Big news in the steep Douro Valley! Symington Family Estates, owners of internationally renowned Port brands Dow?s, Graham?s, and Warre?s is converting their three Vilariça valley vineyards entirely to organic farming. Quinta do Atayde, Quinta de Assares and Quinta da Canada, consisting in total of 146 hectares, or 361 acres, will gain their official “organic” certification in two years time. However, an organic Altano red wine has already been made from the 7 ha fully certified as organic at the Quinta de Assares vineyard in 2007 that is currently in barrel and will be released later this year.

Having read this press release yesterday, what perplexed me was why these 146 hectares were chosen to be organic in their 900 ha. portfolio? What makes the Vilariça valley different? Like any successful business, the valley was chosen on the basis of location. As opposed to their vineyards banking the main Douro valley, the Vilariça valley enjoys colder winters and drier summers, in addition to schistous soils which allow for optimal draining. Couple this with an ideal pH range and balanced mineral nutrition in the soil that naturally produces low-yielding fruit, and you’ve got yourself a perfect spot for organic farming, or so Symington hopes.

Another interesting factoid to note is that Touriga Nacional accounts for only 3% of the total vineyards planted in the Douro Valley. 3%! Considering that this is one of the main grapes in your basic port blend, that statistic is a little shocking. And of that 3%, Symington can boast that Vilariça valley is organically growing 31% of all Touriga Nacional in the Douro. Not a bad marketing angle!

For the record, Touriga Francesa is the most widely planted grape in the Douro Valley.

That said, will this effect my buying patterns? When considering the global climate change, will I buy more Symington wines as a result of their “green” stance? Honestly, it depends on the quality of the wine. When the Altano is released, and I discover that it is a good bottle, of course I’ll endorse it. But if it’s not a good bottle of wine at a decent price, just because it’s an organic wine, doesn’t mean I’m going to suggest that you run out and buy it.

ashley dupre video uncensoredPennsylvania is one of those states that controls the distribution of alcoholic beverages by operating state-run stores, so one wouldn't really expect it to be a hotbed of wine-distribution innovation.

However, the Pennsylvania Liquor Control Board is looking into the possibility of operating wine-dispensing kiosks at up to 100 locations around the state, and is soliciting bids from contractors to operate them. The machines would hold about 500 bottles, and dispense a dozen different selections. Users would have to register to make purchases with the machines, which would take credit, debit or PLCB gift cards. The kiosks would incorporate security identification measures such as fingerprints or biometric readings.

The wine blogosphere has been awash with news of Randy Dunn?s letter to consumers telling them to essentially stop buying wines they like. At the heart of the matter is once again the controversy over high alcohol wines. If consumers like these wines so much that it has changed the way wines are being made all over the world, what exactly is wrong with them? The short answer is ?nothing.? The longer answer is ?they all taste the same.?

Varietal character, the terroir (where the grapes are grown) and the winemaker all contribute to the wine. These are the factors that determine what makes wine x taste different than wine z. When the alcohol starts to creep up past 15% many of these differences are drowned out by the sweetness of the alcohol.

This is not altogether different than what happens on the other end of a wine scale. By leaving a touch of residual sugar in an inexpensive wine, vintners can make wines labeled with varietal names that while not nasty because the sugar hides the flaws, but they have no actual varietal character.

And so it is with high alcohol wines, it becomes increasingly difficult to tell one from another, much less one variety from another.

These big alcohol wines are fruity, rich, easy drinking, and easy to enjoy. In fact they are all the things I like in my favorite wine, Zinfandel.

Zins are often high in alcohol, and since they are all about fruit, it suits them. Cabs are a different story. They have traditionally been all about structure, the delicate interplay between acidity, fruit and tannin. The market seems to be demonstrating that consumers feel Cabs should taste like Zins (ironically I recently tasted several Zins that were so oaked as to taste like Cabs).

Chardonnay too has not been spared the hike in alcohol content. For over oaked heavily lactic (buttery) Napa Chards this may be a good thing. The same can?t be said for regions such as Santa Barbara where Chardonnay traditionally has developed decent varietal character.

Many bloggers and wine writers are complaining that these wines don?t work well with food. I never thought Cab and Chard went all that well with food anyway, but I do hate to see Pinot Noirs with too little acidity and too much alcohol.

What worries Randy Dunn and so many others is that the consumers have shown a strong preference for these high alcohol styles. They fear that the days of individual expression in wine are waning. They needn?t fear.

Dunn?s wines are expensive, as are so many other really good wines. The cost alone keeps most consumers from every experiencing any wine of this level. Add in scarcity, and there just isn?t enough great wine to go around.

Most of these high alcohol wines are in the middle price range, or the lower end of the middle. Certainly there are some high priced wines that have adopted this fad, but then there have always been wines whose price tags are not borne out by their quality (Opus One is my favorite whipping boy in this category).

For top end producers I have a cliché for you to hold on to: If you make it, they will come. Keep making great wines, and there will always be a market for them. It will never be the mainstream market, but then it never has been.

As for berating consumers, it seems a silly thing for a winemaker to do ? usually that is my job. I have been suggesting for years that you go forth and try something new. Something different. The joy of wine for me is the incredible variety of styles available. High alcohol wines may have shrunk the number of choices, but there are plenty of others to explore. There is an entire world of wine that you may never have experienced, but I won?t lie to you, some of them you will not like, but how will you know until you try?

Looking for a head start? Why not run out and get a Gewurztraminer from Alsace? These nearly bone dry wines have a heady aroma and are outstanding with most foods. Prefer red? I do, so it is quite understandable. When was the last time you drank a Spanish wine? What about something from your own home state?

Do you really love the high alcohol wines? Then drink one, don?t let me, Randy Dunn, or anyone else tell you that your taste is anything other than perfect exactly the way it is. It is your taste after all.

Cycling the Tour de France has been likened to running 20 marathons in 20 days. I?m pretty sure I couldn?t run one marathon in 20 days.

Yet there I was, under the blistering sun of Provence, slowly pedaling my way up one of the most dreaded, soul-crushing climbs of last year?s Tour: Mont Ventoux. What lured me to that beast of a hill was a longing to do more than just watch the Tour de France. I wanted to experience the Tour de France. I yearned to ride the very roads that, just hours later, would be chewed up by Lance Armstrong, Laurent Jalabert and Joseba Beloki. I wanted to white-knuckle it down the same hairpin turns, and be cheered on by the giddy spectators who?d camped out for days, waiting for that colorful tsunami of Spandex to speed by. Basically, I hungered for a taste of what the world?s most grueling sporting event really felt like.

That?s what landed me, my husband and 13 others on a Tour de France cycling trip with Backroads, an adventure travel company. The plan was to follow the last third of the three-week race as the riders whizzed their way past the lavender fields of Provence, up the mythical Alps and down the cobblestoned Champs-Elysées in Paris. Along the way, we?d stay in four-star hotels, consume obscene amounts of French fare and work off those calories by cycling 40 to 60 miles a day (except during the trip?s three rest days). We?d get to bike some of the most memorable segments of Tour de France routes. We?d also tackle short sections of last year?s course, a torturous 2,032-mile journey.

?How hard can this be?? I naively wondered as I sat on my couch, lazily thumbing through a Backroads catalog. ?It?s not like we?re doing the whole Tour. Just part of it.?

But that ?part? happened to be the part with the mountains. Big, colossal, mammoth mountains.

Even so, I saw this as a once-in-a-lifetime experience. If the prognosticators were right, I?d be witnessing Lance Armstrong pedal his way into the history books, becoming the first American ever to win six Tours. I?d be right there, literally, on Armstrong?s road to victory. Mountains, shmountains, I reassured myself. I?m 34 years old; I take spinning classes. I?ll be just as good as anyone else on the Backroads trip.

I knew I miscalculated that last part as soon as I got a glimpse of the other Backroads travelers. Most of the men?s legs were shaved closer than mine. This meant there was either a disproportionate number of transvestites on the trip, or these were some serious cyclists. It turned out to be the latter, which meant my husband and I were destined to play the role of lanterne rouge, the red lantern that hangs from the back of a train. It?s Tour-speak for ?the slowpokes.?

But unlike the Tour, this was a vacation, not a competition. At least that?s what I kept telling myself as I crawled up Mont Ventoux, which I think is French for ?makes you curl up in a ball and cry for Mommy.? The 6,273-foot mountain juts out of the Provençal landscape like a giant tumor; and this tumor is anything but benign. Comedian and cycling aficionado Robin Williams summed it up this way: ?Even the mountain goats don?t like it.?

Ventoux is a relentlessly steep 13-mile climb to the barren, lunar-like summit, where exhausted British cyclist Tom Simpson keeled over and died during the 1967 Tour. As I started to wonder if the same fate might await me, a burly Frenchman with a moustache as big as my handlebars decided I needed a little pep talk.

?Allez! Allez!? he repeatedly shouted in my ear as I crept up the mountain in granny gear. My French friend was telling me to ?Go! Go!? which was what I wished he would do, since sweat was stinging my eyes, my legs felt like the beleaguered stage during ?Riverdance? and the last thing I wanted was a hairy cheerleader.

But his words pushed me on, if only to put a little more distance between me and his Burgundy-infused breath.

I?d hear the ?Allez! Allez!? refrain countless more times from the throngs of onlookers who?d staked out their spot on the mountain, waiting for the Tour to wheel by in a few hours. Folks like me were merely the warm-up act.

We all know the French are very good at some things (food) and not so good at others (war). But they?re extremely adept at the high art of tailgating. When they weren?t rooting on amateur cyclists like me, they killed time by sipping wine, nibbling on brie and baguettes, playing cards and painting riders? names on the street.

At my heady speed of 4 mph, I had ample time to witness all of these pre-race festivities. It became clear that, to the French, the Tour is much more than a sporting event. It, like Jerry Lewis, is a cultural phenomenon. Unlike Jerry, it?s easy to understand the Tour?s appeal. This is a race packed with more drama than a Jerry Springer show, and with at least as much potential for bloodshed. Catastrophic crashes. Drug raids. Cheating. Smack talking. Not to mention jaw-dropping displays of athleticism. It?s hard to imagine just how much pain these guys put themselves through until you?ve sampled some of it firsthand.

Mont Ventoux is a kick-in-the-teeth climb, even when you?re cycling it with fresh legs like we were. But the Tour racers had logged 120 miles that day before broaching the base of Ventoux. And they still managed to go up it faster than I went down it. How?s that for an ego-deflater?

It truly is a humbling experience to watch more than 150 Tour riders sail up the very road you just cycled. They make it look so easy. But your burning quads and aching back remind you that it?s not.

I thought cycling Ventoux would leave me too exhausted to cheer on the racers. But one glimpse of that Texan wearing the coveted yellow leader?s jersey had the effect of a dozen espressos. There he was. Lance Armstrong ? cancer survivor, cyclist extraordinaire ? about an arm?s length away from me, plowing up the very mountain that made my legs feel like overcooked fettuccine. Despite being chased by a pack of cyclists who wanted nothing more than to strip that golden jersey off his back and feed it to him in tiny pieces, he looked more serene than I do in a bubble bath.

Other racers gulped oxygen like frat boys chug beer. But Armstrong seemed to be barely breathing while he pumped his pedals like pistons. I knew I was watching an über-athlete in action. I had a front row seat at the Tour de Lance, and I?d earned it. At the top of my overworked lungs, I shouted the words I?d once heard from a wise, mustachioed Frenchman: ?Allez! Allez!?

I have been pointing out for years that the hardest thing about judging wine is remaining objective. I have shared my own techniques for eliminating variables, which include always using the same glass, and tasting in the same order. Now Stanford University has published a report that illustrates exactly what i have been trying to stress. It is easier to fool ourselves than we think.

The report demonstrates that telling someone the cost of a wine influences their perception of it. This is very similar to telling someone to not think about a barrel of monkeys. Plant the perception, put people in a position where they defer their own opinions to an expert or a supposed fact, and you can make them believe almost anything. This is exactly why I keep my eyes open for wine quackery.

I recently gave a series of lectures at the International Restaurant (and Nightclub and Hotel) Show in Las Vegas (a hello and thank you to al that attended). The show floor was awash new and wonderful gadgets, ideas and do-das. Not to mention half naked women pouring every kind of booze imaginable.

Among the eye and literal candy there were several vendors demonstrating their "wine enhancement" products. The ones I am going to harp on here are not those that rely on unknown metaphysical forces, if I haven't convinced you yet to ignore those, then you deserve them. No, this time I am going after the devices that help wine to aerate.

I have already debunked the expensive crystal glasses in an earlier blog, but even then I wondered how well known wine personalities could be so enamored of them as to lend their endorsement to the product packaging.

The earlier glasses and the aerating products at the show did indeed make a difference to the wine. A slight difference, and one that is easy duplicated without the cost and mess, by simply swirling the wine in your glass.

So why then do these products continue to sell? Or even more to the point why were the reps at the show so surprised that they couldn't win me over when so many others had been praising their products?

The parable of the Emperor's New Clothes is so important to our society that it has become part of our social consciousness, far outliving Hans Christian Anderson. In the story we are told that only those who are worthy can see the clothes. Since everyone wants to be worthy, they all claim to see the clothes, and even convince themselves of fine details that don't exist.

Tasting wine is an odd pursuit in that each of us to some degree doubts our abilities. We almost always ask others of their impressions, and the response can not help but taint our experience, in the barrel of monkeys tradition.

Hand someone a taste of wine and tell them it is worth a great deal of money, and they will think better of the wine. That is the crux of the Sanford research. Tell them your product has greatly improved the wine and when they do taste that there is a slight difference, they will elevate that difference in their minds in an attempt to be worthy of "seeing the Emperor's clothes."

This is human nature, and it is exactly why people have been selling snake oil since the dawn of time. The moral of my lesson is to trust your own abilities and sense of taste. Stand up for what you taste in wine, and don't worry if no one else ever tastes what you do. It is all subjective, and your opinion is exactly as valuable as mine (I just have a better chance of telling you how it stacks up to other wines of the class or value).

You don't need to run out and buy the latest gizmo to enjoy wine. Just open a few bottles and have fun with the contents therein. Take the money you saved on not buying that gadget and buy a bottle of wine you have never tried before. Good or bad, the education you get from that wine will almost certainly be a better value than the myriad wine enhancers that keep popping up.

The rep who was so dismayed that someone didn't find their product earth shattering left me with this retort: "Why then do so many wineries buy our product? They wouldn't buy something that doesn't work!" It is hard for me, but I will refrain from a lesson in logic and simply point out what my regular readers already know. Not everything that a winery does, or any other human endeavor does, works.

ashley dupre video uncensoredI have always loved the packaging on Xanadu wines. That ambiguous golden dragon that looks like a knarly old vine really appeals to me. This is a blend of 73% Margaret River and 27% Frankland River shiraz. Dragon is a recent addition to the Xanadu range. It sits above the Secession and below the Estate in the portfolio.

Aromas of crushed boysenberry, cherry jam, spice, meat, pepper and toasty vanilla oak. On the palate medium bodied with fresh fruits of the forest, pepper, spice and meaty toasty oak. Dry quite assertive tannins and very fresh acidity. Good flavours but suffers from some hardness.

A little bit shy on the nose, but some citrus and floral characters can be noted. Palate has racy acid but is beautifully balanced. Full and long. Lovely wine, drinking well now.

For some people, the storage and acquisition of wine is more than just a hobby, it is an art.

Wine connoisseurs all know that the proper storage of wine is important to its final flavor. Once it is already bottled, wine will still mature and gain body and flavor. Proper care should be taken when handling wine, or else its potential for greatness will go to waste. To keep their wine well preserved, the discriminating connoisseur will choose a proper wine rack.

How to Buy a Wine Rack

The Build
Wine racks can be made of so many different materials and styles. You should consider which material and style fits your need and preference. You could have wood, glass, alloy, or metal racks. Some people try to choose materials that match their living rooms. There are a variety of styles of wine racks, find one that if convenient for you. The popular styles include counter top racks, diamond bins, cabinets and others.

The Essential Elements
A good wine rack will ensure that the following elements are strictly controlled. Light, humidity, temperature, stability. If you want to keep your wine well preserved and ready for ambush party, you need to make sure they are not exposed to light, moisture, extreme temperatures and shaking or vibration.

Cabinet wine racks are good at keeping wine bottles safe. They can emulate the conditions at a wine cellar best. These condition include moderate humidity, cool temperatures, and little light

We try to control the humidity so we can avoid getting the wine cork from accumulating moisture. This will lessen the chances that the wine will get contaminated or oxidized.

Things to Remember
Don’t place wine cellars above or near refrigerators. Refrigerators generate heat and this heat could ruin you wine collection. Buying and installing a good wine rack would be useless if that happened.

Your rack has to be smooth enough that when the wine bottles are put and taken, they will not get scratched and damaged. Bottles and labels are also important parts of the overall value of wine.

A wine cellar is great but not necessary to store your wine in the correct environment. But since not everyone can afford a wine cellar or has space enough for one, you could opt for a wine rack instead. Wine racks function a lot like wine cellars, but they are smaller and are more accessible. They are also a lot cheaper and easier to install.

Believe it or not, ultraviolet light can affect and ruin wine. That’s the reason wine cellars are so dark and that’s why you have to keep your wine in a dark safe place. When you store your wine bottles, make sure they are stored sideways; this ensures that the wine is always in contact with the cork to keep it moist.

Once again we cannot express how important it is to maintain the right conditions for your wine to mature nicely. Your wine rack system has to maintain the right amount of humidity and temperature to keep your collection going. Bear in mind that wine is something you keep for a long time. Keep your wine racks pumping a temperature range of 55-60° F. Also make sure the humidity is in the 50% to 75% range. Adjust these settings according to the needs of your wine.

The Pinot Grigio is a straw-colored wine, made of 84 percent Pinot Grigio grapes, 10 percent Chardonnay, and just a hint of Muscat and Vigonier. The wine is light and crisp with hints of green apples, pears, and peaches. The Muscat lends a spicy touch and the Viognier a fruity floral note.

And apparently, Yulia is the Upset Queen. She's adept at bringing $7 bottles that end up winning blind tastings. Either that or we all have cheap tastes... not quite sure.

So last night was the Mourvedre/Monastrell showdown. And honestly, it was pretty disappointing. We blind tasted 5 wines and none of them were particularly stellar. As per my normal accuracy, I guessed 3 out of 5. I knew we had 2 cheap Spanish, 1 pricier Spanish, Cline's Ancient Vines, and Thomas Coyne. I did not know the vintage of any of them.

Wine #1: Blackberry/blueberry nose, with a touch of herbs. A bit of funk wafting through. Tight tannins. Thin fruit, but very ripe. Smoke on the finish. I guessed it was a cheap Spanish from 05. I gave it 2.5 out of 4 stars.

Wine #2: Smells exactly like sweet boysenberry pancake syrup from IHOP. Blast of fruit on the opening palate and then... nothing. Kind of gross, really. I guessed another cheap Spanish from 05. I gave it 1 star.

Wine #3: Much lighter in color (the previous two were densely purple-red). White chocolate and sweet cinnamon on the nose with blackberry/raspberry fruit. Same fruit on palate with spicy-herbal finish (sage, thyme, cinnamon). Lingering cocoa. I guessed a CA from 05, and I figured it was Cline. I gave it 2.75 stars.

Wine #4: Ripe blackberry, some astrigency on the nose - kinda like band-aids. Also lighter in color than the first two, more red than purply. Cassis fruit, smoke and lots of herbs. Lingering tea. I guessed a CA from 03 or 04 based on color and herbality. I guessed it as Thomas Coyne and gave it 3.25 stars.

Wine #5: Smelled just like... dish soap? Seriously. Or cheap rose perfume. Sweet raspberry also present. On the palate, pretty tasty mulberry fruit with mint and thyme. I guessed it as the pricier Spanish and placed it as an 05. I gave it 3 stars.

So, it turned out that:

#1- Cambra's 03 Uno! Shit, we all got that one wrong. And quite frankly, it is NOT worth the price.

#2- Chonchelo 06 - Cheap Spanish, indeed. We just poured this straight down the sink.

#3- Cline 05 Ancient Vines Mourvedre - Got it right, but it's not as good as I recall. Much lighter and much leaner on herbs.

#4- Thomas Coyne 04 Mourvedre - Pretty good stuff. I'd feel ok about recommending this.

#5- Finca Luzon Verde 06 Monastrell- And with that, Yulia's cheap Spanish trumps us all. This is a great bargain.

It really sucks to be tonic water

Once a bartending necessity that reigned supreme in soda guns the world over, tonic water - and her friends club soda, Coke and 7Up - is fizzling in today?s hipster scene. What?s bubbled to the forefront? Energy drinks, which in a few short years have gone from mini-mart obscurity to VIP status behind the bars of even the hottest, Paris-Hilton-worthy nightclubs and restaurants.

As anyone who?s chugged Gatorade or Lucozade knows, energy drinks are nothing new. They?ve been around since the 1930s, are sold throughout the world and have traditionally enjoyed especially strong popularity in the Far East. (Think Pocari Sweat. Yum.) In their early incarnations, energy drinks were meant to quickly rehydrate the body and to provide energy through carbohydrates in the form of sugar. They were the savior of many exhausted athletes, lethargic kids with the flu and pathetically hungover frat boys.

In the mid-?80s, an Austrian businessman looking to cash in on the energy drink craze in Asia took the concept and gave it a decidedly modern twist. The result was Red Bull, a unique-tasting drink spiked with caffeine and the amino acid taurine, which pumps up the heart rate.

Red Bull?s slick silver mini cans, clever ad campaign and energy-boosting properties made it an instant hit among club-goers and those looking for a quick boost from something other than espresso (or a powdery South American import that might invite a sentence of five to 10). By the late ?90s, Red Bull was available worldwide, had taken up sponsorship of popular new extreme sporting events and was well on its way to becoming a pop culture icon.

Since then, the energy drink market has exploded. New entrants include Rockstar (which contains liver-rejuvenating milk thistle), Monster, Socko, Full Throttle, Hype, Bomba (which comes in four flavors), Roaring Lion, Go Fast, Atomic X and Boo Koo. (The entertainment value alone - ?I?ll have an Effen Boo Koo? - keeps us enthralled.)

Everyone from traditional soft drink marketers to celebs are getting in on the energy drink craze, scrambling to create new concoctions with fresh hype. Rap star Nelly is hoping to grab a piece of the market with his bright green, sweet sour-apple brew PimpJuice, which contains taurine, guarana and multi-vitamins. (No word on whether the nutrient properties of the drink will finally heal the boo-boo that lurks beneath his omnipresent Band-Aid. Or what test group approved of the name PimpJuice.)

Though all energy drinks are unique, they share in common some form of caffeine and sugar as key ingredients. Guarana, a natural source of caffeine, replaces the straight chemical in some brands. What gives energy drinks their rocket boost is the amount of caffeine and sugar they include: studies show energy drinks pack four times the amount of caffeine as soda and as many as 13 teaspoons of sugar in a single bottle.

Energy drinks also get an extra kick from ingredients such as ginseng and vitamins B12, B6, riboflavin and niacin. The most popular addition (and the one that put Red Bull on the energy drink map) is taurine, one of the most abundant amino acids in the body. It functions as a metabolic transmitter, has detoxifying properties and has been shown in studies to be beneficial to cardiovascular functioning. Mix these peace-and-love herbs and vitamins with some cutting-edge nutritional research, and the old standbys caffeine and sugar, and you?ve got yourself a recipe for a go-the-distance, 21st century good time.

Not long after these space age potions hit the shelves, smart consumers realized if energy drinks could keep them going as they burned the midnight oil or blasted through a road trip, they could put a whole new spin on a night of partying. Thus was born Red Bull-vodka. In the late ?90s, European drinkers started a new trend in cocktails by marrying the recently released Red Bull with vodka, creating a mix packing a potent alcohol punch and a lift of herbs and caffeine, and enabling drinkers to get maximum pleasure out of a hard-earned weekend night of raving or pub crawling.

As more energy drinks were born, more cocktails were created. Bars around the world now stock energy drinks as mixing basics and look for innovative blends to create their own signature cocktails. While most drinkers still prefer flavored vodkas such as Stoli Citros or Skyy Melon to add intrigue to their energy drinks, more innovative experiments are being undertaken every day: how about an energy drink/Jagermeister mix? Perhaps a little Johnny Walker Black? (Any carpet fluff you might ingest later will simply add to the...mouthfeel.)

If mixing isn?t your thing, consider an energy/alcoholic drink that comes straight from the bottle. Zygo is a peach-flavored vodka blended with so-called ?functional ingredients? taurine, D-ribose, guarana and yerba mate. Known as the ?morning vodka? with a 35 percent alcohol content, it hits the spot with partiers still pounding the dance floor at dawn. Sparks, a sickly sweet, citrusy concoction with taurine, caffeine, guarana, Siberian ginseng and a 6 percent kick of alcohol, is becoming a popular party alternative, as are MoonShot, a (believe it or not) lightly carbonated, caffeinated beer, and XXL Orange, which packs 8.9 percent vodka, orange juice and caffeine into a curvy plastic bottle. (Frankly, that sounds to us like what a pimp would really be juicing.)

In a culture that?s dancing as fast as it can, it seems energy drink cocktails are the perfect libation for the new millennium. And who knows, tonic and club soda might even make a comeback - thanks to the recently released Hi-Ball Modern Mixers line, which offers classic mixers enhanced by B-vitamins, caffeine, taurine, guarana and ginseng. So grab a can of liquid energy, throw in the spirit of your choice and start channeling Don ?The Magic? Juan. And remember, it takes seven to make a stable.

Energy Drink Cocktail Recipes

Deep Sea Battery

200 ml. Battery Energy Drink
3/4 oz. blue Curacao
3/4 oz. vodka (currant)

Shake vodka and Curacao with ice and strain into an ice-filled highball glass. Top with Battery Energy Drink.

Extreme Cherry Bomb

1.5 oz. Players Extreme Cherry Infused Vodka
200 ml. Red Bull Energy Drink

Serve on the rocks in a highball glass. Garnish with a cherry.

Bob Dylan Recipe

12 oz. Surge Energy Drink
4 oz. Jagermeister
16 oz. ice

Combine all ingredients in a blender and mix until smooth.

Hype Shambles

Hype Energy Drink
1 1/2 oz. vodka
1 1/2 oz. Champagne/sparkling wine

Combine all ingredients and serve chilled.

Bomba Cosmo

Black Magic Bomba Energy Drink
1 1/3 oz. vodka
2/3 oz. triple sec
2/3 oz. lime juice

Shake vodka, triple sec and lime juice together. Pour into chilled martini glass. Top with Black Magic Bomba Energy Drink.

FishEye Merlot caught my eye at the supermarket yesterday when trying to find a good cheap wine to pair with my pasta and chicken dinner.

Nice and fruity, I think the strongest aroma was plum. This wine was a good match to my dinner, and a good value for $5.89. I’d like to try their Cab one of these days.

It was like a freaky safari. There we were, winemaker Neil Collins and me, stalking chickens running loose on the property. No, not for dinner. Collins wanted to show me the benefits of using the feathery flock in the vineyard.

I expected them to scatter. But as we got closer they paid no attention to us. They were too busy chomping away at the green stuff planted between the vineyard rows: gourmet grasses, wild flowers and their favorite treat - the spiky Yellow Star Thistle.

Collins explained the idea behind using chickens is based on the concept of biodiversity. The chickens eat the natural material, process it, then put it back as a rich type of, well, specialized manure. Eventually the manure and cover crops are softly tilled into the ground and serve as a natural soil fertilizer. In springtime, packed with powerful nutrients, the mixture acts like a sort of alarm clock, waking the vines and energizing them from their dormant winter snooze.

Believe it or not, the chickens are an upgrade to how vineyard farming has been done for the past 50 years. Since World War II, most growers have gone the easy route - purchasing synthetic chemical fertilizers packaged in commercialized plastic bags. But things are changing now as more natural, eco-friendly farming techniques have come back in style.

"For quality wine, grapes should be an expression of the soil and the vineyards where they?re grown," Collins says. "Using synthetic chemicals means there?s something missing from the wine as far as authenticity or natural personality is concerned."

Certified as organic in January 2003, Tablas Creek Vineyards is a member of a new wave of premium U.S. wine producers recognizing the benefits of using old-fashioned farming methods. The concept is simple: work closely with nature instead of against it.

By definition, organic agriculture refers to fruit, vegetable and other food products cultivated without the use of toxic pesticides, herbicides and synthetic fertilizers.
