I can't hold Thai food entirely responsible for making me uproot my life and move halfway around the world to Sydney, Australia. But it did play a role.
In Sydney, incredible Thai restaurants are as ubiquitous (and about as affordable) as burrito joints in San Francisco. But no matter how authentic the cooking, it's hard to beat paying 20 baht (about 50 cents) at a bustling Bangkok market for curry that's bursting with tangy lime; tempered by the salt of fish sauce and the caramel of palm sugar; and followed, ideally, by a bold aftershock of chili. I decided a long time ago that if I couldn't eat out that way every day, the next best thing was knowing how to make it.
Having cooked up many a dish of Tom Khai Kai, Mee Khrob, and Massaman Curry, I thought I was pretty well versed in the cuisine for a Western chef. But it wasn't until a culinary tour of Thailand, including an amazing cooking course in Chiang Mai, that I really felt like I "got it."
Whether fiery hot or comparatively mild, when it comes to Thai, harmony's the guiding principle. Overpowering spices are toned down by pungent fresh herbs, like lemongrass and galangal. Salty sauces are tempered with sugars and offset by acids, such as lime. Moreover, rather than being served in courses, a Thai meal is presented all at once, so diners can enjoy the juxtaposition of contrasting flavors.
Yet despite the apparent complexity of Thai food, many dishes are surprisingly easy to concoct. Much of the art lies more in the prep work than in employing tricky techniques. In fact, you'll often find that having the ingredients lined up and ready to go is half the battle.
Of course you can just go to a restaurant or buy ready-made curry pastes and sauces, but trust me, Thai is almost certainly easier to master than you realize. And if you can't afford to travel, cooking this marvelous cuisine is the next best thing to a trip to Thailand. Or Sydney.
Wine & Thai Food
When choosing a wine to accompany a Thai meal, the same thought should be given to equilibrium as it is in cooking Thai. Riesling and pinot noir are probably your two best bets for spicy hot dishes: a good rule of thumb being that the spicier the food, the sweeter the wine. For example, pair a slightly dry number with a tangy but mild lemongrass and coconut chicken soup. But use a more sugary vintage to tone down the fire of a curry.
The German Auslese style rieslings are excellent and reasonably priced. Two U.S. producers, Bonny Doon (whose Pacific Rim is marketed to serve with Asian cuisine) and Hogue, both make good, affordable rieslings. As for pinots, their delicate flavors, which can be smothered by heavy steak or barbecue, are enhanced by hot and spicy food.
Remember that spicy food exaggerates the tannin and natural bitterness in wine. The addition of salt and sour flavors will help counteract this effect, as they make the wine milder, fruitier and less bitter.
Thus, if you're drinking a merlot or cabernet sauvignon with duck in red curry, the addition of fish sauce to the curry - or salt to the duck - will help counteract the chilies. Similarly, the addition of lime juice to a green mango salad will offset the spiciness and pair nicely with a sauvignon blanc/semillon blend. For a moderately spicy, ginger-rich dish, a good gewurztraminer makes an excellent contrast.
Another thing to consider is the method of food preparation. Generally speaking, grilled or pan-roasted foods will be better matches with your wines than those that are deep-fried. For example, Kai Yang (chicken marinated in garlic, pepper and lemongrass, and then grilled) is delicious with a crisp white wine or a fruity red.
Tips and Tricks
Never cut kaffir lime leaves, as too much oil will come off on the knife and diminish the strength of the flavor. Tear them gently instead.
When kaffir zest is unavailable, substitute lemon peel rather than lime, as the latter is too bitter.
Ginger, in smaller quantities, can be used as a substitute for galangal (also known as ginza or laos powder).
When making large quantities of curry paste to store in the fridge or freezer, it's best to fry it first in oil, and then store both the oil and the paste. This helps retain better color and flavor. Dried chilies provide a better color in paste than fresh ones.
Always add lime juice after the heat has been turned off.
Mung beans should be stored in salt, not water, to keep them crunchy.
Don't fry garlic and shallots together, as the garlic will cook quicker and turn brown. Shallots soaked in water for 10 minutes won't make you cry when cutting them.
Use a tablespoon of coconut milk as a garnish for curries to provide an attractive color contrast.
To separate coconut cream from milk, refrigerate it for 10 minutes, then skim off the top.
Milk, cucumber or tomato will stop the burning sensation from chilies; water will amplify it.
When stir-frying, always preheat your wok at least five minutes, until it's smoking hot. Add your oil and wait 10 seconds before beginning to add meat and vegetables.
Although Thai people eschew appetizers in favor of eating a variety of dishes all at once (proving yet again that it's the harmony of opposing forces that define this cuisine), for us Western cheats, this makes a great appetizer that can serve as a prelude to a wide range of main courses.
4 cups pork spareribs cut into 1-inch pieces Enough oil to deep fry 3 cups chicken stock or water 1/2 cup oil 1/2 cup chopped garlic with skin on
SAUCE 1/2 cup chopped garlic 1/4 cup roughly chopped coriander root and stem 1 t crushed white peppercorns 2 T oyster sauce 1 T light soy sauce* 1 T soy sauce 1/4 t sweet soy sauce
*You can easily cheat and just use 2 tablespoons of regular soy sauce. But try to get the sweet soy. In a pinch, just add a little palm or brown sugar instead.
Mix the spareribs together with all sauce ingredients, then put them in a pan along with the stock. Simmer 20 minutes. Drain the stock, and set the ribs aside.
Put 1/2 cup oil into a wok. When it's hot, add the unpeeled garlic, and cook on high heat until the garlic starts to turn brown. Lower the heat, and keep stirring until the garlic is crispy (about 2-3 minutes). Drain the oil, and put the garlic on some kitchen paper.
Put the oil for deep frying into a wok. When it's hot, fry the spareribs until golden brown (4-5 minutes), then drain.
To serve, put the ribs on a plate, and sprinkle with garlic.
If you can't get pandanus leaves or don't want to fry the chicken, this dish is also excellent when the marinated chicken is baked, covered, for about 30 minutes. If you do use leaves, be sure to remove them before serving, as they aren't edible.
1 cup chicken breast cut into 20 equal-sized pieces 20 pandanus leaves 4 T roasted sesame seeds 1 t ground black pepper 1 cup of oil
SAUCE 1 T light soy sauce 1 T tapioca flour 1 T sesame oil
Put chicken in a bowl, add sauce ingredients and mix well. Marinate at least 10 minutes. Then add the sesame seeds and pepper, and mix well.
Wrap each piece of chicken in a pandanus leaf, cutting off the ends if too long. The chicken can be stored in the refrigerator until ready to fry.
Put oil into pre-heated wok, and turn to medium heat. When oil is hot, add chicken pieces, frying until cooked through - about five minutes. Drain on kitchen paper and serve immediately (ideally with a sweet chili dipping sauce).
NAM JIM GAI (Sweet Chili Dipping Sauce) (serves 4)
This sauce makes a fantastic accompaniment to most Thai dishes and is added like salt and pepper. Once cooked this can be stored in a bottle for about one month at room temperature.
3/4 cup finely chopped coriander root 5 cups chopped pickled garlic 7 finely chopped big, red chilies 3 1/2 cups sugar 2 cups white radish, cut into thin strips 1 1/2 cups vinegar 1/4 t salt
Put all ingredients into a pan, and simmer on low heat about 20 minutes, until sauce is thick. Stir occasionally.

Don Ziraldo is the founder of Inniskillin Winery in Canada and is credited with bringing ice wine to the forefront. If you?ve never had it, you should try it. It?s expensive ($100 for a half bottle) but OMG it is divine. I had the Cab Franc Icewine and it tasted like a liquid strawberry shortcake. Anywho, Ziraldo got married this past week to Anna Netter. But here?s the good part. The couple did a press release and here are just a few snipits from their article. The 58-year-old Mr. Ziraldo met his bride on the ski slopes of Whistler, but they lived apart for some time, "each continuing to travel and learn from other cultures. Gradually, thanks to their mutual interest in Buddhism, both learned that "there is no fear, only love." At the 2004 Olympic Games in Greece the couple exchanged eternity rings. Remember that kids ?there is no fear, only love?. WTF? I love it, they exchanged ?eternity rings?. Is that just basically what millionaires call a wedding band? And OMG, that hat and those shoes do not scream millionaire. I do like her dress though.
More details on the wedding: It took place at the jet-set Hotel Traube-Tonbach (Traube means grape in German), which "prides itself on its strictly enforced peace and quiet, and the glamour of its very upscale clientele." The wines were Inniskillin -- natch -- and the dinner menu featured venison and pike. The couple is honeymooning in the Bahamas with friends.

Fact #1 JD Wetherspoon?s is a chain of pubs in England. There are 650 in operation.
Fact #2 Constellation Brands is a wine GIANT. They sell more than 80 million cases a year. Fact #3 Constellation often does ?private labels?. This means that they take one of their wines, let?s say Alice White for example, and they put it in a bottle with a different label on it. So, if you were a mega retail store *cough Total Wine cough* you could take that Alice White and call it Blue Flame *cough ass in a glass cough* and when people want more, they can only get it at your store b/c the consumer doesn?t know it?s Alice White?.for example.
Fact #4 JD Wetherspoon?s let several different companies compete for their house wine. Whatever wine was the most popular for the trial period would win an exclusive with all of the pubs for a contract valued at nearly 150 million dollars.
Okay, now that we know the facts, let?s look at what really happened. It seems that an email was leaked from the Boss of Matthew Clarks Brands (a division of Constellation Brands) to all of their employees (around 300 people).
Wine distributor Matthew Clark emailed staff asking them to buy up to eight bottles of wine each at JD Wetherspoon's pubs in Bristol - and then claim it back on expenses. Employees were told to buy Nottage Hill Chardonnay and Shiraz, and Echo Falls - all of which are produced by Matthew Clark parent company Constellation Europe. If each of the firm's 300 employees had "done their bit" and splashed out on eight bottles of wine, it would have increased sales by 2,400 bottles in the city's pubs - potentially tipping the balance in its favour. The plan to artificially enhance the wine's popularity was devised as Constellation battled with rival firms for the exclusive rights to supply wine to JD Wetherspoon's 650 pubs.

So, in Tasmania (off of the coast of Australia) there is a local tourist attraction that has been getting a lot of flack lately. If you go to the ?Pub in the Paddock? you will find Prescilla and PB and they chug beers. But get this, Prescilla and PB are pigs. Yep, people can pay to ? and I quote ? ?pour bottles of beer down the willing throats of resident pigs?.
Dude, I would totally pay to see that. But PETA would like to go on the record and state that they are not down with it and they want to have the pigs rescued.
"Whilst it is a difficult pill to swallow ... it's certainly not cruelty, unfortunately," RSPCA state chief executive Rick Butler told PETA.
Pub owner Anne Free said Wednesday she was outraged that the tourist attraction had been attacked as cruel in the latest edition of a magazine published by animal welfare group Choose Cruelty Free. "When it's very, very quiet, I often actually have to go over and give them a couple of drinks because, yeah, they do look forward to it," Free told Australian Broadcasting Corp. radio. Heartland Brewery has just begun marketing their new beer called Slobber Lager. This non-alcoholic beef flavored beer is made specifically for dogs.
"It's damn good," said Jon Bloostein, owner of Heartland Brewery, after taking a sip. Polo, a Bichon Frise, took a sniff and slurped down the whole bowl in a few seconds. Simba, a Shih Tzu, was more hesitant. After several whiffs and plenty of encouragement, he took a few gulps. But Diva, a Rottweiler, couldn't get enough. She finished one bowl and moved on to the next. Still thirsty, she sipped from a pint glass, then drank straight from the tap. "She's a beer drinker!" said Allison Cardona of the ASPCA, who helped bring the dogs, all available for adoption, to the tavern for the taste test.
Um, I am sure the dogs love it but why is the brewer drinking it? Ew! Beef flavored beer? Count me out. My dog is fat enough as it is so he?s definitely not getting any.
Schramsberg has just come out with a new sparkling wine meant to compete with the likes of Krug, Dom P., and Cristal. It is called J. Schram Rose 1988 and there were only 800 cases produced. Rarely will you ever see an American Sparkler go for more than $75 but this one??$120. "It appears in a world where Dom Pérignon Rosé is $200, and Cristal is probably $350. The Krug Rosé is certainly in that range as well," said Shramsberg head winemaker Hugh Davies. "This wine competes with those in terms of flavor, finesse and character.
Yeah, but it?s still Schramsberg and I doubt it competes with Krug. Strike that ? There is NO WAY it competes with Krug. If anybody out there can get a hold of some, I wanna know what it?s like. Last night was our anniversary so Kipp and I got a babysitter and hit the town. First we went to Milner's in Winston Salem and I had a glass of Renard Rose. It was just kinda meh... From there we proceeded to go to several different bars and I actually ran into an old sorority sister at Foothills. Anyway we came home at 8:30 (I know, were wild right?) and I fixed Steak with a mushroom and Humboldt Fog (bleu cheese) sauce. We had an '01 Spotteswoode with it. That review will come tomorrow. But for now read my review of Martinelli Pinot that I had at an impromptu wine dinner with Jon and Sam at my house on Sunday.
Martinelli '02 Moonshine Ranch Pinot Noir The nose was earthy and powdery all at the same time. It also had a lot of blackberry with some hints of white pepper. The palate was all cherry cola and sweet black cherries. There was some hidden acidity on the mid-palate with a very sweet, very lush blackberry jam finish. Yeah, it was over extracted but damn, it was GOOD. I have one more bottle and I think I'll let that one sit for about 3 more years.
Chivas Regal, the Scotch whisky brand, has appointed Euro RSCG to handle its global advertising business, bringing an end to its 14-year relationship with TBWA.
The agency has been briefed to create a new high profile global campaign for the Pernod Richard-owned brand. It is understood that the international campaign will run primarily in Asia and the US, where the brand enjoys strong growth, with some exposure in the UK market.
This wine is characterized by a yellow-green colour, a fresh citrusy aroma with hints of honey and a complex flowery aftertaste. It’s a semi-dry riesling, dryer than the Slovenian rieslings (such as Laški Riesling for example), but sweeter than those found in Serbia. It is a nice wine to accompany a lighter meal.
This is one of the wines available in Belgrade restaurants in 0.2l bottles, so if you’re a driver among non-wine drinkers (meaning you can’t order a whole bottle of some fine wine) it’s a good chance you’ll be in a position to try it. Do so.
This is a pretty purple Argentinian wine with cranberry bouquet and black cherry notes.
Palate is solid strawberries with slight white pepper and solid structure. I am not a big fan of Malbec but this one was decent. I believe the price point is the usual $10 range. Raise a glass.

I was surfing the sites of a few online wine retailers today looking for some specific imported wines when I should have been working. Some of the sites generated other imported wines suggestions that sounded good but I hadn’t heard of the producers. Since you already list tons of information about the wine including the producer, region, vintage, possibly grape variety, and a critic’s opinion, how hard would it be to add a field to list the importer as well? I, for one, would be more likely to throw a bottle in my virtual shopping cart if I knew it was from one of my favorite importers. If I am in a shop I can look at the back label, which provides that info, but not online…
The danger of a post such as this will be the fact that some of you, and perhaps the people concerned, will believe that I am simply whining. But let me assure you, though I am slightly disappointed, I am far more astonished at what seems to me to be a level of rudeness and arrogance that is thankfully rare in the wine world.
Monday afternoon, April 28th, the Oakville Winegrowers Association put on a tasting of wines grown and made in Napa's Oakville AVA (American Viticultural Area) for the trade and the media. Such tastings are quite rare for many reasons, but perhaps among them is the fact that many of the wineries in Oakville are quite simply the top wineries in Napa. These folks don't have any problem selling their wines out every year for hundreds of dollars per bottle. Needless to say, they don't have a lot of extra wine laying around for tasting. Many do not have public tasting rooms at all for this very reason.
However, most of these wineries, like the vast majority of their peers in Napa understand that their relationship with the trade (retailers, restaurateurs, distributors, the press) is important both for their own livelihood as well as the livelihood of the wine region as a whole. Which means that every once in a while they get together and throw a big tasting to allow members of the trade and media access to their hard-to-find wines in a comparative and easily accessible setting.
The Oakville tasting this week represented a fabulous opportunity to taste some legendary wines from some of Napa's best producers. Among them was Screaming Eagle, the cult wine of cult wines. This small producer is widely known for making some of the highest rated, most expensive, and hardest to get wine in America.
Frankly when I saw that Screaming Eagle would be pouring at the tasting, my first reaction was surprise, since I had never heard of them pouring their wines at such a large trade event. My second reaction was a warm feeling of approval. I was proud that they were going to support their appellation and their fellow winegrowers, and I was personally looking forward to tasting the wine for the first time.
But I never got to. And neither did hundreds of other members of the trade and media.
After about 20 minutes of pouring at the tasting, having only brought a few bottles, Screaming Eagle was out of wine. So when I arrived to the tasting about 30 minutes late, I found this:
An empty table, surrounded by stunned members of the wine community -- winemakers, wine buyers, sommeliers, marketing consultants, and other winery owners, all of whom were nonplussed at the blank table. Actually, not all of them were nonplussed. Some of them were pissed.
Now you might be thinking, well, they ARE the ultimate cult winery. They don't make a lot of wine, and their wine is so expensive, they can't really afford to just stand around and pour their wine all day long at this tasting.
To which I say: tell that to the following wineries, all of whom poured their wines for nearly three hours to everyone who wanted it at the tasting:
Harlan Estate. Production: 2100 cases. Release price: ~$700 Bond. Production: not sure, but low. Release price: ~$400 Futo Wines. Production: 200 cases. Release price: $250+ Dalla Valle. Production 2000 cases. Release price: $250+
The first people I ran into when I got to the tasting were a couple of winemakers I know who make wine elsewhere in the valley. They were leaving the tasting and told me that they had gotten to the tasting right when it started, and they still hadn't gotten a chance to taste the Screaming Eagle. They were shaking their heads in amazement.
So what is the point of all this?
The point is that there are wineries who understand that they're part of a community, and behave as such. And then there are those who don't.
I can't tell you how many tastings for both the trade and the public I have been to where Bill Harlan and Bob Levy are pouring the Harlan and Bond wines for all comers. There is no economic reason for such wineries to appear at these events. Most of the people who taste their wines in these settings will never be able to get their hands on a bottle anyway. Yet they are there, because they are supporting their industry, their appellation, and the trade itself.
For Screaming Eagle to agree to participate in this tasting and then to show up with only enough wine to last 20 minutes is just downright rude to the point of being offensive. It says very clearly that they pretty much don't give a damn about anyone.
That's fine, of course. It's their prerogative. But I find it quite ironic that for two hours after they abandoned their table, the two folks who came to pour Screaming Eagle were still wandering around, tasting everyone else's wines, almost none of which ran out until nearly three hours into the event.
Shame. I'm sure I'll taste Screaming Eagle someday, but I wonder if it will ever be able to overcome this bad taste I have in my mouth?
The wine world is chock full of gadgets these days and this is one of the funniest I have seen in such a while. A physician by trade, Patrick Farrell claims that he has an invention that will improve the quality of a wine simply by pouring wine into a glass. Let me explain?
He has created a device that will fit around the neck of a bottle that uses magnets to enhance the wine.
Farrell started out tying magnets to the neck of a bottle at the urging of business acquaintances who were distributing magnets to try to improve water quality. At the time, he thought the chance magnets would work on wine was ?about the same as seeing pigs fly.? But, he says, ?I took the thing home, put it on a bottle of shiraz from Australia and was shocked to see it made it taste smoother and fruitier. So then I went down to my cellar and I got a bottle of Bordeaux from the Medoc and it made it taste softer and fruitier.? Eventually, he came up with a molded plastic device that looks like a regular non-drip pourer and has an air hole to speed up oxygenation. That intensifies the effect of the wizard and differentiates it from other magnetic devices on the market such as The Wine Clip, which clasps around the bottle neck, says Farrell. Um?magnets?? I guessing the pourer at the top actually aerates the wine and that?s what softens the wine as opposed to the magnets. But let?s see what the critics have to say.
?Testimonials are irrelevant. Tastings are not proof,? says Ball, a professor at Cleveland State University, and ?amateur wine snob,? who says magnetic fields aren?t strong enough to change the shape of tannins. ?All that magnetic field is doing is separating you from your money,? says Ball, who won?t be trying the Bev Wizard any time soon. Awesome! At $30 for the gadget you?re better off buying a $5 corkscrew and a $25 bottle of wine!!
This really promises to be a cool event. I hope to see some of you there.
Seven North Carolina breweries - including all five from Buncombe County - are teaming up this month to host a Slow Food beer-tasting event at the downtown Asheville Brewing Company, 77 Coxe Ave. Slow Food is an international group that works to preserve food traditions and sustainable agriculture. Proceeds from the beer tasting will be used to send local delegates to the Slow Food Terra Madre gathering, Oct. 26-30 in Turin, Italy. The tasting, at 5 p.m. Aug. 27, will feature beers each from Asheville Brewing, Highland Brewing, Pisgah Brewing, French Broad Brewing, Green Man Brewing (all from the Asheville area) Catawba Brewing of Glen Alpine and Foothills Brewing of Winston-Salem. Each brewery will have at least two beers at the event, and Asheville Brewing will likely serve all of their ales, said brewmaster Doug Riley. Beers will be served in four-ounce samples, and the evening includes pizza. Midweek - too tired after a day in the office and too hot after the commute to want to do too much in the kitchen; a dive into the supermarket to grab a bottle and something to throw on to a plate without too much fuss. The wine should be cheap - lacking in energy to think too much about the alcohol we are slurping.
For me that supermarket is Waitrose. The wine is a bottle of £4.99 South African white while the eye is drawn to a tortilla from the new Delicatezze range. Specifically Edamame Bean, Artichoke and Lemon Pesto Tortilla made from free range eggs, which appeared better value than other dishes in the same range; and more substantial too. Add a salad and a meal is made.
Taking little more than 15 minutes in the oven you might need to make use of the quick-chill machine to get the white to non-shelf, drinkable temperature.
Wine Tasting Note: Nederburg Chardonnay-Viognier, 2007, Western Cape, South Africa. Available from Waitrose for £4.99. Crisp and refreshing - a touch acidic perhaps but nicely rounded with peach, melon and floral notes. The Chardonnay has seen some barrel ageing, but the whole is lifted by the lemon floweriness of the Viognier. It's fine and fine summer-garden drinking. Alcohol 13.5%. Fine with the salad-tortilla combination; you don't afterall, want anything you have to think too much about.
One of New York?s most renowned and important collectors celebrated his 50th birthday in fine fashion recently at Bouley?s private ?Test Kitchen? here in New York City. Cabernet Sauvignon is for wimps.
Yep, you read right. Wimps, I tell ya. You want a dash of crème de cassis? Mathilde makes a pretty one for kir royales. Bursts of blackberry? Pass the Polaner All-Fruit. Chocolate and coffee notes? Starbuck?s can whip you up a mean frappucino. But please, don?t put it in my wine.
I admit, I?m being cranky. And I know it?s partially because I have a pile of dishes in my sink crying out for help as I try to type. But it?s also because I?m trying to make a point: while Cabernet Sauvignon can indeed produce beautiful wines, it?s often made into over-ripe fruit bombs smothered in vanilla-toasted oak.
I know what you?re thinking. Clearly, this woman has never tasted Silver Oak. Or Chateau Mouton-Rothschild. Or etc. etc. etc. I admit, Cab Sauvs can be made into some pretty smoking wines, but can you afford those? Nah, neither can I. The gloriously rated Howell Mountain Cabs are about as far from my price range as possible. As are top growth Bordeaux. Where does that leave me?
Cabernet Franc.
Granted, the two grapes are very different. Cab Sauvignon is all about tannins, dark fruit and leathery aromas. Cab Francs, while also firmly tannic, are lighter, earthier, and display much more herbal aromas. But for me, it?s one of the most wonderfully versatile grapes under vine, producing a plethora of styles, most of which are both food-friendly and age-worthy.
Cabernet Franc, as you know, is one of the grapes used in the classic Bordeaux blend. Along with the more famous Cabernet Sauvignon and Merlot, Bordeaux can also include Cabernet Franc, Malbec, and Petit Verdot. Percentages of Cabernet Franc vary from chateau to chateau, but its typically used more on the right bank in St-Emilion and Pomerol to add tannic structure to Merlot?s juicy roundness.
But Bordeaux is certainly not where Cabernet Franc gained notoriety. That exhalted region is none other than the Loire Valley in France. The Loire is an interesting area that?s largely held on to traditional winemaking methods and indigenous grape varieties, including Muscadet, Pineau d?Aunis, and Cot (the local name for Malbec), among others. The AOCs (Appellation d?Origine Controlle) of Chinon, Bourgeuil, and St-Nicolas-de-Bourgeuil produce reds from Cabernet Franc. The wines tend to be leaner and more acidic than Bordeaux , ranging from the chalk-textured Bourgeuil to the richer Chinon to the juicy St-Nicolas-de-Bourgeuil. While lackluster winemaking can certainly produce bland wines, the true artists of the Loire have been known to craft earthy wines, loaded with mulberry, sage, and minerality that can age for 15 years or more.
Cabernet Franc, however, was largely overlooked in the United States until recently. Some experimental winemakers out in California have been producing Cab Francs that are big, bold, and brawny ? which is just fine, but not particularly true to the nature of the grape. Happily for us, Cab Franc seems to prefer the climate of New York State, and in particular, that of Long Island.
It turns out the maritime climate of Long Island is perfect for many of the Bordeaux grapes ? they dig the summer heat moderated by the surrounding water. Long Island is also cool enough in the winter to allow an appropriate dormant phase without great risk of extended freezes. The Finger Lakes have long struggled with red grapes for lack of sufficient sunlight to ripen, but Long Island has the best of all climactic combinations. And judging from a recent tasting, Long Island winemakers are producing Cab Francs in the all of its glory ? from light and juicy to tannic and mineral-laden.
Raphael and Jamesport both produce what are perhaps the most approachable Cab Francs. Lighter and juicier in style, these wines can both be served slightly chilled as delicious, thirst-quenching sippers. This is not to say that they?re not dinner-wines; indeed, serve them at room temperature paired with rosemary-roasted chicken and asparagus and they?ll certainly blossom.
Castello di Borghese has created a more new world Cabernet Franc that?s full on the palate with sweet cherry fruit and smooth tannins ? it?s a softer, rounder version of the grape that will appeal to dyed-in-the-wool Merlot fans. In a somewhat similar style, Vineyard 48 has certainly gone new world by oak-ageing the wines to impart toasty cinnamon nuances. It?s smooth, round, and creamy, loaded with blackberry and black cherry fruit. Pair either with a hearty beef stew for a midwinter treat.
Schneider produces the most classically-styled Cabernet Francs. If I were to taste their ?Le Breton? blind, I think I?d pick it out as a ripe Bourgeuil. The chalky nose offers plum, sweet red peppers, thyme, and rosemary, with a linear palate of blackberry that expands beyond the stoniness to a smooth, round finish of plumy licorice. Schneider?s ?Roanoke Point? is a bit more elegant, with toasty sandlewood aromas interlaced with rosewater and pluots. The blackberry fruit on the palate is enhanced by notes of roses, herbs, prunes, and roasted peppers. These are both Cabernet Francs for Cab Franc lovers. And a pairing? Why, Long Island duckling, of course!
Ok, now, I?m not saying that after trying Cabernet Franc, you?ll completely abandon Cabernet Sauvignon. But let it swish around your mouth for a while. Taste the lovely herbal notes and the layers of stone and fruit and try to convince me that it?s not an underappreciated grape.
And, if you really feel the need, send me a thank you note. It?s only polite.
Chinese wine will conquer the world in terms of volume and fine wine, a recent study suggests.
According to the Future of Wine report, drawn up by London-based wine merchants Berry Bros & Rudd (BBR), China, which is already the world's sixth largest producer, will lead the world by the year 2058.
The report, which predicts the state of world of wine in 50 years, also says China will ?rival the best of Bordeaux?.

Full-bodied with magnificent intensity, beautiful fresh acidity, tremendous definition, and a powerful, moderately tannic, super-concentrated finish, this beauty should come into its own by 2010, and last for three decades or more. It is a prodigious effort!"
Where wine coolers captivated the 80s and microbrews burgeoned in the 90s, vodka is bringing verve and variety to drinking in the new millennium. Strawberry vodka, chocolate vodka, orange, cinnamon and key lime vodkas? Sidle up to any bar in any city and you'll see a sick display of distinct new tastes nestled on the shelf among the Ketel and Grey Goose, ready to splash into an updated Cosmo, Betelgeuse or Tootsie Roll Martini.
Trendy as these specialty vodkas may seem, spice- and herb-infused vodkas have been sating drinkers since the spirit first cracked the ice on frozen Russian and Polish faces several hundred years ago. Back then, flavoring wasn't intended for variety. It was necessary to take the edge off the primitive mash, the intense, harsh taste of which could make even the swarthiest drinker breathe fire.
Later, the ability to craft flavored concoctions became the mark of a skillful distiller. Among those who elevated the practice to an art were the Russians and Poles, who've long marketed dozens of flavored vodkas. Among the most unusual brands in Russia are Okhotnichya or "Hunter's" vodka (flavored with a mix of ginger, cloves, lemon peel, coffee, anise and other herbs and spices, then blended with sugar and a touch of a wine similar to white port) and Zubrovka (vodka flavored with bison grass, an aromatic grass which is the cud of choice for herds of the rare European bison).
Flavored vodkas were slow to reach the mass U.S. market, however. Americans first became hooked on "the white spirit" after World War II, lured by the convenient fact that it had "no taste and no smell" (and could therefore be consumed on the sly). And for decades the classic vodka martini or vodka-tonic suited drinkers just fine. It wasn't until the cocktail craze of the late 90s that the current frenzy for vodka variety took off. Luckily, there are plenty of quality distillers out there to satisfy demand.
Among the first to tempt our palates with readily available flavored vodkas were Absolut and Stolichnaya. Absolut entered this niche market in 1986 with its Peppar, an aromatic, complex and spicy vodka that gets its kick from the spicy components in the capsicum pepper family and from fresh green jalapeño pepper. They later added Absolut Citron, Kurant and Mandarin. The newest twist to the Absolut line? Absolut Vanilia, which has a rich, robust and complex taste of vanilla, with notes of butterscotch and hints of dark chocolate. Its scheduled release is this spring.
Stoli was also an early marketer of laced libations, luring many drinkers to the pleasures of flavored vodkas with its Vodka Razberi (made with ripe raspberries), Vodka Vanilla (with the pure essence of Madagascan and Indonesian vanilla beans) and Vodka Zinamon (infused with the zip of cinnamon).
The success of the Absolut and Stoli creations gave rise to a new generation of cocktail concoctions and inspired other distillers to create fresh and unexpected varieties. Among those most likely to turn up at your local watering hole are the infusions of Charbay, which uses fresh fruit to create blood orange, ruby red grapefruit and key lime vodkas; Burnett's, which offers sour apple (great in an Appletini), coconut, raspberry, orange, citrus and vanilla; the artistically designed Vincent Van Gogh Vodkas, whose varieties include Chocolate, Oranje, Vanilla, Raspberry, Wild Appel and Citroen; and OP, a 70- proof Swedish vodka flavored with ginger, orange and peach, and spiced with anise, fennel and caraway.
A newcomer to the flavored vodka scene is Hangar One, a small, quality distiller that uses real fruit and "rare and expensive" ingredients to produce its Buddha's Hand Citron, Kaffir Lime and Mandarin Blossom vodkas. Luscious straight up, these fruit-laced spirits can also be the inspiration for cocktails to die for.
Should a Cosmo with Burnett's Blood Orange Vodka or a Sunflower Martini with Vincent Van Gogh's Raspberry seem too traditional, frighten your drinking companions by ordering up a shot of Blavod, a smooth-tasting vodka colored black by the catcchu herb. While it looks like The Dark Prince's drink of choice, Blavod is surprisingly refreshing in a Black Bull (ice, Red Bull and Blavod) or a Sundance (ice, blue curacoa, soda water and Blavod).
Another far-out blend is Feigling, a fig-infused vodka that comes in a little bottle from Germany. Served straight or with a little tonic and a twist, Feigling is a unique taste and sure to throw a little variety into your drinking repertoire.
If you?re lucky enough to find them, don't pass up a chance to try the Polish Wisent, flavored with a species of bison grass that grows only in the Bialowieska Forest (acknowledged to be the last primeval forest left in Europe), or the Ukrainian Soomska Horobynova (flavored with ashberry) and Soomska Horilka Pryhodko (flavored with St. John's Wort, Buffalo Grass, coriander and lemon).
So your local bar thinks Absolut Kurant is the cutting-edge of flavors? You can still experiment with new ventures in vodka. Roll up your sleeves and concoct your own unique libations. Begin with a quality vodka. While "quality" is in the taste buds of the drinker, general wisdom holds that you?ll get better results and suffer fewer day-after side effects if you stick to a bottle in the $20-and-up range. Purchase anything under seven bucks to use in your infusion and you'll waste culinary effort as well as brain cells.
Recipe for Infusion
The process by which vodkas are flavored is called infusion. This is a fancy word for mixing stuff with vodka and letting it soak. Unless otherwise directed by a recipe, infuse your vodkas at room temperature. Freezing the flavored vodkas after infusion, however, will ensure the best taste.
The easiest way to flavor vodka is with fresh fruit, which both soaks up and flavors the spirit. Just mix vodka in equal portions with ripe, washed and coarsely chopped fruit (peaches, pineapples or strawberries are common favorites). Place the mixture in a glass canning jar, and let the concoction sit for several days. Strain before serving, or leave in a few fruit chunks for munching. This method will work with any fruit, including fresh and sun-dried tomatoes as well as chili peppers. In short, if you can dream it and drink it, you can infuse it.
If you want to venture beyond fruit, give these traditional and not-so-traditional infusion recipes a try. Vodka lovers will find these concoctions delectable on their own (plain or with a garnish), but they can also be used to breathe new life into a favorite old cocktail.
Recipes
(Note: For all recipes use 1 pint of plain vodka and infuse at room temperature for 24 hours. Then strain.)
Anise Vodka: Licorice-laced vodka was a favorite of Peter the Great, so it's got to be good enough for us. Soak 2 t whole anise seed. Serve chilled.
Coriander Vodka: Use 2 t coriander seed, slightly crushed.
Garlic-and-Dill Vodka: Infuse 1 clove garlic, slightly crushed, 1 sprig fresh dill and 3 white peppercorns. Leave a little dill in the vodka, if you're so inclined.
Herb Vodka: Infuse a few sprigs of a favorite herb, such as tarragon or basil. Leave a small bit of herb in the vodka, if you choose.
Saffron Vodka: Use 1/4 t saffron threads.
Tea Vodka: Infuse 4 t black tea leaves (fruit-scented is a nice touch).
Buffalo Grass Vodka/Zubrovka: Use 8 blades of buffalo grass. One blade of grass may be left in the vodka after straining for a little woodland feel.
So next time you order a cocktail, check out the new flavors lining up behind the bar. Flavored vodkas may just be a trend, but they're bound to snare some converts. Bison grass and anise seed aside, 145 million vodka-loving Russians can't be wrong.
