My golf coach recently confirmed what I think I already knew: "Tom, you've got to get out of your head."
Translation: my proclivity to live in my head and to think too much interrupts my need to execute really well a body-driven activity on the golf course.
Thinking about my coach's advice with regard to golfing, I realized that I'm going to have to work very hard to accommodate him, because I've always found much more pleasure in intellectualizing what I do than simply doing.
Wine and drinking is a perfect example. I can't stand the idea of simply drinking a glass of wine and just letting it flow down my throat, letting the droplets fall where they may without thought. I NEED to think about what I'm doing.
Even today as I heard reports about the coming warm weather later this week and into the weekend, I immediately began thinking about drinking Pastis by the pool. But it's not enough that I think about that pleasurable moment in the future, note that I'm looking forward to it and move on until I pour my Pernod on Saturday. No, Tom needs to think about the what this coming Pernod Moment means, what it reminds him of, what it says about the changing seasons, how best to enjoy that coming moment. And I'm not talking practical considerations. I need to think about what it means.
It's a nasty affliction I have, this over thinking things, because it clearly prevents me from becoming a more accomplished Golfer. But I think it's only a case of being a nasty affliction where physical activity is concerned, not where drinking is concerned.
If you don't think about your wine (or drink) when you drink it, then it merely becomes and alcohol delivery vehicle. When you think about the drink, at least you have the opportunity to be a contemplative drunk, if not more.
But it's really the traditions that have grown up around the production of wine and wine's incorporation into local cultures that have made it the heady, intellectual libation it is today for many. Wine can be a cultural translation tool that happens to also make one wobbly. Any Culture, remember, is an entirely mental construct that starts with language, is grounded to territory and is at its best when translated for those who reside outside of it. All this happens in the mind. Wine is a near perfect translation tool.
It seems to me that to simply gulp the stuff is to negate the higher purpose that wine can serve. This notion might appeal to some as placing wine on a pedestal too high. I can see that view. But I can't accept it. The fact that wine provides a marvelous springboard to contemplating people, places, dirt, history and taste makes it particularly worthy of being on a pedestal.
Now, my golf swing is another thing entirely. No pedestal for it. No explaining its often absurd lines either. Perhaps if I can learn to leave my head behind as I swing a club, it will create more room inside there for indulging in the pleasures of the mind where wine is concerned.

If you ever wanted an object lesson in the "Blinders On" mentality that results when a state controls and restricts consumers' access to wine, all you have to do is read THIS STORY in the Salt Lake City Tribune on ordering wine direct through the state run system that turned into a 5 month odyssey of frustration and surrealism.
The report begins by noting that Utahans often order one of the tens of thousands of wines the Utah state system doesn't list in inventory from on-line sources then have it shipped to Wyoming, where they go pick it up and drive it back home. Yes, this is illegal, but it turns out it's really the Utahans only choice is they want to access wine that the good Utah government regulators don't choose to bring into the state.
But no worries. This illegal activity isn't necessary: "Under Utah law, consumers may special order wine, liquor or heavy beer that isn't one of the 4,000-plus offerings on the state's listing, says John Freeman, DABC operations director."
The reporter did just this. He wanted to get his hands on two bottles of Quivera Zinfandel from Dry Creek Valley.
He ordered it through the state in November 2007. He got it in May 2008. You've got to read this story.
The really ugly part is that were rational wine shipping laws in place in Utah, the reporter could have ordered his wine from any of more than 20 different on-line wine merchants and had it shipped to him within 3 or 4 days of ordering it.
I'm not one of those Small Government, Conservative kind a guys. But when you read this sort of thing you really start to understand where those folks are coming from when they claim that if you want something screwed up and as inefficient as possible, just give it over to the government to do.

I had the opportunity to taste the 1994 Smith Woodhouse Colheita Tawny Port this week. What a nice way to usher in spring in the Midwest. The single harvest port is a lovely, translucent red amber color and a leisurely sniff yields hints of plums and cherries. A taste confirms those notes with a little bit of oak and walnuts. It's a rich, well-balance wine, perhaps a little on the sweet side.
A neighbor of mine just started working in a cheese store and we paired the port with a creamy, truffle brie. The richness in the cheese was perfect and cut the sweetness in the port. Tawny port is also a classic accompaniment to creme brulee.
The wine purveyor suggested serving it slightly chilled in the summer (a Portuguese tradition), but I haven't tried that yet.
The 1994 Smith Woodhouse Colheita Tawny Port is available throughout the United States and Canada. Suggested retail is $46. Aged port wine will keep for four-six weeks once opened.

Regular readers of Winewaves have noticed the slowing pace of new pieces in 2007. For the first 2 years I tried to keep a daily pace of providing new pictures and reviews here. Winewaves began in February of 2005, but it's over. At least for now.
Like many other well-intentioned bloggers, I simply cannot afford to provide the quality of content that I would like to. Other paying work occupies my time. The opportunity cost of the effort I've invested in Winewaves has been great and the benefits have been scarce. My balance sheet unfortunately fits on a Post-It note. Being that I don't have deep pockets, something had to give.
Thank you to those who tuned in, found themselves checking out Winewaves, and especially to those who have sent me supportive e-mails over the past 3 years.
And go figure. No other wine created the stir that Bitch Barossa Grenache has over the last 3 years. For all those who are looking for it, I DON'T KNOW where you can find it. Which brings to my mind a pet peeve. When there is an ocean of Grenache (or at least red wine) in Australia, and when so many people are looking for "Bitch" in America, and when the people who want it are not expecting the highest standard of gustatory excellence, why don't they bottle more of it? What's wrong with giving the people what they want?
Of all the lessons learned from Winewaves, the foremost one is that I wish I could be selling wine. That's because most people who have come here thought that was the point of the site. It's so frustrating that Tennessee state laws prevent a would-be entrepreneur like myself to add value to a marketplace. Most people don't see the value of great wine label pictures, except as a way of merchandising, which I am prohibited from doing. At least for now.
Lastly, if anyone has any ideas as to how to revive Winewaves, I'm all ears.
If you?re interested in designing your own custom wine cellar there are a number of options available to you. The best news is that there are wine cellar designs for everyone from the avid do-it-yourselfer to the complete woodworking novice.
There are modular wine racks that are available in different grains and finishes, with the least expensive generally being a wood such as pine. Most modular wine rack dealers will offer other materials such as red cedar or finished wood as well. Of course you can always save some money and finish the wood yourself if you desire a particular type of finish or color for your wine cellar racks.
There are many wine racking companies that offer crown molding and skirting pieces so that you can easily combine different styles of wine cellar racking materials and types. This approach can yield some very unique custom wine cellar designs.
There are built in glass racks that are made to fit snugly within a rack system. A good place for one of these individual units would be above the table top piece mentioned above. This would add to the ambience as well as functionality of your custom modular wine racking system.
If you want something a little different than the traditional wood wine cellar racks, there are attractive metal trellis rack pieces that are very economical, yet stylish. These tend to look classier than the wood modular wine racking pieces, especially for placement in bar areas that will be viewed by visitors.
If you would like to add a table area to your wine cellar while increasing the storage capacity of your cellar at the same time, a wine bin table may be the best addition to your modular racking system. There are taller, wine tasting tables that hold just over 100 bottles or about 180 bottles of wine, and there are shorter wine rack tables that hold more than 200 wine bottles in case bins.
There are many online dealers and manufacturers of wine cellar racking pieces that also offer custom computer design services to help you achieve the exact wine cellar layout that you have in mine. With many of these professional services you can then have the plans sent to you and decide if you will build them yourself or have someone else build them for you.
With all of the wine cellar design options available to you, there are many ways to accomplish the perfect wine cellar design for you and your situation. There are many wine enthusiasts online communities and the like where you can find others interested in the same things that you are and maybe gain some other ideas about wine cellars and the design aspect of creating your own wine cellar.
A couple of people asked me what happens when it rains during harvest. As the skies above some of the world's greatest vineyards seem to be dumping unending moisture on the fragile grapes, the questions seems particularly timely.
Water is an important part of the cycle of life. Almost nothing can live without it, and most non aquatic life will drown given too much water. In all things balance, and when it comes to harvesting grapes, less water is better.
Wet bunches of grapes tend to rot. Rot does not add pleasant flavors to wine. Even Nobel Rot (botrytis) which is responsible for the world's great dessert wines is not a good thing for dry wines.
Some grapes tend to have tighter bunches than others, and these are that much more susceptible to rot, since air can not easily get between the berries to dry them out. And air is the key. A few warm windy days following a heavy rain can save a vintage.
Even if the grapes do not rot, they may absorb the water and swell, reducing the intensity of flavors. Picking while it is raining poses a similar danger. Wet grapes add water to your wine.
If a grape swells beyond the skin's ability to contain it, it will burst. Now you have a grape that is exposed to insects and bacteria. The aphorism about bad apples is doubly true for bad grapes. You don't want these grapes in with the rest.
The best defense against the bad grapes, not only those that may have burst, but those that may have been damaged by birds or other animals, is to hand sort. This costly and time consuming procedure is exactly what it sounds like.
Imagine staring at a conveyer belt full of grapes and trying to pick out the bad ones (along with leaves and other non grape materials). Not much fun, incredibly labor intensive and for some wineries difficult or impossible to accomplish.
Even if your grapes survive the rains, the rot, the birds and the bees (ok, yellow jackets) you may have a whole new issue to deal with. Those cloudy cool days kept your grapes from ripening, and now you are faced with the prospect of leaving your grapes out even longer than you intended, just to get that little bit of extra ripening.
The longer your grapes are left out in the field the riper they get to be sure, but also the greater the risk. The later in the season it gets, the greater the chance of frost in some regions, and rain in many others.
Winemakers that find themselves staring at soggy vineyards this week are all posing the same dramatic query. To pick, or not to pick, that is the question. Whether 'tis nobler of time to suffer the slings and arrows of outrageous fortune, or to take arms against a sea of troubles, and by opposing, end them.
They may not have to chose between life and death, but for some it may be the financial equivalent. To play it safe and make a lesser quality wine, or to take a chance for better quality and profits. Ay, there's the rub.
I've just finished going through a clutch of Hollick reds. I always think of them as one of Coonawarra's better producers, though clearly in recent years they've invested more and more in the nearby Wrattonbully region. I tasted through the following wines:
... and I was expecting that the Hollick Coonawarra Cabernet Sauvignon 2004 would come out clearly on top. It didn't. Indeed it wasn't even a Coonawarra wine that I preferred the most.

Peter is W&S's Senior Correspondent based in Champagne, giving him a unique and insider perspective particularly on the European wine scene. I learned about Peter's Blog from Brooklyn Wine Guy who highly recommended it and I was not disappointed. Peter's Besotted Ramblings are likely the best source of information on the Champagne wine region and Champagne the product on the net. It's an education in the waiting. 1. When did you begin blogging and why? I started my blog in November of 2007, mostly because I was living halfway around the world from the majority of my friends, and it was an easy way to stay connected. It?s since grown into something beyond what I anticipated, and I find that I enjoy writing it.
2 In two sentences describe the focus of your wine blog. I?m fortunate in that I?m based in one of the most dynamic and intriguing wine regions in the world, constantly surrounded by wine, vineyards and winemakers, and my blog allows me to develop ideas about issues and random bits of information that I encounter from day to day. My goal is to keep it mostly about champagne, but as I travel fairly regularly, I also end up writing about other things that I happen to be drinking or eating at the time.
3. What sets your wine blog apart from the pack? You mean other than its babbling incoherence and child-like grasp of HTML? Seriously, I suppose that one unique element of my blog is that among people blogging in English about champagne, I?m one of the very few who actually live in the region, and among those I?m the only journalist, as far as I know (the rest are winemakers or connected with wineries). Both of these things shape my perspective in particular ways.
4. How would you characterize the growth in your readership since beginning your blog? It?s been shocking, really. Each week surpasses the previous one. I don?t look at my stats a lot, mostly because I use Blogger, which doesn?t have an internal stat counter. But whenever I do, I think, ?Damn, where did all these people come from? And don?t they have anything else better to do?? 5. Do you accept sample for review? Well, most of my tasting is done at wineries, so I suppose that tasting wine "sur place" constitutes accepting samples in some way. I don?t feel any sort of conflict of interest, since I?m not actually reviewing wine, nor do I feel compelled to write about something just because someone opened a fantastically expensive or rare bottle for me. The whole point of having a personal blog is so that I can write about whatever I want to write about.
6. What kind of wine rating/review system do you use and why? I don?t. At my day job I?m required to use the 100-point scale, which I like to think that I can wield competently as a professional. Personally, however, I don?t believe in numeric scoring, although I recognize the need for a system to communicate a concept of quality, if you?re going to be in the business of reviewing wine. Fortunately, my blog isn?t about reviewing wine, and it certainly isn?t about rating wine. It?s more about establishing a context in which to place the wines that I write about, creating a backdrop so that the reader is better empowered to assess these wines for himself or herself.
7. How do you fit the maintenance of your wine blog into your daily schedule? It?s a sort of mental exercise, usually in the morning. I don?t like spending much more than fifteen minutes on a post ? I?ll pick a sufficiently narrow topic and try to make myself write whatever I have to say within the allotted time. As I often spend much of my day writing other things, it?s a nice change of pace to write a short, focused post on something that I?m interested in.
8. Have you utilized any particular techniques to successfully market your blog? I?ve done absolutely nothing to market my blog. In fact, I think the only thing I?ve ever done that could remotely be considered marketing is registering on Technorati. I must be the worst self-promoter in the entire world.
9. In your view how, if at all, is blogging different than traditional wine writing for print? As others have said, a blog connects you with your readers in a much more immediate way than print journalism. For one thing, you can write much more frequently, and your writing is delivered instantaneously to your audience, which offers huge advantages. When I write for print, sometimes it won?t be read until several months later, which has an impact on both how you write and what you can write about. Also, one of the most valuable things about blogging is a direct interaction with your audience, via comments, e-mails and the like, and it?s very rewarding to exchange ideas in this manner.
10. Which other wine blogs do you read regularly? I browse whenever I can, generally around the blogs that I?ve linked to on my site. I like Brooklynguy?s well-written and down-to-earth Wine & Food Blog. Dr. Vino is always a fantastic source of information, and generally a hoot to read. Wolfgang Weber?s Spume is intelligent and entertaining, not always about wine but that?s a good thing. I also like Ray Isle?s blog at Food & Wine ? he?s the best writer I?ve ever worked with, as well as an all-around great guy.
11. Do you believe wine blogs have made any marked impact on the wine industry or wine culture? I can?t say that I see a big impact on the industry. On wine culture, I suppose that it gets more people engaged in a dialogue about wine, whether they?re reading or writing. I think that blogs still occupy a fringe element rather than the mainstream, but their presence and influence is only going to grow.
12. Vacation: Paris or the Caribbean? I would say Paris, except that I live close by and am there quite regularly, so it doesn?t feel like much of a vacation to me! I do love the city, though. For a proper vacation, I try to remove myself completely from Europe and North America, with Asia being a preferred continent to wander in.
13. Pet: Dog or Cat? Cats, unquestionably. They are by far the more civilized of the two. I?ve been in too many places in the world where I?ve had to carry a pocketful of rocks to fend off canine marauders. In Vietnam, however, I exacted my revenge upon the canine race when I ate dog prepared three different ways, including a boiled paw floating in soup, nails and all. It was a very Lance Henriksen in "Dead Man"sort of moment. 14. Airplane Reading: New Yorker or People? The New Yorker. In fact, it?s become something of a ritual for me ? when I fly I almost always have both the New Yorker and Wired in my bag. One of the things I love most about flying is that it frees me of all duties and obligations, and I have absolutely nothing to do but sit there and read a magazine.
15. Car: Prius or BMW? A Prius would be a blessing, with gas prices the way they are here in Europe. Although as my current vehicle is a Peugeot 206, I would be thrilled to drive either a Prius or a BMW. The French make many wonderful things, but automobiles are not exactly their strong suit.
16. Chablis or California Chardonnay? Chablis, without a doubt. I?m an old-world, old-school, cool-climate, rocks-and-minerals sort of guy. I guess I sort of have to be ? I live two hours <I>north</I> of Chablis. 17. Describe what you would have at your last meal? I would have Kouei Furukawa, the kaiseki-trained chef of Shokkan in Tokyo?s Shibuya district, make me a multi-course extravaganza from whatever he found at the market that morning. I?d bring a ton of champagne, of course, as well as an ample supply of sake, and try out all sorts of combinations with Furukawa-san?s exquisitely elegant and refined cuisine.
18. What is Heaven Like? Of course the champagne flows freely, and by some miracle it's all organically grown. The views are spectacular, rather like sitting out on the patio at the Ventana Inn in Big Sur. The chefs are Japanese, and the sommeliers probably are, too. And on the television, Arsenal is perpetually thrashing Manchester United, over and over again for the rest of eternity.
19. If you could invite 4 people dead or alive to your fantasy dinner party, who would they be and who would you have bring the wine? There are many famous people living and deceased whom I might choose, but I?d have to say that my group of friends in Portland, Oregon, who all have fabulous cellars and are all complete wine dorks, will always be my favorite dining companions. Unfortunately we hardly ever get to see each other these days. There are more than four of them, but so be it.
20. What advice would you give to someone considering starting a wine blog? Don?t use Blogger! Just kidding. I think it?s important to remember that while writing on the web allows you to be more casual and relaxed than writing in print, the rules of good writing still apply. Write with a purpose and keep your audience in mind. It doesn?t have to be Pulitzer Prize-worthy, but it ought to have a point ? writing ?I drank this last night and it was yummy? is not very useful to anybody, plus it?s boring.

Don Ziraldo is the founder of Inniskillin Winery in Canada and is credited with bringing ice wine to the forefront. If you?ve never had it, you should try it. It?s expensive ($100 for a half bottle) but OMG it is divine. I had the Cab Franc Icewine and it tasted like a liquid strawberry shortcake. Anywho, Ziraldo got married this past week to Anna Netter. But here?s the good part. The couple did a press release and here are just a few snipits from their article. The 58-year-old Mr. Ziraldo met his bride on the ski slopes of Whistler, but they lived apart for some time, "each continuing to travel and learn from other cultures. Gradually, thanks to their mutual interest in Buddhism, both learned that "there is no fear, only love." At the 2004 Olympic Games in Greece the couple exchanged eternity rings. Remember that kids ?there is no fear, only love?. WTF? I love it, they exchanged ?eternity rings?. Is that just basically what millionaires call a wedding band? And OMG, that hat and those shoes do not scream millionaire. I do like her dress though.
More details on the wedding: It took place at the jet-set Hotel Traube-Tonbach (Traube means grape in German), which "prides itself on its strictly enforced peace and quiet, and the glamour of its very upscale clientele." The wines were Inniskillin -- natch -- and the dinner menu featured venison and pike. The couple is honeymooning in the Bahamas with friends.

So, if you were a mega retail store *cough Total Wine cough* you could take that Alice White and call it Blue Flame *cough ass in a glass cough* and when people want more, they can only get it at your store b/c the consumer doesn?t know it?s Alice White?.for example.
Fact #4 JD Wetherspoon?s let several different companies compete for their house wine. Whatever wine was the most popular for the trial period would win an exclusive with all of the pubs for a contract valued at nearly 150 million dollars.
Okay, now that we know the facts, let?s look at what really happened. It seems that an email was leaked from the Boss of Matthew Clarks Brands (a division of Constellation Brands) to all of their employees (around 300 people).
Wine distributor Matthew Clark emailed staff asking them to buy up to eight bottles of wine each at JD Wetherspoon's pubs in Bristol - and then claim it back on expenses. Employees were told to buy Nottage Hill Chardonnay and Shiraz, and Echo Falls - all of which are produced by Matthew Clark parent company Constellation Europe. If each of the firm's 300 employees had "done their bit" and splashed out on eight bottles of wine, it would have increased sales by 2,400 bottles in the city's pubs - potentially tipping the balance in its favour. The plan to artificially enhance the wine's popularity was devised as Constellation battled with rival firms for the exclusive rights to supply wine to JD Wetherspoon's 650 pubs.

When pigs fly?I mean drink beer
So, in Tasmania (off of the coast of Australia) there is a local tourist attraction that has been getting a lot of flack lately. If you go to the ?Pub in the Paddock? you will find Prescilla and PB and they chug beers. But get this, Prescilla and PB are pigs. Yep, people can pay to ? and I quote ? ?pour bottles of beer down the willing throats of resident pigs?.
Dude, I would totally pay to see that. But PETA would like to go on the record and state that they are not down with it and they want to have the pigs rescued.

Heartland Brewery has just begun marketing their new beer called Slobber Lager. This non-alcoholic beef flavored beer is made specifically for dogs.
