial, in case you want to locate it. This 2003 has the extra note, the Grand Cru flavor, now glazed with the finest botrytis maltiness. As always what amazes here is the density and delicacy, and here, in 2003, the siren-song of minerality. SOS: 3 (between ten and thirty years) I’m glad I wrote this!! I’m glad I opened this treasure before it’s time (I wanted to wait 5 more years), and I’m glad I still have 2/3’s of a bottle left for dinner tonight. Although, I’m not sure I want to drink this with the meal. It is perfect for some many dishes, as its balance would complement more treats than you might expect. But no, I think I’ll grab the bottle, sit up on my roof, watch the sun set over Montserrat, and let my mind drift. That’s what wine is for. Thanks Terry! Cheers, Ryan Opaz Ryan 2003 Joh. Jos. Christoffel Erben Ürziger Würzgarten Reisling Auslese *** - Germany, Mosel Saar Ruwer (5/7/2008) Still showing a bit of spritz on this lightly golden wine. The nose though is mature, with deep honey tones, light petrol notes, hidden nuts and fruits. Really a complex nose that I think will develop nicely into the night. In the mouth though this is a lush treat. with a racy acidity, that cuts though a high buy non-cloying sweetness. Incredible…really fun to taste as complex flavors seem to develop in my mouth, and shift from one flavor to another. Think of flesh fruits, on a bed a gravel with a floral honey lightly drizzled over the top. Light mustiness like darkened honey comb, lingers around the edges of my mouth as I revel at this wines elegance and beauty. Perfect balance. 5/5 Gabriella 2003 Joh. Jos. Christoffel Erben Ürziger Würzgarten Reisling Auslese *** - Germany, Mosel Saar Ruwer (5/7/2008) Light golden yellow in color with tiny bubbles that lay dormant, only occasionally springing to the surface of the wine. On the nose, the wine shows its age and maturity with rich honey, cooked peaches, ripe pear and a touch of petro right on the end. The bouquet is reserved, graceful and classy. In the mouth the wine has a beautiful spritz, alive with acidity, zest and life, perfectly balancing the sugar. Incredibly rich and round mouthfeel that covers the entire palate before it gently slides off leaving a lovely yellow floral and honey flavor. I’ve had some lovely whites in my lifetime, but this is incredible. Perfectly integrated, well balanced and overall, an unbelievably good wine! 5/5 Ryan 2007 Sumarroca Reisling Penedès - Spain, Catalunya, Penedès (5/7/2008) Light golden in color this wine has a nice simple nose of white flowers, melon, and honey. Really clean and straight forward, while in the mouth a medium acidity balances this fully dry wine, whose fruit is one again simple and straight forward. Nectarine, minerals, and honey notes mingle in and out. Not bad for a summer sipper, though not inspiring either. 3/5 Gabriella 2007 Sumarroca Reisling Penedès - Spain, Catalunya, Penedès (5/7/2008) Light golden in color with a slightly green tinge, showing a lovely and expressive white floral bouquet, bolstered by aromas of white peaches, honey, lychee and a slight barnyard aromas. In the mouth, the wine is slightly off balanced, as the racy acidity shows shows a tartness that is quite frankly, a little unpleasant. Full and round in the mouth with a medium body and a nice gentle finish. Candy mandarin and honey on palate, with hints of orange peach and gravel. Paired with a fresh pasta salad with garden picked cherry tomatoes, however, I think this would be a nice wine. 3.5/5 Share This  |  |  |  |
| [05/14/2008, 08:01] | Interview with the Ancients |  | I took a walk in a quiet place. In it, there were many souls from ancient times. They were from Greece and Italy, Sumeria and Egypt, Persia and Etruria. The voices were silent but the souls were coming through loud and clear, on a Friday afternoon on the eastern edge of Central Park.
I had just interviewed a gentleman about his life, his book and things Italian. But we didn?t quite make a connection. How could you do anything in 15 minutes, except perhaps to size each other up like two bulls in a ring? Not that it was that kind of encounter. I left feeling the need to reconnect with my roots, so I hopped on a subway and headed back a couple of thousand years, to interview the ancient ones.
Q. What were the wines like when you were living?
A. They were dark and musky, and warm. They tasted a little like sour water sometimes and at other times sweet like rose petals.
Q. Who made the wine in your community?
A. We had families who passed the trade down from generation to generation. There were families, like in Chaldea, who had been working with the grape for hundreds of years.
Q. Who among you were the first to taste wine?
The fellow in profile speaks
A. When we first tasted it, it came about by accident. One of the servants had left a vase of grapes lying around in a cool dark place and forgot about it. Several weeks later one of the porters was walking around and smelled this sweet odor. He had it brought up to the dining area and we all took bites out of this fruit we knew, but it tasted very different this time. And the juice in the bottom of the vase we all took sips of. This was something we had never experienced before. So we instructed the porters to pick more grapes and let them sit in the basement in the same manner. That was the first time we had seen it.
 Q. How did the news of this travel?
A. Slowly at first, but after 400-500 years pretty much everybody in the known world had an idea of the transformative powers of the grape.
Q. And the merchants, how did they fit in?
A. At first, it was seen as a religious ritual, so the merchants stayed away. A tribe of women eventually wound their way through the empire, setting up trade with the Egyptians.
 Q. Many times we hear that the Greeks brought wine culture to Italy. Who knows about that in this room?
An Etruscan princess answers
A. We had already started with the grape before the Greeks arrived. We had been going on for several hundred years. What the Greeks did was to bring some new grape types with them, but not superior to the ones we had been cultivating for 500 years.
Q. It seems Ancient Romans loved wine. Poems were written about it, buildings and temples were erected in honor of the god of the grapes.
A. That all is true, but keep in mind we had very little to eat and drink. We were often sick and food went bad quickly. Wine kept, and it kept us well and our bellies full. And it made us happy.
 Q. Did the grape have anything to do with the expansion of the Empire(s)?
A. Other than it went where man went? Of course when we conquered Gaul or the Huns or the Britons, we would plant vines and keep the local people collected and subdued. Wine had a part to play in the civilizing factor of the wild tribes.
Q. Last Question. If you were around today, what kind of wine would you like to see? What would you make?
An older Roman answers
A. Listen, I would round up some of my soldiers and head to Toscanium and set that land straight. I?d bring them back to the Jovian roots and light a bloody fire under their feet. And by all the power of Jupiter, we?d bring them back to the flame of truth and all that is holy about the miracle the gods have sent down from the heavens in giving us grape with which to make this precious wine. Anyone caught disrespecting the gift of the gods would be crucified and struck down, their family sent into exile. To go against the Divine Immortals is the worst sin one could commit against the pantheon that rules our ancient souls.

| [09/29/2007, 03:01] | September 29 - Beaucastel Part.2 |  | A visit to Beaucastel isn't complete without trying some so off to the tasting room....
2006 - Beaucastel Blanc. The Roussane grape is dominant with 80% (small percentage of 60 year old vines) and another 20% comprised of Grenache Blanc (10-40 year old vines). Honey, flowers, good acidity and a minerality. Good to serve on the cool side i.e. 10-12 centrigrade.
2006 - Beaucastal Blanc Vielle Vignes Again made of Roussane but this time 100% pure and straight up. The vines are old (I'm told 78 years). Production is absolutely miniscule at 6000 bottles per annum ( sorry now 5999 for '06). With the Roussane variety I am told you either drink it within 5 years of the vintage of 10 years later. The 5-10 year period is supposed to be a funky phase where the wine shouts down and appears oxidised. Strangely enough I have not it during this phase but have had ones over 10 years - you will be nicely surprised. The RVV belies it's age in comparison to Beaucastel Blanc - you can tell the age of the vines in the wine! If the regular version is a child then the RVV is a middle-age adult - more complex, more depth, more layers, more of everything. If you do have both and then go back to the regular version - you will find it lacking and "shallow". I would not be afraid to serve this warmer than the regular Beaucastel Blanc say 13-15 degrees.
2005 Beaucastel Comprised of 13 grape varieties. The various grapes bring their unique characteristics to the table and balance one another out. Mourvedre for it's tannic structure and ageing potential, Grenache for the warmth and texture as well as others. The CdP true to its roots. Given the various varieties and their maturation profiles that each variety would come forward at different times during the ageing process. You can try one young (i.e. within 5 years) but it won't reach a sense of harmony without 10 years of age - this is my own personal view of course. Right now too young but good raw materials should be fantastic.
1998 Beaucastel Here we are starting to get serious. IMHO still not quite there in terms of harmony but getting there and should do it within 5 years? Depth, breadth, fantastic stuff.
1986 Beaucastel IMHO has reached the stage of harmony. Leather, animal, dried fruits it's all there. Not a stellar vintage but drinking well and probably at it's peak.
* Note with food - Try something hearty almost rustic. The typical cuisine is Provencal - so olive oils, thyme, basil, tomatoes. Perhaps even Tuscan food may work ....?

| [11/15/2006, 12:53] | Don't blame it on the cork |  | Many people would be able to identify a bottle of wine that was truly faulty and, in a restaurant, ask for a replacement. But would you be able to tell what the fault was or what to blame for it? It is all to do with perception threshold. Different faults require different parts per thousand or even million to be perceived.
Some people are more sensitive to certain faults than others so while the host, who may taste the wine as it is brought to the table, is happily quaffing, one or more guests could be secretively retching into their napkins. Depending on how well you know your host and judging, diplomatically, how much of an ego dent your comments could produce, it might be worth discreetly asking people to have another careful sniff. At a wine faults workshop this week, it was made clear that a fault is only a fault if the people drinking the wine consider it to be. For example the "fault" brett - produced from brettanomyces yeast acting on the phenolic acids of the grape - is a characteristic that some tasters love and some winemakers deliberately introduce. It can produce strong animal characteristics that enhance a wine's complexity and increases some people's pleasure. Of course it is very important to get the balance right because the smallest increase tips a wine over from animal (yum) to bretty (yuck). And even in the lower doses some people adore the fragrant pong while others will recoil in horror at the filthy stench. Perception is all. Then there is actual corkiness. Produced by TCA, TBA and TeCA it has various origins like the high levels of chlorine used to clean the winery and equipment, the breakdown of other cleaning agents by funghi in the winery - low ventilation and high humidity contibuting to high levels in the atmosphere. The cork industry is keen to point out that it is not something inherently present in the corks more of a contamination at the winery. The plastic in alternative closure linings etc are equally susceptible to this contamination. With increased awareness, far higher standards of hygiene than ever before and alternative cleaning solutions available the problem should be getting better. However despite some high profile cases in California back in 2004, there are still many wineries taking the easy option and continuing bad practices. At the other end is a sulfide problem that produces a tomato, truffle, cabbage, rubber character. This is reduction, the opposite of oxidation and the result of a complete seal which prevents any movement of oxygen into the wine. Unlike oxidation though, this can be corrected sometimes as simply as swirling the wine in the glass or decanting the bottle thereby allowing some air contact and dissipating the bad aromas. This problem has been most associated with screwcaps which provide such an affective seal that all the positive benefits of cork permeability have been lost alongside the problems that can occur for freshness through excessive permeability. New Zealand wineries have famously chosen to address this by slightly oxidising the wine before bottling in order to achieve balance once the wine is in bottle. As is often the case with the New World, they are quick to respond to problems and criticism. However this is a dangerous and nervy solution and not always successful. Pascal Chatonnet, leading faults scientist, oenologist and consultant to wineries all over the world, argues that some of the essential character and originality is lost through this process and the overall quality and elegance is compromised, though this is not necessarily understood by the consumer as the original wine is not available to compare. What is important to the cork industry is that while a consumer might recognise the wine is faulty, the only real language employed to describe or attribute the fault invokes cork. This is of major concern and is where the charm offensive needs to conentrate, for cork may not have played any part whatsoever. For consumers the challenge to the industry as a whole is to find a closure with the correct level of permeability and which is kept free of contamination. It is in everybody's interests and with a more frank discussion opening up we can only hope that solutions won't be too far away. |  |  |  |

A couple of weeks ago, I got slammed on the ropes for a comment I made about a post on Vinography. The winos over there are apparently pretty fond of their New World wines because, when I suggested that Old World wines might be suffering in the global marketplace because of what is simply an archaic (or nonexistent?) approach to marketing, damn. You'd have thought I said something about their mother.
"Absurd!" they said. "Wine that tastes like fruit, not boxes of cigars and pencil lead, appeals to US consumers," they proclaimed.
Hmmm.
I'm a U.S. consumer, and I'm a pretty even-handed gal. I like New World wines; I like Old World wines. I was trying to make a point about what I considered to be the glaring difference in the marketplace. I was trying to make that point independent of taste, because I tend to believe there's a place out there for both styles of wine.
But then I started to think about it, and I've decided, even-handed is for wusses.
I'm picking sides, and do you know why? It's not about technical quality. There are New World and Old World wines of technical brilliance. It's not about image. Image is surface; popularity comes and goes.
No, this is a matter of taste, and I'm coming down on the side of the Old World.
This is my battle cry for wines that taste like cigar boxes and dirt, seashells and truffles; for wines that taste like a location; for being able to tell the difference between chadonnays made 30 miles apart; for a wine that has structure without having an alcohol content of 15 percent; for a wine that isn't obvious; for a wine that doesn't cater to a soda-pop palate; for a wine that actually pairs well with food; for a wine that goes for elegance over brawn; for a wine that doesn't give it up on the first date - one that I've got to work for, one that tastes better the next day, one that could sit on the shelf and evolve for a couple of years, one with a little mystery.

OK, so this weekly feature hasn't been so weekly lately. Frankly, I haven't been all that snappy with the posts, either.
Like any passion (cross-stitch, anyone?), wine has a habit of getting lost in the shuffle when the stampede of daily life comes barreling through. We've been painting our office, landscaping, working, entertaining. It's a tough job, but someone's got to do it.
But how do you pick up with your passion once you find the time again?
How do you get inspired? How do you find the energy?
If wine is your cup of tea, er, juice, you go to the store. That's right, when the going gets tough, the tough go shopping. Even if you have a cellar full of drinkable bottles, shelf browsing can be quality time. There's nothing like a few hundred brand new, shiny bottles lined up like soldiers to remind you that there's a world of wine out there - and that what you've tasted wouldn't fill a bucket.
Something to try at every turn. Single-varietal gamay, beerenauslese, pinot blanc from Sonoma, muscat, ripasso, Douro, Kongsgaard, vernaccia.

| [05/05/2008, 18:10] | The Other Montepulciano from Le Marche |  | There are two Montepulcianos in Italy: one is an appellation, the other is a grape. Today, I'm reviewing a wine from Le Marche that's made with that other, grapey Montepulciano. It is a delicious and affordable wine that would be perfect with any traditional Italian trattoria fare from grilled meats to pizza and pasta.
The 2005 Fattoria Laila Rosso was a very good QPR blend of Montepulciano (80%) and a bit of Sangiovese ($12.95, Chronicle Wine Cellar; find it online for between $13 and $17) Montepulciano grapes carry a lot of pigment in their skin and that gives the wine a dark, blackish-purple color that is rich and cooling. Blackberry and black cherry fruit aromas are clearly present when you uncork this wine and give it a sniff. There's more dark berry and cherry in the flavors, too, along with a bit of roasted coffee bean. The overall impression is not of enormous fruitiness, but fruit kept in check with bitter notes and acidity and a bit of spiciness in the aftertaste. It was a food-friendly wine, and we had it with some spicy chicken in red sauce with penne. Bits of chicken breast are tossed with ground fennel, pepper, and coriander and then sauteed in a pan until golden. After a quick deglaze with some leftover white wine, you simmer lots of garlic and tomatoes until the pasta is cooked, and finish it off with some basil. The wine stood up nicely to the sweet acidity of the tomatoes, and the spicy chicken picked up the nice spicy notes in the wine, as well.
Fattoria Laila is located in the hills of Ancona above the Adriatic Sea. The area's chalky soils are great for Montepulciano. The Rosso Piceno DOC covers an ancient viticultural region. Ancient writers tell us that Hannibal, at a pit-stop along the way to Rome, had his horses rubbed down with red wine from Piceno to give them more energy and strength for the last part of the journey. As with most of the Italian wines I've had so far, these little known regions and lesser known grapes are capable of combining great quality and traditional Italian flavors with a very attractive price. If you like Chianti or Nero d'Avola, give reds from Rosso Piceno a try. They may become your preferred Friday night pizza and pasta wine.  |  |  | |
