What we commonly refer to as sulfites (actually sulfur dioxide) is natural by-product of the wine fermentation process. It's also an antioxident and antimicrobiodal. Some wineries add extra sulfur dioxide to their wines to help preserve them and many wineries use this compound in lieu of harsh chemical like bleach to clean their vats, lines, and other wine-making apperatus.
Sulfites have gotten a rather bad reputation because a small percentage of the population-around one percent-is allergic to this compound. For this reason, any US-produced wine with more than 10ppm must include the phrase "contains sulfites" on the label. This includes virtually all wines as the naturally-occuring amount of sulfites is around 10-20ppm. (The maximum allowable amount of sulfites in wine is 350ppm.)
Wines with the lowest about of sulfites are organic wines, followed by dry red and white wines. Dessert wines and wines with a high sugar content are higher on the sulfite spectrum.

It's official. Millennials are a major force in wine. Why we needed a study to tell us this, I'm not sure. We millennials are hip, sophisticated and reliably swayed by marketing. Sigh. At least we have the good sense to like wine.

I find myself about to debunk a product who?s claim I do not altogether doubt. The Eisch Glaskultur company of Germany has released a line of stemmed crystal that they claim ?aerates beverages within minutes.? Their packaging states ?A wine poured into a Breathable Glass for just 2 to 4 minutes will show signs of aeration equivalent to the same wine that has been decanted and aerated for 1 to 2 hours.?
Since I am on the record for saying that ?breathing? is a wine myth, I can hardly fault a product that claims to do nothing, and succeeds. Of course the implication that they are using to sell glassware is that this stem will improve your wine tasting experience. This is what I set out to test.
Let me start by clarifying my positing on wine breathing. I have conducted various experiments over the years and the results have not done much to make me a believer. I am not saying that there is no difference from a wine that is decanted for an hour or two from a recently opened bottle, I am just not sure the difference is either significant, or difficult to reproduce with a few good swirls in a glass.
The premise is that allowing a wine to breath opens it up. It has a very poetic sound to it, except that wine does not respire so much as exhale. Wine vents volatile compounds into the air. The whole glass swirling thing is about releasing these compounds to make them easier to detect.
To say that a sitting wine improves is to say that these volatile compounds were in present in too great a number to begin with. This is certainly true with some wines that have off odors or excessive volatility, and in those rare cases I highly recommend a forceable decanting (so the wine literally chugs out of the bottle and splashes violently into the decanter).
If the wine was sound to begin with, it by definition was not excessively volatile. Vinegar is wine with way too much volatility, as an extreme example. Few modern wines you open will be vinegar-like. Some other off odors, such as the wet rotten leaf smell of a wine that has undergone malo-lactic fermentation in a bottle, may be reduced by decanting. A wine that went through MLF in a bottle will usually be slightly sparkling as well.
The experiments I have conducted include opening a bottle and tasting it blind against another bottle of the same wine which had been opened and or decanted some time before. The decanted wine may well have a different aroma and taste, but after a few minutes of swirling either wine, the differences balance out.
For the Breathable Glass (BG) I created a simple experiment. So simple that I concede that I do not have definitive proof of my hypothesis. On the other hand, it is simple enough that anyone can try it.
I put the same wine in the BG and another tall, well shaped glass and let them sit for four minutes without touching them. I then poured both wines into identical tasting glasses and tasted them blind. I did the same test again, only this time I swirled each of the wines reasonably evenly for 2 minutes before switching glasses and tasting.
In neither case did the wine from the BG exhibit any significant aromas or flavors that varied from the wine which had been poured into the regular glass. Therefore I can state unequivocally that I did not find anything remarkable or impressive.
My wording here is deliberate since Ronn Weigand who is one of the few combination Master Sommeliers and Masters of Wine is quoted right on the packaging as saying ?I was especially impressed - Remarkable!?
The test I conducted were designed to be easily verified by my peers, and as always I urge them to do so. What I didn?t do is almost as important as what I did.
I did not test a wine that had been in the BG for 4 minutes against the same wine that had been in a decanter for two hours, as per the claim on the package. I did not run a spectroscopic analysis to determine if the crystal makeup of the glasses was richer in oxygen, the mechanism cited for the claim. I didn?t do many things, but I did what I did, and I didn?t find a difference.
The Breathable Glass line is fine crystal with a good feel to it, and at $20 a stem it is not outrageously priced. I got mine at Bed Bath & Beyond, and it is because it is being marketed to the main stream instead of to wine geeks that I felt compelled to try it.
My advice is to save your money and buy one of the $4 stems right next to it on the shelf, unless you like the feel of the glass and it is in your budget. Just don?t expect miracles.

The Story Wines are a boutique producer based in Melbourne and a predominantly Shiraz vineyard in the Grampians region. From what I can gather the 2005 “Orphan” Shiraz is their second commercial release under the label.
Slightly off blood red in colour, this shiraz smells like damp English hedgerow berries, dark chocolate and a hint of raspberry jam. Medium bodied yet full in flavour with fleshy blackberry, blueberry and plum up front, some pepper and spices, a soft and supple texture and integrated chalky tannins on a savoury finish.
In essence this Shiraz is a reminder that I need to drink more wine from our Mexican friends south of the border. It is seriously moreish and very reasonably priced at online retailers Squashedgrape and Boccaccio.

Today, I have a treat for myself. I need a treat. It’s been one of those weeks that leaves you wondering why you even bother going to bed, since you’ll be up at back at work the minute you wake up again. Recently, my days have started to feel drawn out and full of ups and downs, and to be honest, I really didn’t want to participate in this month’s Wine Blog Wednesday even though the theme, Old World Reisling, is something I truly adore. I just don’t have the energy, but then I decided to change my attitude to become a little more relaxed and calm.
The reason I love Old World Reisling is for one simple reason, or rather one particular man, Terry Theise. If you’re not familiar with his name, please stop reading and go to his page at Skurnik Wines. Download all of his wine catalogs and start reading veraciously. I can wait. In fact, if you don’t make it back here, I excuse you, because these catalogs are too good to be true.
To be honest, I’m not much of a writer, nor am I much of a reader. And because I love them both, we call this a conundrum. I write here, and I read there, and I sometimes find myself feeling a little empty. Maybe it’s the content, the subjects or both. I’m not really sure, but when I went looking for information on one of my Reislings today, I found Terry.
Mind you, if it weren’t for this man, I wouldn’t be appreciating these bottles of wine right now. It would be equivalent to using the 100 point system and not knowing who Robert Parker is. So, I quickly downloaded his catalog where I thought I might find reference to my German Reisling, but suddenly, I was lost. Lost in his words, wit and wisdom. Terry’s catalogs, whether you like wine or not, are a must read for his frankness, honesty, word play, and humor. If you don’t love German Reisling, well, you may change your mind when you read Terry’s words.

This is a manifesto that I can get behind! Drinking Iberian wine everyday, I often forget how much I love the world of wine and not anyone region. These words are timeless, and in my opinion, great advice for anyone just getting into wine. Live by these words and you can’t go wrong.
But this post is not about Terry Theise, but rather Old World Reisling. Today, we have 2 wines in front of us, one from the heralded 2003 vintage in Germany, an Auslese from one of the premier wine makers in Terry’s collection. I bought this wine as a future at a tasting in Minneapolis back when I still sold wine. A guided tasting with one of the sharpest palates I’ve ever been with, Terry showed us that despite “Crazy-ass heat” one could still make a Reisling full of nuance and character. In truth, I can’t tell you why I bought this one versus the many others that were in my price range at the time. I was relatively new to German wines, and excited to explore a region that seems totally frightening when you look at the complicated labels. But on this particular night, I learned that I had to at least try and dig through the odd characters, strange accents, and unpronounceable names to get at the heart of these treats. And consequently, I fell in love.
Today I sit in a Reisling wasteland. I’ve tried Reisling from around Spain, and I believe that I’ve even had a Portuguese Reisling once. But I wouldn’t recommend them. Nonetheless, I’m here to taste, so you don’t have to. Therefore, to balance the pie a bit, I’m also about to open a 2007 dry Reisling from down the road, a Penedes treat that has never offended me, though that is not much of an endorsement either.
From the moment I open the Sumarroca 2007 from the Penedes, I’m instantly happy and sad. Happy that it’s still fresh and lively. Sad, because there is not much to it. Reisling, I’m afraid, is not meant for Iberia. It loses its soul. The land of the Toro, and the feisty Spanish persona, is not a home for something with a delicate nature. Spain is land of bold wines with bright flavors and complex traits, and for me, I want something more subtle when I drink Reisling. The Sumarroca is easy to drink, simple and a great example of muscat, or a simple summer white blend. From their site (annoying flash, don’t bother visiting it):
Entirely produced from grapes grown in the Sumarroca Estate, only the best 50% from the first juice (free-run) of these carefully selected Muscat varieties has been used for this wine. Fermentation took place during 3 weeks under strict temperature control at 15º C in stainless steel tanks. It has been gently filtered and stabilized at a low temperature before bottling.
Reisling was never meant to be 100% dry, or at least not very often. Alsace is an exception, however, and the sugar makes a big difference. Now I know that some of you are saying, “I don’t like sweet wines”! To you, I say, “give me a break”! Put down your dry Coca-Cola and listen. Sweet is good. Sweet is nice. And just like in dry wines, if the wine is NOT balanced, than it will taste bad. Mogan David tastes horrid, because it’s like drinking syrup! Good Reisling doesn’t have this problem, due to its high acidity. I’ve served very sweet Reislings to friends who have quickly responded, “what a nice dry wine this is”. 50 grams of sugar dry! The acidity balanced the wine, whereby keeping your tongue from becoming a syrup slick. Ok rant done…Now on to what has made my afternoon pleasant.
Joh.Jos. Christoffel, 2003 ÜRZIGER WÜRZGARTEN Auslese***, that’s a mouthfull! Let me preface the next few lines with this, I love Spanish and Portuguese wine, but I needed this. This is a pure stroke of bright light through my Tempranillo stained tongue. New flavors, aromas and textures, dance though my mind, and I feel handicapped describing the wine before me. Because I am so tied up in Iberia, I almost forgot why I loved wine, diversity. In my glass sits some of the most gorgeous honey flavors with minerals, petrol, fruits and flowers, exotic and rare. Here are Terry’s own notes from his report on this wine.
2003 Ürziger Würzgarten Reisling Auslese*** ++ “This is always from the same parcel, and it cannot produce more than forty hectoliters per hectare,” says Hans-Leo. “We’ve had at least Spätlese from this site in every vintage except 1991. I could make these wines heavier, but it goes against my philosophies. The day I can’t make wines like these any more is the day I’ll pack it in.” It’s down below, to the right of the sundial, in case you want to locate it. This 2003 has the extra note, the Grand Cru flavor, now glazed with the finest botrytis maltiness. As always what amazes here is the density and delicacy, and here, in 2003, the siren-song of minerality. SOS: 3 (between ten and thirty years)
I’m glad I wrote this!! I’m glad I opened this treasure before it’s time (I wanted to wait 5 more years), and I’m glad I still have 2/3’s of a bottle left for dinner tonight. Although, I’m not sure I want to drink this with the meal. It is perfect for some many dishes, as its balance would complement more treats than you might expect. But no, I think I’ll grab the bottle, sit up on my roof, watch the sun set over Montserrat, and let my mind drift. That’s what wine is for. Thanks Terry!

2003 Joh. Jos. Christoffel Erben Ürziger Würzgarten Reisling Auslese *** - Germany, Mosel Saar Ruwer (5/7/2008) Still showing a bit of spritz on this lightly golden wine. The nose though is mature, with deep honey tones, light petrol notes, hidden nuts and fruits. Really a complex nose that I think will develop nicely into the night. In the mouth though this is a lush treat. with a racy acidity, that cuts though a high buy non-cloying sweetness. Incredible…really fun to taste as complex flavors seem to develop in my mouth, and shift from one flavor to another. Think of flesh fruits, on a bed a gravel with a floral honey lightly drizzled over the top. Light mustiness like darkened honey comb, lingers around the edges of my mouth as I revel at this wines elegance and beauty. Perfect balance. 5/5

Christoffel Erben Ürziger Würzgarten Reisling Auslese *** - Germany, Mosel Saar Ruwer (5/7/2008) Light golden yellow in color with tiny bubbles that lay dormant, only occasionally springing to the surface of the wine. On the nose, the wine shows its age and maturity with rich honey, cooked peaches, ripe pear and a touch of petro right on the end. The bouquet is reserved, graceful and classy. In the mouth the wine has a beautiful spritz, alive with acidity, zest and life, perfectly balancing the sugar. Incredibly rich and round mouthfeel that covers the entire palate before it gently slides off leaving a lovely yellow floral and honey flavor. I’ve had some lovely whites in my lifetime, but this is incredible. Perfectly integrated, well balanced and overall, an unbelievably good wine! 5/5

2007 Sumarroca Reisling Penedès - Spain, Catalunya, Penedès (5/7/2008) Light golden in color this wine has a nice simple nose of white flowers, melon, and honey. Really clean and straight forward, while in the mouth a medium acidity balances this fully dry wine, whose fruit is one again simple and straight forward. Nectarine, minerals, and honey notes mingle in and out. Not bad for a summer sipper, though not inspiring either. 3/5

2007 Sumarroca Reisling Penedès - Spain, Catalunya, Penedès (5/7/2008) Light golden in color with a slightly green tinge, showing a lovely and expressive white floral bouquet, bolstered by aromas of white peaches, honey, lychee and a slight barnyard aromas. In the mouth, the wine is slightly off balanced, as the racy acidity shows shows a tartness that is quite frankly, a little unpleasant. Full and round in the mouth with a medium body and a nice gentle finish. Candy mandarin and honey on palate, with hints of orange peach and gravel. Paired with a fresh pasta salad with garden picked cherry tomatoes, however, I think this would be a nice wine. 3.5/5

If you felt let down by the Tribe's oh-so-typical performance this year, you can return to Jacobs Field in Cleveland this weekend, Nov. 2-4, for a much happier occasion. It's the Heinen's/WVIZ World Series of Wine , a perennial joy for wine novices and aficionados alike. It really doesn't get much better than the grand tastings ($70-$75 a person; purchase tickets in advance). More than 400 wines, 100-plus producers, stellar munchies, unparalleled people watching. You'll find lots of opportunities to speak with winery and distributor representatives to get the real dirt on what you're tasting.
It's hard not to over imbibe with so many wines to try, so take a cab or a limo or book a hotel room. Some downtown Cleveland hotels are offering packages specifically for the occasion.
This is easily the biggest wine event of the year for Northeast Ohio. Oh, and it benefits public broadcasting, as if you needed another reason to go.
Brilliance is a word that can mean many things: luminosity, intelligence, perfectly executed and, when it comes to flavor, lively and electric. All of those things come together in these two seductive, brilliant wines that are great values to boot coming in at under $25.
2005 Clos de la Roilette, Fleurie, Imported by Louis/Dressner Every time I’ve served this wine each person at their first sip is taken back for a second as they ponder what has crossed their palate. Each knows that they have experienced something special. This is an extraordinary wine is that is is just so alive that it makes you take more pleasure in living. Concentrated elegance and finesse.
2005 Bourgogne, Pinot Noir Vieilles Vignes, Domaine Joseph Voillot. Imported by Vintage ‘59 Imports – Anybody who thinks there are no great values coming out of Burgundy be prepared to be proven wrong. This racy, bright pinot noir also comes packed with loads of flavor and complexity on its rather electric acid frame. Here’s a pinot that can both sing and dance. A short stint in your cellar of two or three years will give you quite a bottle of pinot.
A pair of 5’s may seem a long shot to those that think a lot of chips are required to get great wine, but sometimes a pair is all you need. These days it’s hard to imagine such a winning hand at this price range from anywhere other than France.
For those who like to cellar wines instead of drinking them right away, 1 is just the thing. In some ways it's the polar opposite of Penfolds Grange, Australia's most famous (and extremely ageable) Shiraz. But while Grange tastes amazingly good upon release and continues to develop extra nuances in the bottle, St.
In January, for those of you who weren’t following our play by play of the II International Conference on Climate and Wine, Catavino spent three days cornering wine celebrities, in order to get a better sense as to how wine is being affected both now and in the future by the fluctuating climate conditions. Stubborn and wonderfully determined people such as Richard Smart, Bruno Prats, Miguel Torres, Pancho Campo, Carlos de Jesus of Amorim, Dr. Gregory Jones, and of course, Al Gore, all vented their fears and frustrations with the current lackadaisical attitude held throughout the wine world regarding the impact of climate on wine. Each passionate in their own right, but there was one in particular that I had been pining to interview for months.
Having been previously introduced to Oz Clarke through his books and articles, it wasn’t until I saw his charismatic nature in Oz and James’s Big Wine Adventure that I was hooked. This BBC television program, first aired in 2006, and was undoubtedly one of my favorite wine programs, if only to see Oz flirt with yet another woman. His coy and passionate nature was fun and made learning about Bordeaux and Languedoc-Roussillon entertaining, rather than intimidating. Therefore, to have the opportunity to not only see him in person, but to interview him, albeit a little daunting, was great fun. Add a camera and question that impassions him, and Oz will keep going for hours, interweaving personal stories and jokes with highly specific wine facts that will eventually leave your head spinning.

I had a wine that came from a nest today. The vineyard manager would probably call it basket or even ampelies. But to me it looked like a nest. Granted, I was only looking at a photo–if only I could have arranged a field trip to the vineyard.
Blown to bits by a volcano in 1640 BC, the sliver of a Greek isle that is today Santorini has many old vines. They struggle. They cling to the earth. And the vineyard workers prune them into these next/baskets intentionally to help them against the elements, notably the near-constant wind blowing over the treeless slopes. The other element is water. The vines survive the scorching summer days by collecting moisture in the nests at night when the fog rolls in. Sounds quite dramatic and I’ll have to check it out with Mrs. Vino one day. And the sunsets. And the food. But back to the wine!
Domaine Sigalas, Assyritiko-Athiri 2007, $16 (find this wine) This dry wine has a nice creaminess on top of good acidity that makes it extremely user friendly. The importer, Ted Diamantis, told me that it’s the Athiri grape that gives it that richness. The Domaine farms organically.
For wine geeks, the other wine, a straight assyritiko varietal wine (find this wine), has some off-the-charts briney qualities with a faint smokiness and minerality–the gout de terroir of Santorini, no doubt. Ted suggested pairing it with shellfish with high iodine-levels, like oysters. Sounds like a plan.
